早便認識波記,當時在西營盤山坡上,是坡上買鴨記,很辛苦的。自從米滋蓮眷顧,粉絲絡繹不絕。今早依開飯寶典(openrice),準時在11:28從港大站B1出口到達。門口無人排隊!11:30開閘,我未坐下,先叫鴨髀飯。說時遲,那時快,8桌子已被佔領。他們全是熟客!11:32一女子闖入,與我搭檯,馬上叫鴨髀飯;店員說:沽清。她望著我的戰利品,表情是。我舉機拍照,8成滿情況下,不是全部檯都放有髀,可見鴨髀供應極少。11:40爆滿,我叫店員取酸梅醬,開始吃飯。兩年不見,皮算脆,鴨微熱,賣點是鮮,肥瘦比例適中,當然還有抵食。聞說鴨鵝在16:00前沽清。這正是我少來原因。店招牌標誌三絕,我認為是有一邪,雙飛:一邪是店主不是廣東燒味師傅傳人,亦不是灣仔同興此類世家嫡傳,自學能感動萬千食客(包括照片中的新潮少女)。此類香港精神值得支持。雙飛:燒鴨來貨監控極嚴,選瘦到飛起的。二是义燒。义燒亦瘦到飛起。買了半斤外賣。質素中上。論醬汁,比不上再興的袐方。這幾個月港島人宜來一試,順路沿屈地街經電車路,左轉去一田超市。其實價格牌的脾字是錯誤,此字解作脾臟。字是髀,亦可俗寫為肶(古代寫法)。字是順潮流改變,如我上篇論魚蛋,我隨俗寫旦字,其實是錯!鳥,雞,鴨,龜都有蛋,魚哪會生蛋?魚丸才是寫。 continue reading

2017年展開需要尋找一些新食力,由東區走到西區只不過是半小時;有了港鐵之後四通八達到西環並不是困難的事。香港大學站B1就是今日的首站,一出就看到「波記」已過午飯時間,仍舊多人到滿瀉。單看外觀並沒有豪華裝潢,只有例明燒臘應買的食品,由叉燒、燒鴨、燒鵝等應有盡有。別以為只有上年紀的人士才會喜歡「波記」其實喜歡懷舊的我也會追隨。踏進店內地方不算大,每位客人在圓枱中並肩而坐,不過今日馳名中外的燒鵝已沽清;唯有單點叉燒燒鴨瀨粉吧!不過燒鴨都有驚喜,香脆的外層肉質瘦嫩而不膩;加添香蔥更為惹味。瀨粉的滑溜與濃郁的湯底達致甚高水平。能夠久仰大名的「波記」確實沒有令我失望,但希望下次能夠吃到燒鵝便更好。 continue reading

波記燒臘粉麵店既燒味真係無得輸,上次黎佢已經關左門,可能太好生意,賣哂就唔做 (好唔開心)。今次黎終於都比我食到喇,叫左個燒鴨賴粉,雖然張相望落去呢,隻燒鴨好似有D深色,但其實實物係好靚架,個面勁有光澤,皮好脆又唔算好肥(不過就算係肥,都真係忍唔到唔食!!!! ),加上D香料味入哂落燒鴨既肉到,所以一D 'SO'味都唔覺得,而且肉質唔會好鞋,好似咬都咬唔開甘,真係做得好好。另外,湯底唔會無味精味,食完唔會口渴想飲水,成件事真係好完美呀。 continue reading

下午2點多, 裡面都幾多人食緊, 因為呢間老字號又出名, 所以一直都有好多人出出入入, 有熟客, 又有操普通話客.我一個人, 本來諗住坐張細台, 唔好阻住佢, 不過佢見我大份又有個大背囊, 所以叫我坐大台, 話舒服D嘛, D阿姐都幾有人情味, 好好人呀!叫左名物-- 燒鴨瀨, 唻到真係見到好多鴨呀!D鴨肉都好嫰滑, 一排係有骨, 一排係肉, 所以一碗有哂2種口味, 瀨粉都好多, 所以好夠飽.呢間都好多選擇, 好似叉燒/ 牛筋腩都有得揀. continue reading
