Pineapple Bakery’s pineapple bun (bolo bao) is definitely the most viral bao in town right now. The pineapple buns here are quite different from the usual bolo baos in HK that use 港式甜麵團 and walnut cookie crust. Here they make their baos using naturally leavened brioche dough, vanilla-lemon crumble and aromatic honey butter glaze.I tried their bolo yau - buttery, flaky, delightfully light and airy.I bought an extra bolo bao home and it was still delicious the day after I had it reheated in the oven.Only 88 buns baked in house a day.
