呢個星期去到幾偏遠下的數碼港,扮下上等人食貴價日本野。閒日夜晚黎食,係呢頭黎講預左唔會多人,地方闊落尚算清靜,吧檯位仲可以見到三位師傅即時處理刺身等。小弟點左一份細的壽司拼盤,總共9款壽司,除左加州卷外每款一件,望落刺身算晶瑩剔透,唔點壽司豉油食都有份鮮味係度,壽司飯食落仲係暖暖地,唔似出面果d整到凍冰冰。另外點左份刺身拼盤,有小弟最愛食的吞拿魚,食落一d都唔「鞋」,同其他刺身一樣都係厚切,唔係好捨得一啖吞哂成件,魚類唔腥,幾肥美,蝦好鮮甜。因為小弟鐘意食刺身,所以跟風叫左個是日special, 都係刺身類叫金目鯛,肉色幾嫩,帶粉紅色,肉質厚實帶點爽甜,除左有少少魚筋之外差唔多全部都係入口即溶,幾好食。之後再叫左幾份小食,燒魷魚筒,火侯還好,唔會燒到太燶太韌,汁唔算多但係都夠哂味,有點似離島的燴魷魚風味。餃子釀雞翼,燒得唔錯,餃子肉同個汁幾夾,可惜的係兩款熱食可能之前擺耐左,唔算太熱。最後一款係特色三文魚,即係三文魚魚生粒伴青瓜絲及鵪春蛋,不過可能自己食唔慣生的鵪春蛋,拌埋一齊之後有點膩。不過加上松子仁,多重口感都ok。總括黎講,壽司刺身類還是較好,最緊要刺身真係好新鮮。

下班後來到港島南的數碼港,非常幸運,剛好趕及日落。日落染紅了海面和天空,特別寫意。吹著海風,緩緩走向草地…有人放狗,有人在草地上露營,有人散步,有人跑步…忽然發現生活原來可以這麼寫意。觀賞完日落,正好是晩餐時間。芥辣八爪魚涼涼的感覺,八爪魚很爽口,淡淡的芥辣味帶來刺激的口感。這可以講係我曾經吃海膽記憶中以來最好吃的海膽,入口即化,而且很甘香,非常享受這種感覺。凡立貝看上去不小,啖啖肉,可能焗時過了少少,感覺有點過火。欠缺了一點點的爽嫩。立魚湯的味道比較特別,入口需適應一下,雖然煮過了少少火候,不過,很飽滿的蜆肉仍然滿盡人意。茄子已經去皮,燒好後加上木魚,配合得相當益章,茄子味道偏淡,加點醬汁會更加搶味。薄切和燒得香脆的腩肉與露筍是個天作之合,外香內甜,露荀的爽嫩加上肉香,非常好吃多春魚要好吃必須燒得乾和香,上檯後自己再灑上一點味粉,帶出魚特有的甜味,又別有一番風味。烏冬配上多種雜菜一起炒,加上木魚和紫菜絲,增加了動感。味道酸甜可口。芝麻味香濃,雪糕像一股清泉湧入口簾,又香又滑又creamy,很贊的味道既可欣賞日落又可品嚐美食,正是一個一舉兩得的享受。

An interesting sharing regarding the science of sashimi which I recently read about. Contradicted to the basic understanding that the more the use of muscles, the tougher the muscles among terrestrial animals, most fish muscles are soft. It is because water and fish body share the same density and fish only exert muscles for movements (need not use muscles to bear weight). Therefore one could easily poke through the muscles on a fresh piece of fish filet.
The rainbow of fish could be explained by muscle classification or pigment. Pigments make salmon orange. Slow muscles which require continuous oxygen supply (oxy-myoglobin) make tuna deep red. Fast muscles which undertake rapid movements use colourless glycogen for energy supply and make snapper white.
Am going too far, anyway, the fresh and fine specimen of fish with vivid colours and delicate texture would whet your appetite. Supreme quality. With subtle flavors.

難得假期和男朋友山長水遠來到數碼港逛逛和看日落,本以為這個商業區沒什麼好吃的,竟然找到這家日本餐廳,看似挺舒服,價錢亦不太貴!先來一客明太子沙律~雖然賣相一般,但明太子多且大大粒,配上沙律醬青瓜絲,非常清新。重頭戲有這個刺身盛合,我們選了小份的。共有六款刺身—甜蝦、三文魚、拖羅、佐口魚、八爪魚和樟紅魚。每款都厚身肥美,口感爽而冰鮮。兩款卷物也沒有令我失望!上者為牛油果軟殼蟹卷,雖然牛油果有點老,但味道可以,卷物上加上粒粒三文魚籽,增強口感。三文魚芝士燒鰻魚卷的味道豐富,燒汁不會過多,內裡再加 cream cheese, 用以配三文魚和鰻魚最佳了!另點了一些炸物。有點油膩但勝在夠熱,而且炸粉不多。炸豆腐做得尤其出色,外面金黃色的,而內裡的豆腐更是熱辣辣,非常滑。這餐不知不覺便吃了個多小時,環境舒適而氣氛恬靜,適合情人或與老朋友聚舊。

三文魚腩的魚油分佈均勻,肉質鮮嫩,仲要係厚肉、每塊的大小都有10cm長! 咬落去果陣,牙肉可以感覺到魚肉的稜角,肉筋上有趙口,簡直可以叫一聲[脆呀!]
油甘魚每塊都有1cm厚,5x10cm大小。最難得係魚油同魚香味同我的舌頭纏繞左一段溫馨的時間!問世上有幾多...油甘魚可以做到咁的境界?
海老都無令我地失望,手掌咁長的海老,結實的肉質,鮮甜的味到,蝦頭的鮮味實在令我們忍不住啜返啖!呢個位要提醒大家,小量wasabi就夠吊味架喇!因為呢度既食物係非常新鮮!

Not even the manager knew what they have and didn't have in stock. We waited for a dish that they apparently told us they didn't have when we ordered. If they had told us, obviously we wouldn't have waited. After any requests we made, we were made to feel like an imposition and we ordered a ton too.

首先鰻魚肉很厚~一看就知道是最肥美的部分~

一共十件壽司,全部都係火炙既,當中有三文魚,三文魚腩,油甘魚,海膽,鰻魚等等
三文魚味道鮮美,輕輕用火燒過,所以魚油都迫了出黎
鰻魚沾上甜甜地的燒汁,食落都算厚身
海膽係我既至愛,可惜當日既海膽略帶腥味

除左壽司,仲叫左幾串串燒

分別係雞軟骨,腩仔串,煙肉車厘茄串
其中以煙肉車厘茄最好吃,車厘茄好多汁,正好為煙肉減低油膩感
而煙肉亦燒得好香口

另外都叫左條牛油燒粟米,呢個組合根本就係無敵既
粟米粒粒多汁,咬落卜卜聲,查上牛油,更加好味
