好想食妹記好耐,因為見大家都讚佢,難得今日有時間,就過黎見識下先,因為妹記CLOSING TIME係每日3 點鐘,所以想食都要搵到時間黎.妹記係街市入面,環境唔算好,但估唔到MENU有中英文同埋日文我叫左碗及第粥,師父就立即煮....返屋企食,食到有肉丸3粒,豬心3件,豬潤3件,好似仲有2款唔記得係咩啦...而料仲多過粥,真係好正呀粥底應該加左雞湯,食得出有雞味,同埋好有鍋氣,要再黎食多幾次先 continue reading

煲粥雖然看似是稀鬆平常,簡單不過的事,但其實絕不簡單。無論煲粥的食材,所用的器皿還是煮粥者控制火候的工夫,都是一碗靚粥需要具備的條件。材料方面,米好,水好固然重要,如果不是白粥的話,魚也好,肉也好,最緊要是新鮮。至於器皿,以銅煲煲粥,效果最是理想。正所謂「單料銅煲,一滾就熟」,因為銅煲傳熱快,所以在火光熊熊的一瞬間,食材已然滾熟,可以上桌奉客。最後來到煮粥的靈魂人物,當然是薑愈老愈辣,愈是煮粥經驗豐富,成品出來的火候便愈是拿捏得準確。位於旺角市政大廈熟食中心內的這間「妹記生滾粥品」,一向被認為是全港最好的粥店之一,特別是它的魚粥,更是有名。這天早上,雖然天氣炎熱,我仍然難得地來到這兒,吃碗早粥做早餐。這兒雖說只是熟食中心,環境算不得很好,但地方闊落,光線明亮,人又不是太多,坐得都算舒服。我坐在粥店前面,看著兩位老師傅,各司其職,一個負責劏魚,一個負責煲粥,看著老師傅把即叫即煮的粥以銅煲滾熟,一碗熱氣騰騰的「魚腩粥」便連隨上桌奉客。 這粥的粥底是挺好的,夠綿滑但又不至於漿口,味道清甜。數件厚切魚腩新鮮味美,蘸點下了胡椒粉的豉油吃,味道更佳。吃得多港式和西式早餐,偶然轉轉口味,來一碗「單料銅煲靚魚粥」,確是不錯! continue reading

今日去到旺角,天氣有點冷,想食粥所以來了妹記。叫了及第粥,都叫足料。先說粥底,夠綿,不過較稀。粥料有豬肝,豬心,豬粉腸及肉丸。豬肝爽滑,不會老,只是稍為薄了一點,厚一點口感更佳。豬心為薄切,夠爽。粉腸有𡁻囗但不會像香囗膠,可惜沒有粉腸本身的甜美。總括而言,是一碗可口的及第粥 continue reading
