今晚為舊同事慶祝生日,來到旺角香港康得思酒店的明閣赴宴。我們預早已訂了一圍明閣中式宴會菜譜,所以今晚來到就不用費神,可以大家暢談聚舊,好好地享受一頓高質的晚餐。今晚品嚐的菜式頗多,大部份都令我留下深刻印象。~至尊蜜汁叉燒叉燒燒得恰到好處,肉質爽淋,外皮有蜜汁甜味和燒肉的香味。~松茸金菇蟲草花心形賣相和中央的金箔都非常討人,原來不是虛有其表,這冷盤的味道令人一吃難忘。吃起來一絲絲的金菇和蟲草花原來是絕配,既爽口又有股松茸香。~醋香鱈魚粒香滑鱈魚粒由薄薄炸粉包著,外脆內軟,令人不其然吃得不能停口。外皮的陳醋醬汁酸酸甜甜,非常醒胃,吃多了也不會覺膩。~化皮乳豬件乳豬件果然是化皮,非常鬆脆。乳豬皮下的肉亦好吃,爽而不肥。~津膽松茸清燉燕窩真意想不到,只是清清的菇菌已煲出如此好味的湯底,松茸味清香撲鼻。湯內有健康津白和生津的燕窩,配合得天衣無縫。~蠔皇鵝掌扣海參鵝掌和海參都炆煮得恰到好處,蠔油獻汁又不會過濃。脆綠的生菜亦能發揮其作用,令整個菜不會給人膩的感覺。~明閣炸子雞賣相特別,味道討人。炸子雞皮薄而香脆,完全不油膩。雞肉雖然炸過,但仍嫩滑。~雲腿竹笙扒時蔬雲腿的鹹味和淡竹笙配合得天衣無縫,和豆苗一起吃更是最好不過。~鮑魚粒蛋白炒飯炒飯裏有鮑魚粒,蛋白和菜粒為它點綴,吃起來乾爽,還有蔥花香。~蛋白杏仁茶杏香四溢的杏仁茶非常滑,茶內的蛋白亦為此甜品增添了口感。~賀壽大蟠桃每個大蟠桃內有蓮蓉和整個鹹蛋黃,有甜味又有鹹香味,令人感到滿足。 continue reading

這幾年自從養了主子之後, 巳鮮有一家人在假期出遊了. 所以近年我們多是趁著放假便輪出走. 當然, 我們也是很享受跟主子的每一刻時光, 不過現在每逢假期遇著一家人都沒有出遊時, 宅女總會提議找個中午一起去吃個飯, 享受一下一家人聚在一起的時間. 這次正好又煩著到底去哪家餐廳跟家人吃飯時, 老媽說想吃完飯去旺角辦點事, 突然就想起同區這家位在康得思酒店內的明閣, 一直很想去試試, 便馬上動身訂位去. 其實宅女一向也不會太追米芝蓮來吃, 但有時想吃好一點, 耐不耐都會去到訪幾家試試看. 記得之前去過尖沙咀名氣很大, 掛著三星米芝蓮美譽的唐閣, 但那次吃得不太愉快, 感覺那邊的侍應只對熟客友善. 早前跟朋友說起, 他們都說明閣雖然是二星米芝蓮, 但用餐體驗都比唐閣好, 所以一直想去試.出發前大約3-4天前透過OPENRICE網內的網上訂位, 因為能多儲25分的ASIAMILES. 訂好後餐廳會再打電話來確認, 所以連電話都不用打, 非常方便我們這等懶人. 餐廳位於康得思酒店的6樓, 一坐電梯出來就看到, 佔地一整層. 內裡是帶點氣派的中菜館格局, 不過地方十分大, 老媽說她之前好幾次來跟朋友坐貴賓房, 地方大而且也是非常舒適. 這次我們坐在大廳, 裝潢就沒什麼驚喜, 都是企理加點高級感的感覺. 桌子之間有著一定的距離, 感覺不會太擠迫, 靠窗位置更有陽光映照, 不過望出去只是商廈, 就沒什麼景色.假日中午來到, 都是吃點心居多. 看看這裡的點心餐牌, 巳有心理準備收費不會怎樣便宜. 大路如蝦餃, 燒賣, 牛肉球, 叉燒包這些點心每份由HK$62-HK$88不等, 大約都有十多廿款可以挑選; 不想吃點心的話, 也可以單點中菜, 價錢由二百多到六百多都有, 當中還有些是得獎菜式.老爸老媽都是衝著點心來, 所以就先上一輪點心吧.鵝肝荔甫芋角 (HK$62 三件) 不說不知原來現在芋角在香港酒樓巳買少見少. 近期去了好幾家酒樓想吃這個芋角, 侍應不約而同都說現在做芋角好麻煩, 所以都沒做了. 早前剛好也看過飲食節目, 了解到原來做芋角工序也是非常繁複, 現在懂做而又做得好的師傅巳沒幾個了. 突然覺得身在福中不知福, 小時候上酒樓常常看到這種芋角, 早知道就吃多一點了. 不過來到這裡能吃到芋角也是令人感動. 一份三個, 酥脆外皮還清晰的看到層層網狀, 咬開內裡是棉香的芋蓉, 當中還加了點鵝肝. 其實不用鵝肝宅女覺得巳經很好吃, 但加入了後吃起來更甘香. 這個外脆內軟的芋角, 是這天老媽的最愛. 荔芋火鴨雪山包 (HK$62 三件) 提起雪山包又是一個很有趣的飲食歷史, 還記得在香港最初興起的是添X運, 那個時候那家店長期都有超長的人龍, 當中最受歡迎也天天賣到斷市的就有雪山叉燒包. 當時還沒什麼店能做出來, 所以大伙兒都湧到他那邊去吃, 還得了米芝蓮. 時至今天, 添X運巳變成了只有遊客才會去的地方, 質素巳不想再提. 而雪山包當然巳經被各家餐廳做得出神入化, 也不再只是叉燒做餡. 像這裡的雪山包, 內裡就包了荔芋跟火鴨肉, 拿上手還是熱騰騰的, 咬下去外皮帶薄身, 表面微微帶脆, 內裡的餡都幾多, 啖啖芋蓉跟火鴨肉. 雖然始終不及叉燒餡惹味, 但整體味道也算配合, 也是個合格的包點. 極品海龍皇 (HK$78 三件) 老爸想吃蝦餃, 但看看普通蝦膠都要70多元一份, 倒不如花多一點, 來個一人一份極品海龍皇, 還可以一次試勻三款餃. 上來用了個陶瓷製的小蒸籠盛著, 賣相精緻. 內裡有著三款不同口味的餃子, 分別是花膠蝦餃, 金瓜帶子鯉魚餃以及莧菜星斑餃. 花膠蝦餃表面看似平平無奇, 就跟普通蝦餃一樣, 其實吃起來感覺也是跟普通蝦餃差不多, 花膠嘛, 實在不能太吃得出來, 可能始終那麼細隻吧. 不過澄麵皮頗有彈性, 而且夠薄身, 不會吃得一口粉, 內裡蝦肉也爽脆, 反正以蝦餃來看的話這個質素巳不錯.金瓜帶子鯉魚餃外皮做成帶橙色, 感覺是跟鯉魚顏色有點相近. 這個顏色就是來自金瓜, 也就是我們常吃的南瓜. 餃皮也是做得夠彈性, 帶點煙韌, 內裡有帶子作餡, 吃起來很香, 但帶清爽口感.而最後嚐到的, 也是我們全家一致讚賞的, 是這個莧菜星斑餃. 看看半帶透明的餃皮內包著一大舊的星斑肉, 非常豪邁. 入口就是啖啖鮮甜的魚肉, 肉質軟棉又夠嫩滑, 吃得令人滿足.韭黃鮮蝦腸粉 (HK$88) 飲茶吃點心又怎能少了腸粉呢!! 跟很多朋友同事每次上酒樓他們都特別喜愛點炒腸粉貪其夠香口. 不過宅女自己其實是比較偏愛蒸腸粉呢. 雖然剛才巳吃了蝦餃, 但仍是想點份最愛的蝦腸. 上來一份有三條, 腸粉皮夠薄, 略略能看到內裡的蝦肉呢. 每條蝦腸內都有兩大隻蝦仁, 配上甜豉油來吃, 腸皮拉得煙韌夠薄身, 內裡沒太多材料就是韭黃跟蝦仁, 蝦仁每隻體型夠大, 而且肉厚, 咬下去非常爽脆, 啖啖蝦肉的鮮味. 這個實在是難得上佳的蝦腸! 蟹肉桂花炒瑤柱 (HK$338) 還記得炒桂花翅是我們童年時一家人上街吃飯時很愛點的一道菜. 不過這款傳統中菜跟之前那個芋角一樣, 也是買少見少, 皆因同樣都是功夫菜. 記憶中自己吃過不少餐廳, 但做得最好的是怡東軒. 做這個菜除了食材多, 用上芽菜, 雞蛋, 蟹肉, 金華火腿等等之外, 炒功也是絕不能忽視. 試過吃過一些炒得過火了, 蛋變得又乾又鞋; 但炒得不夠呢, 蛋是會變成稀爛又出水. 這裡的以砂鍋來盛著, 一打開蓋子, 那股蛋香就馬上撲鼻而來, 蛋絲炒得剛剛好, 咸香惹味, 當中還加入了蟹黃, 更能吃出那份甘甜鮮味. 這個份量也算多, 夠3-4人吃, 我們最後還吃不完要打包. 脆皮乳豬炒飯 (HK$298) 只吃了幾款點心, 老爸當然還未飽. 點個主食是必要吧. 看看這裡的粉麵飯所用的食材也不錯, 就來個乳豬炒飯吧. 上來的炒飯份量也不少, 夠3-4人每人一碗. 上方放了6片乳豬皮, 色澤通紅, 燒得非常不錯. 入口乳豬皮超薄又夠脆, 當中帶著點點油脂, 非常甘香, 老爸不客氣的連吃了兩片. 底下的炒飯也做得不錯, 粒粒分明, 不會太咸, 內裡還有著不少乳豬肉粒, 甚有咬口.這頓飯埋單三個人HK$1400. 當然你會說, 平常去茶樓飲個茶只要2,3百元而已, 這次一來到要千多元不是太貴了嗎??先不說他是不是米芝蓮吧, 但個人覺得這裡所用的食材都算不錯, 有些在平常的酒樓也吃不到, 加上烹調技巧也是吃得出比普通酒樓講究. 另外這裡的侍應每位都很有禮, 也不會只顧做熟客, 對待我們例如加茶, 收碟等等都很快速又主動. 所以在如此環境, 如此服務, 如此食物質素來說的話, 我還是覺得可以一試的.當然不是叫你每星期都來啦, 如果遇著想請長輩吃個飯, 要選家有體面的中餐廳, 這家是絕對不會失禮的.**此乃自費食評, 單據巳有展示出來. 如需查証, 歡迎向餐廳/店鋪查証. 如仍不相信, 建議閣下不用參考本人食評.** continue reading

上一次來明閣該是很多年以前了,老實說,那時候對吃過的沒甚麼印象,然而,最近所來的一次,讓我重新認識了明閣。燒味三重奏作為前菜,已令人大滿足,三款的前菜中,個人認為以海蜇頭和叉燒最為吸引,前者以微量的西芹提升味道,吃起來富點醒胃酸勁;後者是明閣的名物,蜜味香甜。 茶壺松茸竹笙湯燉湯是以玻璃小茶壺和小杯呈上的,是多了幾分詩情畫意。除了擺盤外,還是很有實力的,好喝,喝到底的時候還可以喝到一小顆一小顆的松茸。 龍皇披金甲有幸可吃到明閣的必食項目之一,薄薄的一層吉列脆皮配很有嚼勁的蝦肉,名不虛傳。 酥炸釀蟹蓋, 芝士釀蟹蓋釀蟹蓋是明閣的名物,嘗試了兩個口味的,起初會覺得前者的酥炸版是較吸引,可是吃過後芝士版的實在是做得太好,當然兩者啖啖蟹肉的也吸引~ 蝦膏唐生菜煲簡單的道菜也足見師傅的功力,砂鍋熱度十足,每一棵菜也沾滿蝦膏,熱燙燙的,濃度剛好的蝦醬正好令唐生菜展現光芒。 豉椒蝦球兩面王主食從脆皮乳豬飯和豉椒蝦球兩面王中選了後者,麵是有脆身效果的,是穩紮穩打的。 甜夢仙境這個有縷縷輕煙的甜品拼盤實在太貼題了,很美很夢幻呢~ 蛋白杏仁茶作為美女公關大推薦,即使向來對杏仁茶有保留也當場要嚐嚐,有一股淡淡而易於接受的杏仁香。在甜品也可以找到成了固體的蛋白,大大加強了口感。聊著聊著,原來已經夜深了,好像大家又是時候回到自己在生活中的崗位,有幸跟兩位聊天後,又對生活有了點新的感悟,重要的是那是自己想要的生活便是了。明閣網址: https://s.openrice.com/QrbS0M2y000地址: 旺角上海街555號香港康得思酒店6樓電話: 35523028 continue reading

貴為5星級酒店內的米芝蓮食府我對明閣的期望都幾高但無論食物和服務都尚有很多進步空間環境裝潢總算令人滿意舒適自在夠光猛亦不失中菜館的格調茗茶亦有茶香很不錯我們三人行來享用晚餐 選了6度菜的套餐送來香檳一杯 剛好迎合來慶生的我們少有地餐前並沒有咸菜花生等小吃卻來了三個醬料分別是脆魚、豆干醬、XO醬脆魚真係好正 超香脆又有鹹香 一食上癮豆干醬有點滷味亦有點像鴨肝的質感XO醬瑤柱味香濃但辣味不重明閣三小碟份量較少 每樣只得一件千層豆腐最為驚喜 每層豆腐中間也沾了醬汁醬汁帶點甜酸很開胃明閣招牌蜜汁叉燒 肥瘦略嫌有點不均我的較瘦 家人的就有三分一的肥蜜汁味道不錯 但可能期望過高叉燒整體質素只屬普通松茸菜膽白天菇燉花膠湯的味道相當濃郁 菇和松茸味很突出但花膠真的很普通又細又少原隻南非湯鮑扣海參鮑魚煮得恰到好處 既淋但又有彈牙的口感但缺乏鮑魚的鮮味 而海參就偏淋欠口感鮑魚汁就非常好味 提升了整度菜的味道鍋巴蟹黃蟹肉大虎蝦全晚最滿意的一度菜!超巨型虎蝦 真係超級無敵厚肉雖然熟透但肉質依然透明爽口相當出色蟹黃蟹肉的茨汁略為偏淡現在明白那些醬料的作用加點豆干醬或XO醬味道就提升了!鍋巴香脆 沾滿茨汁食最適合不過欖角鹹檸M9和牛炒飯炒飯夠香飯粒分明 是個不錯的炒飯但欖角鹹檸味幾乎完全食不出來整體味道亦是偏淡 又是加醬料的時間和牛只是很細很粹的粒粒 完全食不出味道來甜夢仙境甜品卻令我喜出望外先是上菜時用乾冰營做仙境氣氛 戲劇性十足以糕點為主加豆腐布甸 雖簡單但非常精美豆腐芝麻布甸很香豆腐味底層加了濃濃的黑芝麻增添味道糕點有楊支甘露糕、菊花杞子糕、香芋水晶糕當中香芋糕超出色 香濃的芋味 吃完仍留有餘香加入啫哩增添口感真係一流另外兩款亦不錯但沒有驚喜不知道是否我們家太重口味這裡的食物整體味道欠奉 都偏淡食材亦不算特別高級 只是一般貨色而已正價來說($1088)實在不太值可幸是我有酒店會員折扣優惠上菜速度亦是頗急 未能慢慢享受晚餐仍未完成一度菜已來下一度菜應因應客人進度來上菜嘛服務亦尚待改善一位客人食完已被店員怱怱拿走了碟子但另外兩位仍在進食.. 禮貌上應等全抬客人吃畢才清走碟子嘛但最令我不滿的是話就當天較早前已致電說這是慶生的晚飯想在甜品加個生日牌接線員說沒有問題 會記低並作預備但最後完全沒了這回事甜品沒有任何生日字句作為一間酒店餐廳甜品加生日牌是普通不過的要求但卻完完全全地遺漏了實在令人失望 continue reading

I bring my parents to nice restaurants for special days from time to time. This time was the Ming Court for a Chinese fine dining experience. Location was convenient, easy to find. Environment was good, delicate as a Michelin star restaurant. And the waiters were attentive, well trained. We did feel being privileged customers. I think this was what we were look for beside delicacy. It was not easy to choose from the menu becoz there were so many choices. And we believed that we could hardly finish the dishes in the tasting menu set. We took some time to decide. At the end we picked 5 dishes. One award dish “龍王三弄” (3 different types of shrimps of different recipes served on the same plate). I would say the shrimps were very fresh and cooked perfectly. All were al dente (I know this term is for spaghetti but really it the same way. Just the right texture) however, the recipes were not impressive. One in soup, one with a red source and one in a Chinese white wine. Not moth watery, and the last one with white wine was too strong. One grilled eel in sweet sauce (當歸燒大鱔). Looking at the name, I didn’t know it was sweet. Dong Guai as part of the name but I didn’t taste any Dong Guai flavour. It was simply too sweet. The eel’s texture was too soft for an eel. One grilled baby pigeon with lemon sauce on the side. I don’t eat pigeon so I can’t tell. My dad’s only comment was very baby (in terms of size) 😂.One sweet deep fried pork. The pork was made abnormally tender in a good way. But too sweet again. It was a wrong choice to have two very sweet dishes in the same meal. One sliced tofu with mushrooms. The tofu’s texture was great, very smooth. The tofu itself was taste less. The flavour was give by the sauce and the mushroom on top. Unfortunately, the mushroom was too salty. My mother commented that in front of the waiter. He gave a very satisfying answer ‘I’ll tell your opinion to our chef.’At last was the fried rice with grilled suckling pig. There were a few pieces of skin of the suckling pig on top of the rice. The skin was exceptionally crispy and very thin. It was great. The fried rice not too dry not too wet (粒粒分明). The flavour was nice but again I felt too salty at that moment. It could had been affected by the tofu just before. I would rate the restaurant very high in services but there is still rooms in taste. Tastes of most of the dishes were too strong. It could make it a burden for guests.
