好多年前吃過鮨魯山Sushi Masataka,幾年後再吃Masa 還是超級好吃有心思,刀工真的太強最喜歡壽司小小一件,飯比較少,冇咁快飽可以食多幾件🥰但價錢比較貴。 Masa Hong Kong 人數大概坐到8位。 continue reading

每一味嘅仔細評語就唔講講個人睇法同埋個大方向在香港要搵間有質素有服務的日式餐廳真係都唔少。但係有以上兩種特色再加埋食物嘅質素同埋師傅嘅功力就真係唔多Masa 真係中上級以上嘅range 裏面價錢就真係一啲都唔平但係食到嘅嘢真係一流每一樣都係有心機製作材料非常新鮮唯一可惜嘅就係Book枱的難度希望第時book枱唔使等很長每一味一味嘅上菜都好似藝術品咁👍🏻嗰晚食個野生三文魚魚子真係好特別壽司手功厲害環境非常乾淨和服務完全超班 continue reading

二訪中環Masa,今次是午餐,由Masa師傅親自招呼。又再一次可以近距離欣賞Masa師傅認真處理食材的風範,人生一樂也。午餐以壽司為主,每一貫都近乎無可挑剔!個人比較喜歡鏗魚和魷魚,最後那個卷物也很好吃!新鮮頂級的食材,嚴謹和一絲不苟的處理手法,帶給客人最原始最純粹的壽司味道,這就是Masa師傅的魅力!服務水平也超高,每次到來都沒有失望,great dinning experience! 絕對是香港頭三位的高級日本壽司店!期待下次的到來。 continue reading

原来湾仔的masataka是我在香港最喜欢的鮨店之一,review也写过好几篇了。.店铺换到中环后,名字改为Masa,差点以为是纽约那家。 .这次订了午市,lunch omakase 2600多一位,差不多小20道。.masa san本人手法淡然娴熟,不过一旁辅助的学徒,感觉手法不太纯熟。我坐在他面前,看着他一直手抖。.原来记忆中masataka家寿司特有的暖暖的温度没有了。味道和整体出品稍微有些不均衡:包括一贯寿司中冷热温度不均衡、味道seasoning不均衡、食材的新鲜程度不均衡等。可能是午餐的原因,虽然总体好吃,但总觉得哪里还差了一点。.价格比之前湾仔晚市便宜,但作为午市,不算便宜,.总体感觉不如原来在湾仔的晚市,下次晚上再来试一次,再下结论吧。.——————.酒肴:smelts多春鱼,渍的过酸,海螺、毛蟹,这道三个的口味都普通。baby oyster,甜口,好吃。grilled hairtail,之前来很喜欢这道,表皮焦脆,入口即化,但今日出品温度有点凉,感觉不是新鲜烤出来的。.墨鱼,切碎的墨鱼寿司算是招牌之一,找出之前的照片发现搭配的seasoning变多了。个人觉得盐分布不均匀,导致味觉不是很平衡。.金目鲷.madai 真鲷,酱味道过重.八爪鱼搭配鲷鱼鱼籽,八爪鱼质感不是很tender。.平政鱼,味道比油甘鱼和鰤鱼更为清甜,油分不会过腻。 .北海道樱鳟鱼 sakura masu,出品好美。.海藻蒸蛋,里面有海胆和鲨鱼骨,最近香港日料店,鲨鱼骨突然流行起来。.带子,里面配乌鱼籽.酱油渍tuna,相比其他家味道没有那么浓郁,渍味遍淡。.otoro chutoro 叠加,非常蓬松好吃,之前的notes这贯有鱼筋,影响口感,但这次来,这一贯非常完美。.招牌昆布马粪海胆,软绵绵的一大口。.香葱手卷,太好吃了!.轻烧赤陆鱼.太卷.最后是味增汤、蛋(大小变成原来的一半了)、hojicha。.甜点可以选mochi或者慕斯,mochi有点过甜,慕斯味道还可以。 continue reading

食過幾間Omakase,呢間真係冇可挑剔,位於中環,環境,服務,衛生,食才新鮮,日本師父,之後仲同個師父一齊飲,份量剛剛好!雖然價錢比一般嘅貴,但當食嘅時候,每一度菜也是好新鮮,好好食,又淡去到濃味,每一度菜也會解釋,介紹,佢生蠔,海膽,白子令我回味無窮,之後仲好細心問我地夠唔夠,之後整多二款野比我食,book呢間本新超難book.好彩識人book到,老闆亦好好人開支14代請我飲👍👍呢間野下次一定會再食! continue reading
