The weather was getting a bit less scorching hot. We tentatively decided to go for ramen. Maru De Sankaku  is currently trending as the place for ramen. It constantly has a line of people and they close when the soup runs out.Located in Central, we arrived at 1 PM and yes, there was a line. But it wasn't long. People do eat quickly.The restaurant isn't very big. They only have one table and the rest are all facing the kitchen.Menu is in English and Chinese. You order outside the restaurant by a touch screen display and payment is cashless. They basically have two types of broth. Both use madai fish. They also have one seasonal ramen which was a tsukemen when I was there. There are also add ons as well.I decided on the seasonal tsukemen ($148). It arrived in a billowing smoke  of dry ice.  The noodles were thick and looked more like the knife cut Taiwanese noodles. It soaked up the soup very well. The soup was a very rich and intense madai and chicken. There was chunks of char siu and fish meat in it as well. My only mistake was asking for dashi broth to dilute the soup to drink it after I finished all my noodles. It diluted it to become nothing. I later tasted the broth and it appeared they only gave me the starchy noodle water.Boyfriend ordered their signature ramen. A madai clear broth ($138). The broth was beautiful. Clear, yet strong and delicate. The taste of fish resonated for a long time on my tongue. It came with a soft piece of char siu and a very crunchy fried fish skin. The bamboo was even cut into a triangle and circle shape just like their logo. It came with a small plate of oyster oil that was rather salty but rich. Adding it to the soup made it even better. The noodles were al ente and smooth.We shared an egg ($15). The yolk was beautiful and lightly smokey taste. A decent egg.The signature ramen was wonderful. The fish broth was excellent. Probably one of the best fish based ramen places in Hong Kong in my opinion. Would be back again if their isn't a long queue and only order the signature.  continue reading

「座銀Zagin」的雞白湯拉麵是我在香港百吃不厭的拉麵店,湯底超濃郁,集團品牌在中環同區開設姊妹店,就在座銀轉角的斜路,主打「鯛魚湯拉麵🍜」,五月份soft opening,每日限量提供100碗拉麵,12:00開舖直至售完,要試就趁早了🤩拉麵只有3款選擇:鯛清湯、鯛白湯、鯛沾麵,未夠一點去到,附有兩大片炸鯛魚皮的「鯛清湯 」已賣光😭😭,唯有點「鯛白湯」($138),再加份「炸鯛魚皮」($48),排了足足一個鐘,先落單付款後入座,要有心理準備排到近門口位,會有陣陣魚湯味飄出來,令人更肚餓,全店只有10幾個座位,為了食好西唯有耐心等候🤪單看「鯛白湯拉麵」的賣相,已知是日本師傅巧手作品,每樣食材細緻鋪排在湯碗中,一點也不馬虎,這就是日本拉麵的本領🤩!湯底秉承座銀集團出品的濃厚白湯,充滿魚香🐟,湯底打成奶泡份外creamy幼滑,嫌魚湯太濃可將黏在碗邊的柚子醬加入湯底,加添清新口味🍋叉燒肥瘦適中,肉質軟淋🐖伴有粒粒鯛魚肉碎增加口感,再配上解膩的洋蔥粒🧄和切成代表店舖名的圓形&三角形厚切筍片,個人口味一向不好魚湯底的腥味😣,但這碗「鯛白湯」改變我對魚味湯底的印象,原來鯛魚白湯配拉麵的味道可以如此特別🥰「炸鯛魚皮」是必點,脆得來炸得乾身,一點也不油膩,咬時發出咔嚓一下清脆聲響😋👍🏻座銀這個餐廳集團真是深不可測! continue reading

是日與男朋友相約一同外出用膳,男朋友說早前從網上尋得一間拉麵餐廳,被它裝潢外觀吸引,嚷著想到此拍照順道品嚐拉麵,我們一起到中上環一嚐究竟。餐廳門外裝潢簡潔雪白,入內環境豪華整潔,飯桌椅子以木材為主元素,食用餐具以白色為主,配搭簡約金邊設計,予人一種高貴的感覺。餐廳不但名稱特別,而且內進用餐前亦須於門口先付款,並只收取 Visa、Master、八達通。鯛清湯拉麵湯底是使用鯛魚熬製而成的魚湯,湯面可見含有豐富魚油,其色澤清澈,飲用味道魚香濃郁,鮮味十足。拉麵使用直身黃麵製作,口感柔韌彈牙,掛湯能力高。配料有炸魚皮、叉燒、筍、鯛魚肉碎,用料豐富,炸魚皮有兩塊,口感香酥脆口,魚味濃郁,絲毫沒有魚腥味。叉燒是以慢熱方式製成的,入口肉味濃郁,軟腍嫩滑。筍有兩片,口感幼嫩爽脆,清香鮮美。鯛魚肉碎紮實彈牙,甘甜鮮嫩,魚味濃郁。鯛白湯拉麵湯底是用魚和雞一同煲製而成的,色澤呈現奶白色,碗邊黃色的是柚子醬,目的用作減淡油膩感,混合湯底飲用,味道清新芳香,稠密黏口,魚和雞的鮮味香濃突出,鮮美可口。配料方面則可見有鯛魚肉碎、筍、叉燒,這款拉麵是朋友點選的,我只小嚐了幾口湯底,其餘便不作詳細說明了。櫻木煙熏糖芯蛋糖芯蛋色澤金黃亮麗,蛋黃製作得呈現流心狀態,味道鮮香微甜,醇香惹味,整顆雞蛋口感稠密緻滑,蛋味濃郁,入口即溶,同時帶有輕微的煙燻香氣。整體而言,餐廳裝潢高貴簡潔,環境舒適衛生,食材味道製作高質美味,賣相精美吸引,用作拍照打卡亦很是適合,也是吃拉麵的好地方。 continue reading

🍜Madai Clear Broth Ramen 鯛清湯拉麵🍜 HKD 138—————The most refreshing bowl of ramen I have ever had. Love the light sweet flavour of the fish broth with a touch of yuzu towards the end. If you prefer more intense flavours, you can add more of their handcrafted oyster sauce, its flavour truly reminded me of a fresh oyster! I really like the texture of their ramen as well, springy and slightly chewy, without being too thick or dense. Top with a tender piece of cha siu and fried crispy madai skin, a very satisfying meal with a combination of texture! Also added an egg on the side (+HKD 15), which had a lovely smokey flavour. 👍🏻 Had to wait outside for a good 50 minutes before we got seated though, and it was definitely on the pricier side🙈令人感覺眼前一亮的一碗拉麵。鯛魚湯底味道清甜,鹹度恰到好處,喝完也沒有口渴的感覺。喜歡比較濃味的朋友可以加旁邊的牡蠣油,味道非常鮮。拉麵的質感也不錯,彈牙帶點咬口,不是又粗又實的那種。叉燒軟淋,加上炸鯛魚皮,口感十分豐富,非常滿意👍🏻另外加了櫻木煙燻糖芯蛋,真的有很香的煙燻味😍 不過等位用了50分鐘,價錢也偏貴🙈 continue reading
