This modern Chinese restaurant is located in Wanchai Star Street, offering contemporary Chinese dishes with a twist, in a buzzing and vibe atmosphere while customers can still see the kitchen and the familiar BBQ racks displaying the char siu (BBQ pork), goose and chicken.Arriving early in the evening we were seated in the middle of the restaurant, and while the dining area was fairly comfortable, with more people coming the place became quite packed and there was not much space between tables. If you prefer a quiet place for dinner, this is not the right venue. But if you wants to enjoy some fun and relaxing ambiance, the bar and cocktails offered a nice complement before the start of the meal.We went for Ching's Banquet Menu ($380 each), and the starting dish was Sesame Prawn Toast. The milk bread was stuffed with a layer of mashed prawn, before deep-frying to give a crispy texture. It was not oily on the palate, with the tare and chives on top serving as nice complement.The next course was Hamachi Crudo. The yellowtail sashimi was marinated with XO tare vinaigrette to give a slight spicy kick to the delicate fish meat, intense on flavors, while the roasted tomatoes and charred gooseberry were to me even better in taste, robust on the flavors and the acidity matched well with the slightly spicy sauce.The third course was Suckling Pig, served on top of a celeriac puree and roast jus. Really crunchy, the suckling pig's skin was phenomenal, with the meat also having an equally amazing taste. The smooth and creamy puree was an interesting contrast on texture. This was my favorite among the dishes in the evening.The next one was Roast Duck, with the best cut served, including the breast and drumsticks. The duck was truly juicy and flavorful, and was great with the sauce. There were also some assorted homemade pickles accompanied, and those were also very good too.The vegetable dish was Roast Cauliflower, prepared with Xinjiang spices and sweet soy sauce. Quite an interesting way to prepare the cauliflower, because we told the staff to reduce the spiciness of all dishes, I think this one the chef had tuned down a lot, and in the original recipe the spices would be quite intense. Unfortunately this version resulted in a dish lacking its characters.Next came the Mushroom Egg Fried Rice, which was quite good with some preserved vegetable added. A good wrap up for the meal before the dessert.The dessert was an great Ovaltine Cake. I originally mistook this to be a chocolate cake but once we tasted the ovaltine characters were profound and unmistakable. A nice dessert, not overly sweet, and a good conclusion to the meal.Service was generally good, but I prefer to have the staff explained more the dishes. The bill was $900 (without service charge) and fairly reasonable considering the amount of food and the quality. If you fancy something different than your traditional Chinese food, this is a nice choice to try it out.Read More

再次黎星街搵食, 去咗“Madame Ching” 呢間疑似中菜既舖頭。位置係日、月、星街搵食集散地既入口,啡色外門都幾易搵到佢,不過招牌就好細隻字唔係咁易發現佢👁‍🗨 12點零黎到, 人唔太多, 店員全部係講英文📶呢個區域始終都係英文客流最多。餐牌一樣係英文而且仲係西餐Style, 前菜 +主菜+甜品。用番中國人角度去睇, 其實都唔係太明佢入面啲內容: Impossible Potsticker, Skirt Steak, Ma Lai Goh Sponge Cake, 腦筋急轉灣一下先明係乜🤔樓底夠高, 就算全場係外國人為主不停傾計都唔覺嘈。內部裝飾木色為主, 營做到古色古香既味道💕見到蝦多士永遠都係無力抗拒🦐 今日仲要坐BAR枱, 睇住佢點去炸塊多士。半塊方包對角切🍞少許既蝦膠係表面, 同我預期既厚厚材質有點出入。味道上還算可以。另外道前菜鰤魚 (Hamachi) 用咗梅粉同醋調出酸味魚生, 味道一樣可以👌去到主菜, Skirt stake (google 告訴你: 側膜橫肌牛扒) 跟既薯絲; 牛肉質地咬口爽✔️不過薯絲就調得太咸, 有啲難入口❌冠名Madame Ching Bowl 既沙律, 有少許似凱撒沙律加料咁, 說實在, 唔覺得有乜特別到要用上舖頭名稱🙄最後兩道甜品, Green Tea Cream 配藍梅外貌還可以, 但食落去只係一包開左既藍梅配番少許醬汁😂得意少少既Ma Lai Goh Sponge Cake, 其實係我地食開既馬拉糕 (不過係深啡色) 再配柯華田醬✔️埋單兩位344蚊, 其實主力都係食個環境。食物雖然係有心思去RE-MAKE 中菜👍 不過味道可能唔係對應番華人口味, 主打外國人市場吧😁Read More

I often come to star street for lunch as the environment is quite relaxing and there were relatively less people queueing up for lunch.One day we’ve decided to try out this new-ish addition to the foodie street for lunch.Their lunch was not expensive, but the food was just so bad... for the whole lunch, I felt like their water was the most delicious dish for the afternoon. 混血兒的臉孔總是特別好看,皆因遺傳了父母的優良基因,縱使有些未能評為漂亮,氣質依然有所不同。 Fusion 菜同樣集異國之烹調精粹,而且創意無限,並隨著處身之地而改變,順應當地人的口味,坐落星街的鄭氏烤肉 Madame Ching,主打中美混合菜式,帶著美國人喜歡的口味而來。 門面如西餐廳,自然沒有穿長衫的女支客,換上西裝外藉男亦不錯; 進店驚見掛爐鴨,餐牌又卻是全英語。 熱情外藉男經理非常快而準地介紹餐牌,幸好我們全接收,重點是如果今晚胃口好,不妨選擇 Ching’s Banquet Menu,咁就一次過可以試多幾味,正中下懷,就此決定。 全晚英語招待,男女工作人員雖有着亞洲人面孔但英語流利,不奇,因為客人皆以外籍人士為主,而且,這樣地,更加貼切中美混菜的主題。 招牌雞尾酒的名字亦是怪怪的,Beijing Lake、Sleepy Dragon,北京何來有個北京湖?$90/杯合理,就這兩杯。 Beijing Lake  成份古怪,四川胡椒芒果糖漿唔知是甚麼?配菠蘿葉、苦艾酒 vermouth 、龍舌蘭酒 tequila ,結果真有點怪,同伴覺得有欖角味,我覺得比較淡,只有龍舌蘭酒的味道,杯面有花椒但不麻,看來是男生的酒,非我杯茶,我還是喜歡甜甜有果汁的。 Sleepy Dragon  我嗰杯見樣都已經吸引好多,印上金龍的仿古中式茶杯內紅紅綠綠,冧酒 rum、薑啤 ginger beer、橙與雲呢拿糖漿配合椰子,甜美可口,點點酒甘,平衡的雞尾酒。 Ching’s Banquet Menu $350/@ General Son Chicken 大廚就是 Mr Son,美籍越南人,爸爸從前當過將軍,將軍之子沿用父親的秘方做出來的菜式,在美國大受歡迎,因此就把這道菜命名為將軍之子的雞。 一看已知非主流中國菜、亦非越南菜,吃之頗辣,有左宗棠雞的影子,亦似韓式炸雞,雞皮非常酥脆,雞肉非常嫩,最特色是整件雞沾滿了黏稠的糖膠,估計是麥芽糖膠,藕斷絲連地又如吃脆麻花。 麥芽糖配辣椒,真有想法!甜甜的味道中和了辣椒的辣,霸氣但又完全受得起,刺激的美食,想來,應該非常適合配啤酒。 Uni 可算是海膽刺身的西式吃法,創意地伴以 Brussels Sprouts、法式酸奶油及醋汁,聯合國的組合,難免蓋過了甘香鮮甜的原味,但酸甜爽軟的口感,不會令人抗拒,好一個新嚐試! Hamachi Crudo 另一道西日混合菜,油甘魚生片配酸甜汁及紫蘇葉,味道頗真酸甜,完全蓋過了魚生的原味,只保留質感,大膽的另類演繹! Amadai 香煎甘鯛魚配茄子,做得十分出色,魚皮香脆如蝦片,照我所知,需要技巧地反覆用滾油淋上魚皮而成。 魚肉鮮嫩,配茄子豆豉汁無問題,味道唔錯。 Roasted Chicken 果然是烤肉專家,烤雞皮脆肉嫩,雖然雞胸難免有點嚡。 配泰式 Nam Prik 汁,少少辣,更香濃惹味。 Brussels Sprouts 配菜少不了,均衡飲食,蓋滿脆片、炒至微焦的 Brussels Sprouts,份外香惹。 Mushroom Egg Fried Rice 材料相當足,叉燒冬菇炒飯,加進欖菜是潮州菜做法,還有很多炸蒜,層次多,香味足,只嫌有點過鹹,否則色香味俱全。 Ovaltine Ma Lau Go 贈送的甜品,阿華田慕絲配馬拉糕,中西合璧,相處融洽。 星期四晚全滿座,氣氛熱鬧,服務親切,價錢合理,放工後飲嘢傾計的好地方!Read More

Restaurants under Pirata Group always have a big lunch menu to offer for restaurant week. Madame Ching is no different. Located on Star Street in Wan Chai, Madame Ching is a complementary Chinese spot that is a modern Chinese roast house. This big feast for one started with 3 amazing starters:General Son’s Chicken1. Catchy name for the a fancy dish of crispy chicken with sansho pepper.2. It got my heart immediately when it’s served as it looks and smells so good!3. I had the first one without dipping any sauce at the bottom. It tastes so good with the crunchy skin and hot tender meat inside.4. The sweet and sour sauce with sansho pepper at the bottom is absolutely fantastic! I love the numbing spiciness of the sauce which brings so much flavour to the chicken.5. It is really chopsticks licking good! Make sure you go for the sauce hidden in the bottom!Sesame Prawn Toast1. The General Son’s Chicken was so good, and I wonder how good would this toast thingy be when it was served with a comparatively more ordinary look, with an outstanding sunny side up on top.2. Poking the egg yolk and soak it with the toast is always so fun! Am I the only one?3. First bite and I already know I wasn’t being fair to this dish. The toast is made with milk bread, which is so rich in flavour!4. And the prawns tare inside the toast is just so fresh and delicious!5. Of course, the toast is topped up by the egg yolk! Nom Nom!Coriander and Green Radish Salad1. Here comes the dish that I don’t really like. Not their fault, it’s me who never like any salad nor veggies.2. But I have to say, even though I am not a green or salad person, the dressing is definitely delighting.3. The ma la (numbing spicy) bits surely work their magic to give your taste bud some hot and numbing sensation, and it does taste quite spicy!4. As for the peeled green radish that looks like thick noodles, I guess they are quite good for those who love veggies.5. I filled my stomach with the first two starters, so I didn’t finish this dish…Sorry!Main - Roasted Chicken1. To be honest, I was actually relived to see the main this small, as I was already quite full at this moment after 3 big starters.2. Being a roast house, Madame Ching does know how to roast! The chicken has very delicious crispy skin, and smooth tender meat underneath. It is also a sign that the chicken is just cooked right, not too raw with blood nor overcooked.3. The nam prik sauce does add a bit of extra flavor to the dish.4. I totally ignored the prickle cubes on the side after trying one. Not my cup of tea. But you might like it if you like Chinese pickle.5. I would love to visit again to try out their other roast.Side - Roast Cauliflower1. A full bowl of cauliflower. Really generous portion!2. Even for veggies hater like me, I still like this side!3. The deep fried garlic topped up the texture and flavour of the dry cauliflower.4. The cauliflower is not overly dry after roasting. It’s still quite succulent.5. This dish balances out all the guilt from eating all those delicious meat.Dessert - Ma Lai Goh1. The big feast ends with this amazing Ma Lai Goh, which is a traditional Chinese cake dessert.2. Madame Ching’s version of Ma Lai Goh is surely a nice modernized reinvention with a chocolate flavour.3. It is very airy, yet moist and dense.4. The ovaltine custard on the side is just so yummy!
