聖誕將至,想預早吃一個法式大餐慶祝一下。個人對法日料理情有獨鍾,在芸芸搜索之下,發現在銅鑼灣耀華街的Zing10樓,有一家唔錯的法國餐廳。有聞他們用上日本食材揉合法式煮法,正正是我所喜歡的。唔知今晚有什麼驚喜呢?一步入餐廳,立刻被那浪漫的氣氛所吸引。這兒以夢作主題設計,所以燈飾和餐具配件用上羽毛和蒲公英,感覺夢幻又不失優雅。餐點選擇方面分別有4 shades of flavor$590/ 6 courses of flavor truffle menu $980/ 8 courses truffle menu $1280及聖誕限定6 courses truffle menu$1280.細問menu的箇中分別。原來聖誕限定的truffle menu 有特別多的即刨白松露同黑松露。既然未吃過白松露,今晚試下Xmas special 的6courses truffle menu。先送上麵包,麵包有牛角包和煙肉包。牛角包暖暖的,入口鬆化,飽身充滿氣孔,再配上牛油,滑溜又香口。既然這是法日菜餐廳,amuse broche 也比較特別,是日式大根烹。這大根是以味琳、清酒、醬油炇煮。大根煮得入味軟身,加上底下的昆布,和風味十足。第一道菜是Tuna oyster roll/Tuna sashimi- fresh Japanese akasaki ousyer- truffle vinegar dressing嫩紅的toro刺身,魚肉纖細嫩滑,滿帶油香。赤崎生蠔十分肥美,口感滑溜creamy. 再配上鮮黑松露醬汁,黑松露味道淡雅,還透出陣陣柚子香,味道酸爽清新,是一道幾light的前菜。Pan fried scallopJapanese jumbo scallop-salmon roe- pea purée-truffle almond cream sauce 日本北海道帶子表面輕煎,完全保留了刺身的嫩滑口感。配合鮮美的三文魚子和青豆茸,味道特別清新。再試試沾上特調的黑松露杏仁醬,杏仁味淡淡的,黑松露香味幽幽,唔太濃烈。令整道菜味道更為creamy豐盈,好吃。Lobster tail with truffle oilSlow cook lobster tail-truffle oil- kombucha mango tofu sauce波士頓龍蝦肉質極為嫩滑鮮美,正!由於龍蝦經過松露牛油浸煮,龍蝦肉更為滑溜鲜甜,帶一點點的松露香。再沾上芒果豆腐醬汁試試,又別有一番風味。醬汁甜美果香,再配合甜甜酸酸、清爽的石榴子,頓然fresh 好多,而且和龍蝦幾合拍。Truffle wild mushroom risottoTruffle - wild mushroom- Parmesan cheese - risotto 嘩!即刨的黑松露香氣四溢,味道濃香.正!這道菜雖名為risotto, 但採用了小粒狀的意大利意粉取代risotto。這意粉口感軟滑creamy, 充滿濃濃的Parmesan芝士香味。黑松露的芳香與creamy的risotto 一拍即合,令人吃過不停。主菜French spring chicken rollFrench spring chicken,hazelnut,chestnut, girolle, kale and cranberry sauce朋友點的法國春雞卷真的喜出望外。本來沒有什麼期待,細嚐之下,雞卷肉質極為嫩滑juicy有驚喜!雞卷的意大利煙肉切得透薄,帶一點煙燻味,拼上栗子和榛子,聖誕氣氛特別濃厚,彷彿在吃火雞一樣。嫩香的雞肉,還有和牛肉汁佐碟,味道濃淡可自行調較。配菜黃油菌有著獨特的菌香,配埋幽香的白松露片與雞件,味道層次十分豐富,松露香氣慢慢的透出來,真令人滿足。估唔到白松露的芳香比黑松露更勝一籌。Kagoshima +$198,A4 Kagoshima tenderloin- seasonal veggies, chanterelle mushroom, truffle wagyu beef jus這牛柳採用了鹿兒島A4和牛,表面微微焦香,內𥚃透出嫩紅的肉色,真的叫人垂涎。牛柳油花唔多,但肉質極之嫩滑,加埋香氣逼人的白松露,肉鮮菌香,再沾上濃縮惹味的肉汁,實在太好吃了!配菜也一絲不苟,分別有日本舞茸、羽衣甘藍等等。原來白松露可以同牛肉都幾夾。Chocolate rouladeChocolate, peanuts parfait, jelly, chocolate rock朱古力roulade就好像一件雪糕旦糕一樣。外層的朱古力包住花生芭菲。這朱古力roulade質地緊密,朱古力味醇厚而濃郁,充滿了濃濃的花生香,味道甜美。再隨意配撘芒果汁、啫喱糖或朱古力脆脆同吃,玩味十足,又多一點變化。而那士多埤梨就好像聖誕老人一樣,很可愛。它的中心釀入了幼滑的松露忌廉,原來松露同甜品都可以咁合拍。甜點是Apple tart與honey cakeApple tart個子小小,十分可愛。加上撻底脆薄,蘋果和custard 味道淸甜,可口甜美。而那蜂蜜旦糕是自家製作,甜甜地,質地鬆軟。餐飲選擇了earl grey 配honeyEarl grey 茶味芳香,入口順滑,加埋蜜糖,味道帶甜香,更易入喉,不錯,正好為這美饌劃上句號。估唔到這一晚像夢一般的過去,三小時彷彿消失於無形。舌尖上仍然回味著那白松露獨有的氣息。大家都愉快地棒腹而回。 continue reading

近排好鍾意食日本菜,飲食大佬得知後就帶我黎試試Le Rêve。Le Rêve法文解作夢,餐廳用日本新鮮食材配以法式嘅煮法,為客人帶來夢一般的盛宴!!! 餐廳裝修都貫徹Le Rêve,微黃的燈光,有純白色的Dream catcher,而餐桌上有白色的羽毛,為客人帶來輕柔的感覺!!! 特別鍾意餐桌上的蒲公英燈,好可愛呢😍!!!!Le Rêve提供4/6/8道的套餐,同大佬最後決定食6道菜呢,怕8道太飽了!!! «餐前包» 牛角酥小小一個,用小麻布袋裝起,外面脆而鬆化,帶有牛油香,層次豐富!!«Amuse bouche» 龍蝦tartar龍蝦肉爽口加上底下的青瓜,好清新!!! 為整餐飯打響頭炮,開胃!!«Surprise dish» 🐟炙燒鯖魚吞拿魚Tartar配多士鯖魚炙燒後,皮脆肉仍保持鮮嫩,有魚油香!! 吞拿魚Tartar味道鮮甜,配上多士同鯖魚,口感好豐富呢!!!«Hokkaido Jumbo Scallop»我嘅至愛之一!!! 來至北海道嘅珍寶帶子,煎到五成熟,內裡仍保持鮮嫩,肉質飽滿彈牙而且鮮甜可口。配上芒果莎莎同三文魚子,味道更正更豐富!! 另外黑色小壺係白酒忌廉汁,味道變得法式,醬汁香濃幼滑!!!«Botan ebi»牡丹蝦蝦肉炙燒後,蝦肉爽口彈牙,帶有濃郁嘅蝦味!!! 蝦頭酥炸後,好香脆,蝦膏味道甘香,好正!!! 埋藏喺牡丹蝦下的不是risotto,而是貌似米粒的意粉,忌廉汁煮過後,入口al dente!!!«Surprise dish» 炙燒吞拿魚臉頰配Pesto sauce店員即場為吞拿魚淋上火焰,吞拿魚臉頰經過火燃燒過後,吞拿魚獨有的魚油香味,充斥鼻腔,吞拿魚入口即溶,魚油豐腴甘香,超級好味呀!!! Pesto sauce味道香濃,帶有羅勒的清香,配吞拿魚肉又另一種好滋味!!!«Mulard duck breast»法國鴨胸煮到6-7成熟,鴨肉仍帶有粉紅色,鴨肉沒有鴨腥味,入口有嚼勁,好味!! Port wine sauce令鴨胸味道更濃郁呢!! 伴碟有拿破崙risotto,risotto用pesto sauce煮過,味道清清地,配上濃郁嘅鴨肉,一流!! «Pipe organ» Caramel bridge豐富嘅前菜和主菜完結了,係時候到甜品出場!!! 焦糖酥皮橋賣相一流呀!!! 酥皮橋上有秋季盛產的糖漬栗子,紅菜頭蛋糕和意式奶凍,配以焦糖忌廉汁。點點焦糖汁不太甜,有獨特的焦香風味,口感幼滑,唔會覺得膩!! «Mignardises and peppermint tea»最後以peppermint tea作為美好的總結!!! 店員服務一流,細心詳細介紹每道菜式,有禮貌!!! 餐廳氣氛有格調,推介俾想Fine dining嘅朋友!! continue reading

呢次上去呢度食法日菜。入到黎,環境暗暗,開住數盞小燈,見到數枱幾對男女細語中。雖然係鬧市上樓嘅餐廳,但做到絕對寧靜。Le Reve係法文解作「the dream」,感恩夜晚瞓覺無咩發夢,對於夢境可以更多嘅想像。如果要為呢間餐廳所指嘅「夢」解畫,我會話係食物上帶出嘅驚喜。店員先上menu,先被佢本menu吸引住,舊式嘅皮套,厚書紙,插圖簡單。餐巾用「羽毛」套住,前面有一條羽毛。睇完menu,揀咗8 shades of flavour,$820,另外可以揀wine pairing。店員先加花露水落抺手巾,來帶一點香氣。小麻袋裝住小牛角包來開始,左上嘅小花係牛油。Amuse Bouche呢組字係法文係「給咀巴的娛樂」,係廚師係正餐前為客人準備嘅小點,係廚師表演佢嘅創作靈感,係希望客人嘅味蕾打開一下。呢款係龍蝦tartar,一小口落口,鮮味先跑出,味道小小濃,可以接受。Surprise Dish廚師會由時令食材做組合成,等於你係夢境都唔知一步會經歷啲咩。一口豆腐沾上日本胡麻,一口新鮮拖羅,一口生蠔配三文魚子,特別在佢用咗柚子醋。Kagoshima Tartar用咗A4和牛tartar,入口即溶,味道再濃多一點,配上多士,不錯。Hokkaido Jumbo Scallop全熟嘅帶子會好「鞋」,廚師花小心思,只輕炙兩邊面,中間五成熟,咬落去質感好好,下面仲有芒果做底,小小甜酸配著,再上一層。Surprise Dish繼續往「夢」行,上嘅竟然係材料十足嘅湯頭,主要係雞湯,再有螺同鮑魚肉煮,味道再濃啲,試左一口湯後,可以加小小檸檬,較清新一點,但唔會破壞本身嘅味道。Botan Ebi記得有一次同朋友食飯,講起碟,如果餐廳著重上碟碟本身嘅溫度,可以睇得出佢地係有要求嘅。呢碟係真係熱,牡丹蝦嘅頭同身脆脆,唔好睇佢中size,係好濃,燴飯亦夠味。Surprise Dish店員提我地要小心,夢境行到呢度有視覺熱感嘅效果,用火輕炙燒一燒,香味好似牛肉,原來係呑拿魚臉頰肉。魚肉夠哂林,而且好滑,同平時食完全唔同,連口感都有啲似食緊牛。其實食到呢度開始飽,呢道Kagoshima要另外加$198,牛肉三成熟,Tenderloin肉係無乜肥,而且味道係超級嫩滑,配上南瓜汁,旁邊嘅小點係蜜瓜哈蜜片,砌得好簿,用生果來refresh一下。睇咗menu好耐,一直都好想知Pipe Organ到底係咩,上到黎係糖蔥餅,好似管弘樂中嘅管類,仲有雲尼拿雪榚,食咗咁多道濃味嘅餸,呢啖雪榚黎得剛剛好。餐廳亦有露台位。夢境人人定義唔同,來一點surprise,俾啲靈感我,可以係生活上有新刺激。(多謝你睇到呢度)小小有感而發:之所以開始寫食評,背後係想真實寫下同每個人嘅小日記。人大咗,留得低嘅唔多,可以係寫食評中學習唔同文化、回味與人相處、味蕾嘅享受同真實嘅分享,多謝呢個小小嘅平台可以俾我𠺘下口。 continue reading

The tuna tartar was splendid and definitely didn’t disappoint, the seared saury also gave a unique texture to the dish. To be enjoyed together with the fig jam toast, it was indeed a delightful surprise dish.Hokkaido Jumbo Scallop👍👍👍👍The seared scallop was perfectly seared with an opaque centre, it was extremely soft and tender, and it worked really well with the cream sauce. The sweet and tart mango salsa also adding the complexity to the dish. You can even soak up all the cream sauce with the croissant.Botan Ebi👍👍👍👍👍The Botan Shrimp was lightly seared on the outside, the contrast between the seared exterior and soft interior was amazing. The cheek of tuna was so tender and meaty with a hint of smokiness.Kagoshima Wagyu (+$198)👍👍👍👍👍The Kagoshima Wagyu Beef Served with melon, pickles and berries, all these components helped to balance out the succulent meat and each bite has a rich flavour!
