有一段長時間沒有來Ricky的餐廳了, 主要原因對於近乎赤貧的我倆來說實在幾貴(尤其是晚餐),所以選擇農曆年來, 多少會有些利是錢補貼一下, 算是心理上平衡一點, 其實食午餐已經可以食到佢嘅拿手野,只是有時會感覺單調一點而已, 但對於我倆好日唔來一次的非常客來說, 都算”久旱逢甘露”了,Ricky 的法式有時又感覺唔太百分百法式,中間會滲入了些意式甚至中式, 如果佢係打功夫的話, 就可能係另一個自創門派的師傅, 集合了學過的門派再加入一些實戰招式, 用最真接而且精準地一招了決對手, 佢嘅對手咪係餐廳內嘅食客囉, 至於佢嘅招式: 當日先來一招-有生有熟, 天使蝦仍舊新鮮, 但味道同以前比較? 唔記得! 螺肉是肯定的大碼, 本身味道不重只能夠食個蘸汁-芥辣鼓油也, 慢焗三`文魚柳,實在係入口即溶嘅口感, Ricky的方式用焗而有某些師傅則用溫油浸煮, 始終自己喜愛焗的這個版本, 起碼環保一點, 用油浸的話,浸完魚的油還會番用嗎? 而且溫油亦滲進魚肉當中,咪等於食油? 第二招: 清湯洋蔥, 最令人折服的是炒洋蔥的火喉, 全透明之餘沒有一點過黃,或者過黃的洋蔥絲已被拿走了, 充分迫出洋蔥那甜味, 這湯入口則感覺到那份鮮甜, 而面上雖然灑上瑞士傳統芝士但亦只是剛剛好, 沒有好像一些酒館那樣為求視覺效果鋪天蓋地式灑滿之餘連個碗邊都盡是芝士,
第三招: 慢火牛肋骨, 首先這材料本身就是頂級貨, 一切開見內裡油花滿佈
, 咬下去更是感覺那油份的甘香同時亦知道吸收了不少牛油了, 所以別怪他只給3片, 3片都已經夠邪惡了,
第四招: 唯一一個比較燥火的招式, 首先是借用了中式的蝦膠 ,但是否百分百蝦膠我唔肯定, 而底部則是開了邊的半隻虎蝦, 再蓋上一層芝士, 面是半溶芝士中間似乎是混合了魚肉&蛋白的蝦膠, 而底部則是甚有咬口的半隻蝦肉連殼, 外型似掉了毛的毛毛虫, 多邪惡的招式, 整個是熱烘烘的端上來, 因為還熱芝香陣陣攻上, 這招戌太狠毒了, 一定要趁熱化解了它, 跟上的長方形烤小黃瓜& 小蕃茄都來得溫和但食完絕對感覺太重型
第五招: 小品啫喱, 雖然唔太特別但亦已經可以在臨尾劃上完整的句號, Raspberry小啫喱連一片Mint leave吃下,感覺多清新啊! 重有雪芭啦,

The restaurant’s interior is small and simplistic, and hosts around 50 diners. Set lunches range from $165 to $290 for 4 courses. While the food at Le Mieux Bistro tasted very pleasant, it was definitely not authentic French cuisine, and dishes were modified to suit local tastes. The service was polite and helpful, but the staff lacked knowledge about the courses - when we asked them about some of the ingredients, the waiters had to go check with the manager.

(1) We were quite impressed with the appetiser, penne with mushroom & bacon. We liked the creamy tomato sauce, which was a touch spicy and tasted just right, the chorizo was a marvelous addition and the penne was fantastically al dente.

(2) The seared French duck foie gras was similarly accomplished. The foie gras was delicately seared and beautifully tender on the inside, and was served with a sweet, fruity sauce. The accompanying salad was fresh and vibrant, and the fruits were sweet and juicy.

(3) The set menu also comes with a soup. The cauliflower velouté (above) was creamy and nicely seasoned with herbs, and the mushroom and cauliflower chunks added a gorgeous texture to the soup. The French onion soup (below) was full of flavours, and the onions were soft and delectable. The lightness of the onion soup was fantastic.

(4) The slow-cooked u.s. short rib of beef and king prawn gratinated with seafood mousseline was yet another dish that impressed us. The king prawn, seasoned with salt and pepper, was extremely flavorful. It was topped with some light seafood foam made with shrimps, fish and scallops, which I found a bit watery, but the prawn itself was gorgeous. The short ribs were tender and delectable, the mashed potato was smooth and buttery, and the vegetables on the side were skillfully grilled.

(5) The next dish we tried was the roasted kurobuta pork loin and pan-fried turbot fillet. I really liked the turbo, as it was exqusitely tender and juicy, and was magnificently crispy skinned. As for the kurobata pork loin, normally I would find pork belly more exciting than pork loin, but this one had a superbly tender yet chewy texture, and the sauce was spectacular. Having said that, the combination of fish and pork was too much - I would happily have eaten just one of the two as my main course, and putting the two types of meats together made them distract from each other.

(6) The assiette of dessert on the set menu was a tiramisu with strawberry ice cream. While the tiramisu was thick and creamy, there was not enough coffee or kahlua taste to cut through the richness of the mascarpone, making the flavours rather imbalanced.

烤瑞士芝士:芝士本身已很濃味,再加上黑椒和紅椒粉,沒有酸靑瓜和新薯伴吃,味道太濃烈了。


總括來說,大厨Ricky的厨藝是不錯的,但雲南出產的菇菌,無論香味和口感都不足,難以表現大厨的技術。
侍應的招呼似乎有改進的必要,侍酒和上菜未能完全配合!

主菜是魚柳和豬肉,前者用香草胡椒醃製,味道有點剛烈刺激,我略嫌過鹹了點。儘管如此,本人又愛上那柚子醬汁,它似乎為這道菜式增添一絲清新感覺。魚柳外層煎得香脆可口,內裏仍是鮮嫰多汁,真佩服廚子拿捏火侯的功架。豬肉方面,雖然呈現了吸引的粉紅,但肉質卻有點過硬,近邊位置亦略為乾身。另不要忽略那拌碟的薯蓉,它製得非常幼滑,除了薯仔田園味外,亦夾雜了一份牛油的芳香。

輪到期待的甜品時間,是日供應的是紅桑子雪糕配茉莉奶凍。單是擺設造型已攞滿分,我特別欣賞後者的柔順香軟,它的甜味適中不太膩,配合面頭炒得極香的黑白芝麻,創新之餘又盡見心思。紅桑子雪糕則相對普通,酸酸的紓緩腸胃過飽的感覺。

We are here for my wife birthday and she is pregnant!!Before we came, I have told them specifically that we have a pregnant woman in the party and everything must be fully cooked and no alcohol should be used in any dishes. Before we came, I have told them specifically that we have a pregnant woman in the party and everything must be fully cooked and no alcohol should be used in any dishes. I don't think they have heard any of that. Within a 4 course menu, one of them is not fully cooked and one is cooked with alcohol. The main course is pork and it is not fully cooked and we have to ask them to re-cook TWICE to finally get it fully cooked. We know that the pork may not be as good when it is fully cooked, but we have given a very clear instruction before and during our meal to do so!!! And the dessert is cooked with alcohol, she ended up cannot eat the dessert.

Also, it took at least 10 to 15 minutes between each courses to be served. They knew that we have a small kid and a senior (not to mention my pregnanted wife) in the party and all of them have to sleep early. When we complain, they told us that they would only start to cook the next course when we have finished a course!!! If this is the case, shouldn't they tell us when we make the reservation!

Also, for the food quality we get, it is definitely overpriced. They charged $350 for the kids menu!!! The four course menu is $550. I had a much better dinner with the same price but much better quality at H One yesterday ( and a nice view too!)

I have no idea how this restaurant can get so much smiley (hint hint)!!! Everything is meaningless when there is absolutely no hearts in this restaurant and its staff!!!

慢煮美國牛肋扒 (slow-cook U.S. short rib of beef) - 呢個就真係100分, 肉質上乘, 油花分佈均勻, 肉味香濃又唔韌, 無得頂.
海鮮泡沫焗釀大蝦 (king prawn gratinated with seafood mousseline) - 大蝦新鮮爽脆, 海鮮均和醬汁, 打成泡沫, 再鋪上大蝦焗香, 美味兼有創意.

總結:灣仔區,街市樓上舖,四道菜o既西式套餐,主菜餐湯乜都冇得揀,重要份量比較適合細食o既女士們,最低消費都要成$165,真係唔係幾化算。我喺隔離街食個正中日式海膽拖羅飯餐重平過佢,似乎要我返黎幫襯Le Mieux Bistro都好有難度囉
!雖然佢地都好多客,不過XO都想建議餐廳可以請一D友善少少o既服務生,同埋可以為我地依D收入唔多o既灣仔打工仔加設一份再平起碼一半o既套餐。

Had a friend coming from Shanghai and so booked a table for dinner at Le Mieux to celebrate and offer him something better than the usual. 1) The Spa egg first course was WONDERFUL. Lightly cooked poached egg on top of a bed of fantastic chanterelles. The little bits of foie gras were okay but the real flavor was in the mushrooms.
2) The turbot was fantastic too. Light and full of flavor.
3) Consumme was a pleasant change of pace -- again, nice mushroom flavors.
4) Loved the risotto -- could have done with even more porcinis in that one
5) The chicken roulade was very good. We didn't much care for the lamb brisket (an unusual cut -- sort of resembled a lamb version of the usual Cantonese roast suckling pig.) Strong lamb falvor was not much to our liking.
6) Three mini-desserts on the plate. (By this time the wine had kicked in and I can't remember exactly what they were. :-) But I remember they were yummy.

So all in all a fantastic meal for a not-unreasonable price. (I'd order the same menu again, just to get those mushroom dishes, even if I just skipped over the lamb. There was plenty of food!)

Le Mieux now has a wine list of their own, but they still have a "no corkage charge" policy and that made it easier for us to enjoy some really fine wines. The staff was knowledgeable, attentive and friendly.

This was actually my first visit to their Wanchai location (had eaten a few times at the old Chai Wan place), and I liked it much better -- more convenient, more intimate, more like a real restaurant.

I'd recommend Le Mieux warmly -- and specifically their dinner full menu -- to people looking for fine food for a nice evening.

Deluxe lunch的頭盤則是Seared French Duck Foie Gras,以蔬果沙律伴碟。鵝肝體積不小,入口化開,整片也是軟潤不帶筋。旁點有一小撮自製紅莓醬伴著,酸酸的空口吃或是以鵝肝蘸著吃也很不錯。

其中一個Deluxe lunch的頭盤轉了Seafood Platter,四大件海鮮送上來時已是驚艷,旁邊四點芥末點綴。慢煮烹調過的三文魚帶魚油咸香,但卻又不腥不膩。其餘的帶子、海螺和天使蝦都是沒加修飾的呈現原本鮮味,全都十分出色,值得多付錢一嚐。

Set lunch的湯是Corn Veloute,一嚐便知是父親那小孩子口味會喜愛的。湯打得綿甜,質感稠且細滑。粟米粒咬下是脹鼓鼓的,相信是用新鮮而非罐頭的粟米來烹製。

跟媽嚐了嚐點粟米湯,便把它讓給孩子氣的爸和妹,主力完成French Onion Soup。每口都是密麻麻的洋蔥絲,甜得很,中間泡軟了的麵包添了點軟韌,又是一佳作。

Set lunch主菜Roasted Duck Breast and Pan-fried Sole Fillet,魚煎得金黃,鴨胸也是預期中的柔嫩,只是味道較欠特色,在Deluxe lunch主菜的比較下變得黯然失色。伴菜是幼滑薯蓉、把汁鎖得牢牢的烤蕃茄、爽脆烤日本小青瓜和小黃瓜,看得出廚師選材和烹調的一絲不苟。

甜品是榛子布朗尼和香橙雪糕,布朗尼面的朱古力醬香而不太甜,蛋糕內有果仁,好嚼且帶榛子香。雪糕酸甜醒胃,與蛋糕成一大對比。一口蛋糕一口雪糕,甜酸交替,異常合拍。

要了Cappuccino作尾,這裡的咖啡很一般,不夠甘香,可算是一整頓飯唯一的小缺憾。

一家人能聚在一起愉快用餐的機會其實得來不易。能聚頭,又不一定是愉快的,還是得珍惜珍惜。
