今次專登過嚟深水埗,就係為咗試吓呢間開業近70年嘅老字號——劉森記麵家!由米芝蓮必比登推介到街坊熱捧,佢哋嘅竹昇麵同蝦子撈麵一直係招牌,今次就叫咗蝦子牛筋腩撈竹昇麵同淨上湯水餃,睇吓係咪真係咁巴閉! 🍜 蝦子牛筋腩撈竹昇麵一上枱,成碟麵鋪滿金黃色蝦子,香氣撲鼻,未食已經流晒口水!竹昇麵係師傅每日用人手「騎竹昇」打製,口感彈牙得嚟完全冇鹼水味,咬落去「嗦嗦聲」,正宗傳統風味。牛筋腩炆得軟腍入味,牛筋晶瑩剔透,膠質滿滿,咬落去「黏嘴唇」;牛腩肉質鮮嫩,筋膜位入口即化,滷汁醇厚帶微微甜,完全唔韌。 蝦子份量多到好似唔使錢咁,撈埋少少豬油,鹹香鮮味一齊爆發,每一啖都係享受!跟麵嘅清湯有韭黃,雖然唔算極濃郁,但勝在清爽,可以中和撈麵嘅濃味。 🥟 淨上湯水餃水餃即叫即煮,皮薄到透光,每粒都大大隻,餡料飽滿!入面有鮮蝦、豬肉同木耳,蝦肉爽口彈牙,豬肉鮮甜,木耳增加口感,咬落去爆汁,絕對係真材實料。湯底用大地魚、蝦米同豬骨熬製,鮮甜得嚟唔會過鹹,飲完唔會口渴,證明冇落味精。 📍 總結劉森記嘅蝦子牛筋腩撈麵絕對係水準之作,竹昇麵彈牙、蝦子香濃、牛筋腩入味,係深水埗必試!淨上湯水餃亦係驚喜,皮薄餡靚,湯底清甜。雖然環境唔算豪華,但呢種街坊風味先至最地道,難怪咁多年都keep住人龍! **劉森記麵家** 📍 深水埗桂林街48號地下 ⏰ 11:30-21:30 💰 人均$50-70 #深水埗美食 #竹昇麵 #蝦子撈麵 #米芝蓮必比登 #香港老字號 continue reading

今次去咗深水埗嘅劉森記麵家,呢間店外觀就係典型嘅香港舊式麵店,入面空間唔算好大,但勝在充滿煙火氣,人頭湧湧,好有熱鬧嘅氛圍。先睇下餐牌,價錢幾親民,嗰啲麵食同小食嘅價位基本喺$30-$60左右,對於想醫下肚又唔想花太多錢嘅朋友嚟講,呢度真係唔錯嘅選擇。叫咗碗雲吞麵,個麵條爽彈有韌性,屬於典型嘅竹昇麵口感,咬落“咯咯”聲。雲吞個皮滑溜,入面嘅蝦肉鮮甜彈牙,湯底清澈但味道濃郁,充滿蝦籽同大地魚嘅鮮香。同日本拉麵相比,呢種港式雲吞麵嘅湯底更加清爽,唔會有種濃厚嘅油膩感。再試下招牌蝦子豬手撈麵,豬手炆得好淋,入口即化,而且滷味十足,香氣四溢。撒上嘅蝦子為味道加添多一重層次。但有個小缺點就係,食到後面會覺得有啲膩。至於個菜心,炒得幾嫩,不過豉油味可以再淡啲,會更能突出菜心本身嘅鮮甜。其實港式麵食呢類嘢,就好似香港人嘅生活調味料。每日返工放學,路過麵店入去食碗麵,簡簡單單,但又充滿住溫暖。呢種味道唔單止係味蕾上嘅享受,更係一種情感嘅寄託,無論行到幾遠,都會掛住呢種家鄉嘅味道,只要一食到,就好似返到咗香港嘅大街小巷,充滿住熟悉嘅感覺 。 continue reading
