被那傳說中的留家煙燻雞吸引而來了留家廚房。得知這裡有午市套餐供應, 在店外翻了翻餐牌確定有得吃之後便進去了, 其時服務生已殷勤地替我們開門了。

老闆劉健威先生和他太太在店內吃午飯, 不知是有老闆在監場還是員工真的敬業樂業, 禮貌是十分之咁好的。

劉先生與已故「九龍皇帝」曾灶財先生份屬好友 (話說回來, 後者也是得劉先生賞識, 才得以在晚年走紅), 故店內也掛了九龍皇帝的「御筆」。

點了留家燻雞套餐($78) 和一人套餐 ($75) 各一。70 多塊錢吃頓午餐對一般上班族來說絕對是豪食, 不過午市不設加一, 而且看看配套就知其實是幾抵吃的, 至少可以作為商務午餐的其中一個選擇。

留家燻雞套餐包老火湯、燻雞一碟、魚湯金瑤扒時蔬、白飯和甜品
一人套餐可選三餸併成併盤, 要了魚肉釀矮瓜、和味咕嚕肉和仁面醬蒸排骨。

湯呢其實兩個餐都有, 今天的是西洋菜陳腎煲豬骨, 因為太多油在表面, 因而久久都很燙口, 我便喝不完了。

留家煙燻雞真是不錯! 賣相一般, 不過一餐便飯又何用計較那麼多呢? 雞肉不算極滑, 但仍有淡淡的煙燻香味和甜甜的蜜味, 連雞皮都醇香非常, 很好下飯。這類雞我暫時認為做得最好的, 是大班樓的十八味雞, 當然在比較兩邊的價位之後, 這裡的絕對收貨有餘了。

魚湯金瑤扒時蔬用的是娃娃菜, 除了是吃得比較論盡之外 (因為是整棵的菜啦) 就沒有投訴了; 魚湯底很鮮美, 店家標榜不下味精也實在所言非虛, 到後來我索性放棄了我的老火湯, 把魚湯舀來當湯喝!

反而一人套餐裡的三道菜, 雖然放在精緻的三格圓盤裡奉客, 食味就真的比較家常: 魚肉釀矮瓜剛好有兩件, 矮瓜本身是釀得幾精美的, 可是泡在一大灘獻汁裡就顯得有點可憐相。和味咕嚕肉用了肉片來炸 (沒有骨的, 所以下文有食家有說它是鬼佬菜, 而此時又真的有外籍人士光顧), 不算很香脆, 酸甜汁味道恰好, 但本身太黏稠故沒能均勻地掛在肉片上。仁面醬蒸排骨是幾地道的廣東菜, 仁面醬帶甜, 還有兩顆仁面在內以證真材實料, 只是排骨也真是骨佔多了。

甜品是冬瓜紅棗蓮子糖水, 店家叫它做分甘同味, 老爸充分發揮這份精神, 把紅棗都給我吃了。紅棗寧神補血氣, 冬瓜連皮煲據老爸說有助消暑, 再加上滋補的蓮子, 實是清潤有益的甜品一道。

差不多價錢的兩個餐, 個人較推薦留家燻雞套餐, 當然如果有機會來吃整隻雞還有其他特色原味粵菜就更好啦!

Started with a bowl of their daily soup, it came with no fresh taste, except salty taste - this was of disappointment for the so-called fresh soup boiled with fish. Not fish taste of the white-color soup.

The tofu stuffed with minced fish, not shrimp at all. This came with another disappointment. The tofu texture was too soft.

Steam minced pork with chestnuts was okay; the taste was alright.

For the night, we liked the fried Kin's Fried Rice the most, it came with dry texture, not so oily. It was done nicely.

First time to try this restaurant introduced by TV programme. Tried 4 dishes:1. 合浦珠還- Fried Shrimp with walnut. Shrimp is fresh and big. Should be sea shrimp.- Fried like 1st class tempura. Not oily. Thin crust.- Sauce is sweet and sour. Very refreshing- Best of all dishes2. 魚唇扒柚皮- 柚皮 is tasty. No澀味.- 魚唇 is okay. 入味3. 煙燻雞- Very strong smoke smell - Chicken is tender4. 黃鱔炒飯- Level of dryness is good.- Not oily- Eel is freshOverall, the food is excellent and worth another try.

7/11/09(日)這裏午市有抵食的套餐,連星期六日都有。但單張不是放在桌面,問侍應就可以了。木瓜雪梨煲豬蹍:先來了湯。今天的湯真是麻麻地,味道很淡,同上次的老火湯差太遠了。生煎鹹魚肉餅:煎得很香口的,但鹹魚味不夠濃。既然如比 “勇” ,就很想一嘗久違了的鹹香呢。和味咕嚕肉:本來很怕這個 “鬼佬餸”的,但這裏做得真不錯,酸甜得宜。蝦仁燒茄子:很好吃的一道家常小菜,不過汁醬味道有點濃。留家五味骨:大家都認為這道菜最出色,獨特的味道,又腍身又入味,伴飯一流。雲腿扒時蔬(芥菜) :雲腿很香,芥菜爽口。秘製金錢腱:這個菜是否好吃見仁見智,自己不太喜愛。甜品也是招牌貨的腰果南瓜露,滿意又滿足。還叫了一些其他小菜,如果只是這個六人套餐,價錢是388元。經濟實惠,又吃到水準以上的小菜,服務也不錯。

19/9/09(六)午市這裏有套餐,人少少也可試。選了留家燻雞套餐(一人用/$78) 和一人套餐($75) 。老火湯、白飯和甜品兩個餐都有,先說老火湯,今天是茅根甘筍粟米配豬踭,足料夠味。燻雞套餐有留家煙燻雞一碟和魚湯金瑤扒時蔬。這裏開業之初曾慕名試過馳名的留家煙燻雞,雖然呆等多時,其他菜巳上,但那姍姍來遲的煙燻雞確是令人驚喜,皮香肉滑,難忘那齒頰留芳的煙燻香,茶香味和雞的鮮味,至今仍留有深刻印象。不知可解,這道招牌菜巳大不如前,但這道留家煙燻雞仍比很多食店強。不算少的一碟(一人用) ,肉也嫩滑,味道也算不錯。扒時蔬就很一般,不太好吃的白菜仔。一人套餐可選三餸,選了和味咕嚕肉、魚肉釀矮瓜和榨菜葱頭焗牛腱。最好吃的是魚肉釀矮瓜,其次是咕嚕肉,最失望是榨菜葱頭焗牛腱,應該是惹味的一道菜,但牛腱沒怎味道,更不明白焗的意思是什麽,因為並不入味。甜品是令人開心又驚喜的一環,腰果南瓜露,又香又滑,回味無窮。環境清靜(當日午餐時巳是下午一時半) ,不用茶錢,不用加一。

When I made the reservation to have dinner, the staff did not inform me that they would have two sessions (they did not mention that when they re-confirmed my reservation).We went there on time. As we have ordered some special dishes in advance, they served the food in a very quick manner. Two-third of the food was served within 15 minutes. We found that it was too fast. We asked the staff not to serve the last two dishes until we told them. But they kept on asking me every five minutes. It

When we finished the dinner, the staff kept on asking whether we would like to have dessert. Can we have a break? We were not having dinner in a fast-food shop.

The serice was poor and the staff were impolite. A very disappointing restaurant! I will not bother to Kin's Kitchen again.

下星期渣打馬拉松, 拿取物品的同時又再造就我們到這邊試新店! 行過天后一帶, 附近大大小小餐廳酒樓臨立, 今次我選了清風街食家餐廳試試! 二人可叫的不多, 過時過節食品也不想再觸踫, 於是簡單地叫了鴨汁炆魚唇柚皮, $148, 魚唇聽說是鯊魚尾沒有翅針的部份, 質感有軟有硬, 軟的部分似花膠, 做得不錯, 不過腍, 柚皮是花功夫的材料, 今天試到的亦很入味, 不會有渣, 唯一是不太覺有鴨汁味!留家炒飯 (黃鱔炒飯), $80, 外表不吸引, 炒到乾身, 黃鱔唔多, 不過鹹不過淡!芋頭奶露 (奉送), 芋頭香濃, 除了粒粒芋頭, 吃下亦食到一絲絲芋頭, 奶味重, 好味! 一點幾才入去只有兩張枱, 環境清靜, 侍應亦殷勤, 但男女廁所各只有一格, 人多時就不太方便! 同一句....人多可再試試其他必吃之選!

清風街留家廚房(上一樓)又唔係真正私房菜形式,但收費就絕對係,每位$388,一d特色都無,鴛鴦蝦只是將蝦分3部頭尾炸(好硬)中間部份唔鮮甜.杏汁白肺湯較為好味,煎一條大鷹倉魚沐汁上去,又是否要心思呢,生炒芥蘭一啲都唔特色,但甜品竟然又係杏仁味糖水,全無心思,尾聲北姑鮑片麵,煮一碗仔米粉(無味)在面放一隻冬姑,一片鮑片.太失望嘅私房菜

十二月十七日的晚上,是好友大壽之日,為了讓過去四年都在加國生活的壽星仔感受一下久違了的飯友會精神,特意安排這飯局,意取其店名『留家』。留家廚房,黑白簡約的門面設計,在清風街天橋下的確搶眼,內裡放了數副字畫,如曾杜財的『墨寶』便散發出點點香港另類文化特色。說回小菜,先來的是煎釀龍牙豆,正如 JJ Captain 所說,賣相味道都跟釀青椒沒大分別,將青椒換上了龍牙豆、灑些芝麻而成,作為飯局前菜算是恰如其份。蝦籽柚皮,柚皮烹調得相當滑口,蝦籽煮溶入鮑汁中,味道極其吸引,好此道者務必一試。五味骨,食前不太清楚用那五種香料烹煮,豬肉肥瘦分明,的確五味並全,有肥肉的 "香"、瘦肉的 "肉味"、加上那 "酸" "甜" 醬汁後,的確 "好味"!馳名的京酥鴨,是全晚飯局的主角,多款材料釀入鴨內,整體感覺與蓮香樓的八寶鴨相像,由於製作費時,名廚周中大歎八寶鴨已漸漸失傳,這道京酥鴨或能令新派粵菜的代表。肝膽相照,即鵝肝炒芥蘭,是創新的菜式,在傳統的製作上加添心思,咸咸的鵝肝醬味道跟爽脆芥蘭相當搭配,作用有如台式擔仔麵上的肉燥般,效果突出,印象深刻。 咕嚕肉的酸甜汁調較出色,味道恰好,配上半肥瘦的炸肉排,甚具

馳名的京酥鴨,是全晚飯局的主角,多款材料釀入鴨內,整體感覺與蓮香樓的八寶鴨相像,由於製作費時,名廚周中大歎八寶鴨已漸漸失傳,這道京酥鴨或能令新派粵菜的代表。肝膽相照,即鵝肝炒芥蘭,是創新的菜式,在傳統的製作上加添心思,咸咸的鵝肝醬味道跟爽脆芥蘭相當搭配,作用有如台式擔仔麵上的肉燥般,效果突出,印象深刻。 咕嚕肉的酸甜汁調較出色,味道恰好,配上半肥瘦的炸肉排,甚具水準。咸魚蒸肉餅,本想要煎的,卻一時不慎錯點了蒸肉餅,味道跟住家餸無兩樣,這麼簡單應該不會失手吧?!

最後的分別是肉絲炒麵及一早預訂的荷葉飯。肉絲炒麵麵條炸得脆口,洒上芡汁後味道更佳,但荷葉飯卻令人大跌眼鏡,飯沒有荷葉香,材料也不見得特別豐富,遠不及東寶小館的同類出品,這確有點反高潮。

總括而言,這席飯甚有創意,在傳統的製作上略花心思,味道縱然未至頂級,也絕對值得推介,相比起市面上一系列烹調儼如複製的連鎖店,我還是主張試試那些新派的具有誠意的餐館。據聞留家廚房除晚飯小菜外,還設有樓上私房菜,看得見老闆劉健威對飲食的執著,有機會的話定要一試呢!

作為這夜飯局發起人,遲到確有點失職,但突為私事繁忙,好一個尋找蛋撻的故事,成就是今天美好的開始,希望眾飯友能夠體諒。...仍然是兩星期前的食評,真的要加把勁了!
