日本很多地區都有出產烏冬,各有自家特色。其中以群馬縣的水澤烏冬、秋田縣的稻庭烏冬及香川縣的讚岐烏冬名氣最大。曾經在日本群馬縣及秋田縣分別食過最地道的水澤烏冬及稻庭烏冬,印象中兩種烏冬的粗幼及質感有所不同。「鰹うどん」賣讚岐烏冬,未曾到過香川縣品嚐當地烏冬名店,很難評判「鰹うどん」的讚岐烏冬是否正宗,只能憑個人對於日本烏冬的認知去作出判斷。

好多年前食烏冬只愛食熱湯烏冬,近年口味轉變了,偏愛冷烏冬。竹簾烏冬(冷) 配骨付雞($76)是非常正宗的冷烏冬食法。一小份擺放整齊、略為纏繞在一起的冷烏冬放在竹簾上,可有效隔走用冰塊過冷河後、殘留在烏冬表面的水氣,並有一小杯用鰹魚昆布熬煮的清湯配搭烏冬專用醬油炮製而成的醬汁,再配上薑蓉、蔥花、新鮮即磨山葵蓉及芝麻等配料。

將所有配料與醬汁混和之後,拿起小杯;夾起一箸烏冬,浸在醬汁內,隨即放入口中。雖然烏冬不能掛上稀醬汁,但將小杯靠向口唇邊,即浸即食仍然可以沾上不少醬汁。味道香甜帶鹹、又有薑汁甜辣、兼有山葵辛辣。鍾意食冷烏冬的原因,就是更能品嚐到烏冬的彈牙及柔韌性;「鰹うどん」的讚岐烏冬就完全可以做到靚烏冬的重點,質素拍得住日本當地老店出品。

醬油烏冬(冷) 配金菇牛肉卷($86)同樣係冷食烏冬,但就預先在碗底內放下了適量牡蠣醬油,屬於半湯汁烏冬;配料有唐辛子、蔥花、海帶、蘿蔔蓉及一角鮮檸檬。湯汁分量唔算多,唔會將烏冬浸至軟身,食落去的口感同竹簾烏冬(冷)差不多,同樣彈牙、柔韌、有嚼勁,不過就較為濕潤。牡蠣醬油味道更為濃郁,亦有點點蠔汁鮮味,沾一點蘿蔔蓉同吃,好味道。

天婦羅($51)撇除了顏色稍為偏白,其實賣相非常接近正宗日本天婦羅店;憑表面也可以感受到天婦羅脆漿薄身、香脆,亦完全沒有油膩滴油的情況。五件天婦羅分別是蝦、沙𩺬、多春魚、冬菇及番薯。一啖咬落去,果然每一件天婦羅都非常鬆脆,材料亦新鮮;唯獨炸天婦羅的油質素唔理想,有幾明顯的油膉味,相當嚴重地影響了天婦羅的整體質素。

餐廳亦有搞讚岐手打烏冬班,吸引、好想報名,但想深一層,就算學識了、也不會購買麵粉、擂棒、木砧板等材料及工具,然後在家裏定期自家製作手打烏冬;最終放棄了,反而有興趣外賣餐廳製作的新鮮手打烏冬($28/一份)。

After that people started to queue outside for awhile.The place is quite big however the tables are allocated closely.we ordered one cold udon and one hot.The taste are not bad but not as good as expected. The udon texture is better with cold one, which is slim version udon. Much chewy and tenacious than the hot one.The hot one is soso but still better than average outside.Recommending the cold one with thin

睇完menu 後,我揀左冷海苔烏冬配味噌焗鯖魚$77

雖然烏冬都變了綠色,但其實海苔味只是淡淡的,沾上冷冷的醬汁後,清甜的醬油味甚至連海苔味都覆蓋了,吃下去的冷烏冬慢慢隨著喉嚨向下滑,頓感涼快。

至於鯖魚則烤得香脆,沾上一點檸檬汁,令魚的鮮味更加突出,更好吃!
不過食鯖魚真係要小心有骨,朋友吃得一時忘形,差點比魚骨哽親

駱駝漆大廈真係好多野食,今次黎到之前係電視睇過嘅,星期六lunch time 黎到都算幾多人,好彩岩岩有一檯空位可以即刻入。餐單係成個excel表咁,任你點配搭都係,今次嗌左醬油烏冬,仲加左一隻流心蛋 。首先講,呢種用嘅烏冬質感好彈牙,汁濃淡適中,食落去真係清爽無比,加上配料嘅昆布,蔥,增添左口感。然後到骨付雞,調味調得好惹味,食到七味粉個種風味,而肉質亦彈牙多汁。不過美中不足嘅係,我個隻切到入骨附近嘅位置仲帶有少少血水,而同行友人個隻就冇,可能只係個別例子。而蛋生熟程度都幾好。

2人用膳,叫了海苔烏冬+ 焗雞腿 和 鰹魚清湯烏冬+焗青魚,滿心期待,等了十分鍾左右就上菜了,立即一口,結果很不好吃,CP值極低。焗青魚: 魚不熱皮不脆,魚外皮像蒸的一樣,軟軟的。焗雞腿:一樣不熱皮不脆,雞外皮像蒸的一樣,軟軟的。只有烏冬夠熱,味道尚可。不會再來!飲品方面,加了一罐可樂, 可樂罐上有很明顯的凹痕,店員照樣送上,不過還好發聲後肯換另一罐。奉勸各位不要浪費錢來試。

對烏冬、製麵有熱誠的人香港都仲!跟朋友到小店學整烏冬,手打腳踩再到機切,然後煮返俾你食,加自製果兩盒帶返屋企,原來整幾碗烏冬花上三小時。唔夠愛是堅持不了的。等麵糰的中途有午餐食,相信是店中皇牌海苔烏冬,味道跟一般相約,但Q彈好多!暫時係香港食過最記得的烏冬!一定會再去幫襯多幾次支持!

等麵糰的中途有午餐食,相信是店中皇牌海苔烏冬,味道跟一般相約,但Q彈好多!暫時係香港食過最記得的烏冬!一定會再去幫襯多幾次支持!

觀塘出名有好多隱世小店,今日就同同事一齊試下呢間位於工廠大廈入面既鰹烏冬🙆‍♀️唔講唔知呢間只係做午市同下午茶時段架咋🙈我地今日大概十二點半到就到,基本上係唔洗等位,一去到就搵到位坐了🤣佢烏冬方面都有好多選擇既,有分冷烏冬同熱烏冬~而揀完冷烏冬同熱烏冬之後仲細分好多款架!!我就叫左個鰹魚半湯烏冬配燒雞脾,呢個係比鰹魚清湯烏冬再濃味啲啲。-🎈鰹魚半湯烏冬配燒雞脾先講呢個烏冬,個味我覺得係幾好,唔會好濃或好淡,岩岩好!烏冬我就叫左幼烏冬,都唔錯的😊👍🏼不過唔知係咪因為我叫個個係半湯既烏冬,所以就比較少湯🤔如果加多啲啲湯好似會更好!至於個燒雞脾,都整得幾好食,配合個烏冬食係幾夾的🤣我地食完既時候,先發現出面仲有幾多人等位🙈所以如果lunch time黎食的話,就要早啲啦🙆‍♀️🙆‍♀️

佢烏冬方面都有好多選擇既,有分冷烏冬同熱烏冬~而揀完冷烏冬同熱烏冬之後仲細分好多款架!!我就叫左個鰹魚半湯烏冬配燒雞脾,呢個係比鰹魚清湯烏冬再濃味啲啲。

先講呢個烏冬,個味我覺得係幾好,唔會好濃或好淡,岩岩好!烏冬我就叫左幼烏冬,都唔錯的😊👍🏼不過唔知係咪因為我叫個個係半湯既烏冬,所以就比較少湯🤔如果加多啲啲湯好似會更好!至於個燒雞脾,都整得幾好食,配合個烏冬食係幾夾的🤣
