剛好來到深水埗,想不到在這個市井之地竟然會有沾麵店,當然要來一探其質素!首先來到門口要到旁邊的貼餐機點餐,這裡的選擇不多,只有白伝、黑伝、赤伝和一些限定拉麵,也沒有特意解釋,所以新手要特別留意!這裡的店面很小,但未至於會令人感到不適,加上人不多,有種小小的溫馨的感覺。這裡的沾麵教學感覺上比其他地方的更仔細和專業,值得一讚!服務態度也很好,温和地滿足客人的要求。然後終於說到食物,這裡的湯底很特別,不是一種以熬製時間來爭出頭的固有做法,而是以味道的複雜和多樣劍走偏鋒,同樣令人感歎!但這種做法必然造成的後果便是湯底過喊,略略搶去了麵條的存在感。但這裡的麵條也不會輕易屈服,雖然偏幼但掛湯能力一流,相當恰好地制住放肆的湯汁,只要慢慢地品嘗,便會發現兩者誰也制不了誰。但待局面慢慢明朗時本日MVP就會突然殺出,溏心蛋會以其滋味本輪結束。 continue reading

香港嘅沾麵我食過幾間,今日第一次試開左8年嘅隱家拉麵工場,位於西九龍中心7樓,建議搭升降機會快啲,我叫左白伝,係豬骨湯沾麵,有啲魚粉加左,$79,其餘兩款係黑蒜同蕃茄。佢門口有部機,揀好麵款再入紙幣麵湯碗係熱,但可惜,裝麵嘅碗係凍...我想講佢個麵湯個味,唔係好食得出有咩豬骨味,淨係食到微酸同魚粉味,味偏重同有啲複雜,唔知係咪我個人問題麵話自己打的,軟硬度適中,麥味都夠條條都掛到麵湯叉燒肥瘦適中,有肉味呢堆調味料。我落左啲醋,開胃少少,但其實本身個湯都帶微酸杯檸檬水幾好飲,好順喉 continue reading

唔知點解你地餐廳會請咗個「趕客倒米嘅黑面神」,食到成肚氣,心入面超級想爆粗。不嬲都係你地嘅常客,成日特登揸車去過海幫襯,OpenRice一直俾好評。之前一直等新裝修完去食。琴日5月17號大約5點去食,因為換咗用出面售賣機落單,所以唔記得咗,冇機會叫走蔥,咁麵送到過嚟自己好努力”了”走哂d蔥,但因為d芝麻係d蔥上面,所以”了”走哂d蔥就等於冇哂芝麻。好聲好氣同呢個餐廳唯一女職員講可唔可以俾返少少芝麻我(我不是要求extra,但因為真係走蔥冇哂芝麻,而我對食呢碗麵好認真同有一定要求),點知佢好狠bad tone決絕咁答「冇」🤬🤬🤬帶住口罩都可以feel到佢個黑面神。廚房入面個廚師聽到我個原因,其實都好明白,所以話「好呀」,用細碟裝咗少少芝麻諗住俾我,我仲係個位同個廚師講唔該哂,點知個女職員行返返黎同個廚師話「冇呀」,之後叫個廚師倒咗佢。哇~~~ 呢下動作令到我哋真係好shock‼️‼️‼️🤬🤬🤬 做乜事呀依家,呢個職員令願倒咗個芝麻都唔俾個客,個個狠嘅情度好似我黎丐食。我完全冇同佢理論,廢事影響心情,但之後已經完全唔想再食碗麵,更加唔會再黎。我唔知點解你地餐廳會請咗個「趕客倒米嘅黑面神」,已經唔可以用「服務差」咁簡單去形容,佢簡直係特登去得罪個客,點執枱乾淨都冇用,由佢負責個餐廳簡直死硬,作為食家去過全世界咁多高級餐廳嘅我,未遇過一個職員可以咁把炮咁狠咁堅持掉咗d芝麻去侮辱個客,你話我知除非佢係老闆。 continue reading
