作為觀塘長大的孩子,一定對這間粉麵店十分熟悉,可以說是中學時的回憶。那時一到食飯時間總是幾個同學仔一起排隊,吃完一碗粉麵便滿足地回去上堂。每次經過合興總會被香濃的牛味吸引,於是忍不住進店了。選擇不少,但我通常都選擇牛類。今天我點了牛腸米粉,而男友選擇了魚皮餃河。牛腸很入味,沒有騷味,口感不錯。而魚皮餃粒粒飽滿,十分足料。可惜炸蒜放少了。湯底仍然很香濃,平時不飲湯的我,每次吃合興都會飲掉最少半碗的湯,滿足。總結味道一如既往地好,更重要的是那份回憶。

以前老字號舖頭我都有幫襯過,自從區內重建拆咗之後輾轉搬到觀塘街市對面,如果唔係咁啱經過,都唔知道這間老字號牛雜牛腩麵家再重生了,興之所至入去食返碗牛雜粉回味一下,眼見舖內的人好像是他們家族的後代吧,反而是老頭子不見了。還記得當年最鍾意在河粉中加入辣油再配支汽水,今次繼續牛雜河粉加支凍忌廉,辣油仍然好辣,牛雜依然入味,肉質有咬口,湯底濃郁,保持了當年的水準,尤其是他們keep住用支裝汔水,味道令回憶回來。

起官塘未重建之前,依間鋪係開起裕民坊嘅巴士站附近,一到中午就會有唔少人幫襯,果陣一碗麵只係賣$22左右。但係因為重建嘅關係,佢被逼要搬走。一開始仲以為佢地唔會再開/唔會開起官塘,原來佢搬咗去官塘街市,圖書館對面嘅鋪位。一入到去就只到大部分客人都係中年人士嚟,比係以前冇咁多客。我同朋友叫咗牛腩河同雲吞河。雲吞河($34)雲吞主要係豬肉餡,有一兩隻細細隻嘅蝦,味道偏咸。湯底唔係清湯而係加咗腩汁,想食清湯底嘅人可以同店員講聲,佢就會幫你轉。牛腩河($34)牛腩未去到好淋,不過同其他鋪頭比已經算淋,可能因為我地11點左右就嚟,午市嚟d牛腩應該會再炆得淋d。牛腩嘅份量算多,菜亦都新鮮。食得辣嘅人記得落佢自家製嘅辣油,食落會香好多。不過記得唔好落太多,因為真係好辣嫁。

叫咗牛根雲吞河同埋墨丸雲吞河加紫菜 , 見到賣相已經涼咗一截兩碗河粉個湯底好漿口,混濁之餘唔覺係大地魚之類湯底,食完都覺得幾口乾墨丸食落粉下,而且煮到一粒淋一粒死實實牛根嗰碗冇腩汁味道,而牛根煮得淋但唔入味 , 只有雲吞係傳統細細粒有蝦子味較可取。

路過觀塘,老母話附近有間麵鋪幾好,不如去試試。啊,係咩,我唔多黎哩頭,你決定啦~咁佢就帶我黎哩度了一間我之前冇聽過嘅老字號,不過既然自稱有40年歷史,我都放心啲老母話要碗【牛雜河】,我都唔知食乜好,聽落唔錯,就前後兩碗啦~上檯喇~賣相唔錯,一件件擺得好整齊,試試啲湯先~ 湯幾濃,但腩汁俾我感覺有啲寡唔夠香,味道ok,但冇乜驚喜,起碼我屋企嘅老母牌牛腩味道好過佢,不過算啦,開檔做生意,同屋企煮嘅牛腩又點一樣吖,屋企煮落嘅配料都多啲啦~ 牛雜都幾入味,件件都煮得好淋,但因為腩汁寡係死症,冇得夠,早知要多蔥,多多份清脆感 不過已經唔錯了~ (唔記得幾時開始牛雜入面會放【肺】的,冇記錯我細個食嗰陣牛雜係冇哩樣料的,宜家周街都有了)河粉係幾令人滿意嘅一環,窄身嘅河粉煮得軟得黎又保持到口感,唔錯,果然係老字號,有水準~整體黎講真係唔差,對做街坊生意嘅鋪要求唔好太高,灣仔【華南】牛腩味道俾佢好得多,但亦貴得多。一分錢一分貨,將貨就價,可以收貨了

紮根觀塘四十年的合興粉麵家一直都是觀塘人心中的"名店"算是觀塘最著名的一間粉麵店之前的位置是在觀塘重建項目之中是在觀塘人心中的集體回憶在Youtube更有一段舊店最後一天的短片http://youtu.be/3se9vL1iauQ重開後的合興我卻未有一次到店今次到來,雖然裝修失去了老香港的味道但湯底的氣味卻始終如一餐點上的擺位,跟之前亦無大分別在店內,當然要點招牌的牛腩,牛什等麵食我就點了一碗牛什麵一如以往,出菜的時間十分快只需數分鐘一碗熱騰騰的麵就已經出現眼前可能這幾年吃慣了日式的拉麵我都先試了口湯底除了大地魚外,還有香濃的腩汁一種傳統的香港味道這一種包含了觀塘多年的人情味即使用料最昂貴的餐廳亦絕不能代替我加了一點的醋這是多年的習慣聽說醋的酸能中和麵的鹼水但我就覺得醋能讓整碗麵的味道更加的昇華我覺得有時侯食物不一定是味道十分優秀才讓人愛上反而是除了味覺外的"味道"更能令人回味

我加了一點的醋
這是多年的習慣
聽說醋的酸能中和麵的鹼水
但我就覺得醋能讓整碗麵的味道更加的昇華

我覺得有時侯食物
不一定是味道十分優秀
才讓人愛上
反而是除了味覺外的"味道"
更能令人回味
Other Info. : 整體評分:4.5/5 雖然環境及服務未必能跟上一些連鎖的餐廳相比,但是食物的味道卻能包含了更多的意義
