一直知道好到底的蝦子面、水饺都很有名,特地慕名而至。初嘗他们的水饺,確实有点失望,从外观而言並没有什么特別,餡料都算丰富,有蝦、豬肉、木耳等,但咬下去只感到浓浓的胡椒粉味,不能說好好味。而他们的蝦子面,面条是全蛋面,感觉林了些,並不太爽口,口感很一般,而蝦子的確几香,配以湯底,都算惹味。但整体有名过其实之感。其实价钱亦有些偏貴。

有多少餐廳能有七十三年歷史?三代人一直撐著這個招牌,好不容易。來個蝦子撈麵及淨水餃。蝦子份量沒有想像中的多(其實也不少,只是對比別人拍的照片顯的少),很香的蝦子味。麵質爽口,它相對其他麵檔,好到底的麵沒有那麼黃,沒鹼水味。撈麵的湯頭很鮮甜,沒味精。水餃是扁的包法,爽口,鮮甜沒有異味。如果包成圓型,相信口感會更震撼。

新界區人氣度最高的老麵家,也是唯一做早餐的雲吞麵店。雖然早年改為工廠製麵代替竹昇打壓,但本地製作,麵除了雞蛋亦加入鴨蛋,吃起來柔韌而麵味凸出,質素較內地麵廠有保證。店家麵條質素相對坊間雲吞麵店穩定,不沾鹼水的苦味,簡單一碗細蓉,既嘗到鹹鮮而味道鮮明的大地魚湯底,雲吞size較傳統大一點,始終街坊店子也難做保留到往日一口一隻的傳統,但每日以鮮蝦和豬肉混入大地魚粉製作,也是價錢相宜的料理。至於筆者所喜歡的,還是要數蝦子撈麵,蝦子不但鹹鮮而份量慷慨,餐後還可買瓶蝦子、麵餅回家D.I.Y。蝦子撈麵,蝦子烘焙後鹹鮮惹味,吃前要先拌勻,不然吃錯位置會鹹到暈。雲吞味道也討好,重要是蝦與豬肉比例皆好店還供應蝦子麵餅、粗麵餅和幼麵餅近十款作散買外賣。逾半世紀的雲吞麵家。

Ho To Tai makes all their noodles by hand. No, it's not using the bamboo method but all ingredients are fresh ingredients. There is no coloring added and whole fresh eggs are used. The Yuen Long branch is the only one that serves hot food.  There are other branches around Hong Kong but they only sell the uncooked noodles. You can purchase these here as well.

We arrived at 8 PM and it was pretty packed but there was enough space of boyfriend and I. The shop is pretty cramped and there is upstairs seating. It's very old and typical of many noodle shops in Hong Kong. But for one that received a Bib Gourmand, it didn't bother to renovate like so many others. Service was actually quite good as originally we were placed in a small cramped spot. But one of the staff noticed we were squashed in and took us to a more spacious spot when it was available.

The menu on the table is in Chinese. They do have an English menu. Just ask for it. There is no 10% service charge and you pay on you way out. But what they are known for is the noodles.

Boyfriend ordered the shrimp roe tossed noodles ($56). It came with a bowl of soup. The noodles were springy and firm. The shrimp roe was not too salty and there was a good amount tossed in. The soup was savory with  nice light fish taste.

I had had the fish skin dumpling noodles ($37). You get three dumplings that are made of fish skin and stuffed with jews ear, pork and shrimp meat.  These were probably one of the best fish skin dumplings I've had in Hong Kong. The skin was not doughy or too thick. Thin enough with a nice firm bite. The crunch of the jews ear gave it extra texture. The filling was savory but not salty.

The noodles were great. Al dente. The color was a light brown but not completely white like other places. A sign that fresh eggs were used. The only thing that wasn't good was the soup. It was a bit cloudy and was just salty and not much else. Boyfriend's soup tasted better. Made me wonder if it was near closing that there wasn't enough soup so they had to dilute it?

It's pretty far from where I live but this is definitely worth the find.  Cheap yet delicious. Service was fairly good as well. I'd be back or at least buy a package of noodles home.

好到底果然係好食。朋友推介了好多次我終於有機會食到。誰知一試上癮!水餃好皮薄多汁,湯底好好飲!牛腩撈個麵底好正,牛腩又好嫩。價錢方面係比較貴,五六十蚊碗麵。不好食所以下次會再黎。至於他們好像可以買麵回家煮的,好方便。

好到底果然係好食。

牛腩撈個麵底好正,牛腩又好嫩。

講起蝦子麵,其實我都唔係食過好多間,有一間比較出名係灣仔,已經結業。黎到元朗,今次朋友帶我黎到好到底麵家。雖然店面唔大,人都較多,但係都唔算太逼。見到有蝦子麵,二話不說就簡左佢喇。蝦子份量好足,啖啖既麵都有蝦子,超鐘意,朋友果然無推介錯。加上麵質爽口彈牙,條條分明,唔會一patpat,所以食得好開心。朋友簡左炸醬麵,幾香口。炸醬麵當然會配碗湯喇,都係唔錯的。雖然份量唔算多,但係價錢都好親民,唔夠既話再叫多碗都唔怕呢。元朗好食既野好多,呢間都真係好唔錯,難怪可以keep到咁多年都仲係咁旺喇。總結黎講,位置方便、食物質素唔錯,係一間值得一試既餐廳。
