香港燒鵝是千店千味,各有調味配方,各人各有喜愛。我認為關鍵是燒烤後能夠及時上檯。

此店店名有千錘百鍊,樂在其之意,有超越中環一樂燒鵝店的烹煮誠意。
用意隱藏,宜高度標榜燒鵝為招牌食物。餐牌很多元,有四川口水鷄和廣東手撕鷄等。原是招客好橋,郤未突出樂脆燒鵝主題。

燒鵝專門店宜有自製甜酸醬。傳統燒味店手製梅子醬,目的在解油膩開胃納。現代的甜酸醬宜有千味,帶來多元口感。
此店的心思去了醃手拍青瓜和黑木耳。
此套餐包一小碟千味青瓜,夾帶燒鵝伴吃,頓感味道無窮。
各店燒鵝調味均不會重手,澳門黑椒燒鵝亦不例外。近年的燒鵝不會肥胖,長肉不增肥膏,要入口爆滋,汁濺味蕾,賴醬汁護航。

千味醬偏辛辣,宜減椒加酸梅,成為伴鵝食青瓜均宜的良醬,一如北京人食烤鴨,不建議直接啃着吃, 因為鴨皮脂肥,會油花四濺。他們一口皮肉,一口蔬,一口醬。

對面店的燒鵝,是煙燻的,鵝肉嫣紅,屬新派風格,似吃西餐。對比之下,此店的色澤紅艷,肉質細嫩,味道醇厚,肥而不膩。灣仔街市近三角街亦有新開燒鵝店,花巧為飾,更顯此店較平實。

作為一個廣東人,久唔久總要食一次燒味。圍繞着我工作嘅地方有不下六至七間燒味店,當中最出名有千樂、強記、甘牌及棋哥,都係標榜自己燒鵝出名。不過我今日要講嘅唔係燒鵝,而係燒味店入邊比較豪華嘅選擇——乳豬飯。呢度嘅乳豬飯叫做無雙乳豬飯,一隻乳豬喺度買大約要$800 ,而午餐乳豬飯加嘢飲盛惠61蚊。呢度嘅乳豬皮脆肉滑又足料,而且唔會太鹹,亦都唔會有太多骨。師傅總會切走皮同肉之間嘅脂肪,所以食起上嚟都唔會覺得太肥。另外值得一提嘅係佢嘅奶茶都做得非常出色,奶香茶香都夠。而且呢間亦係一間良心小店,每逢星期六都會派飯盒俾長者。大家有行開過嚟就支持一下啦。

另一個推薦係自家製燉湯,需要提早幾日預約先有。今次試左花膠燉乳鴿,材料非常澎湃,有好多件厚厚既花膠、乳鴿、雞腳、少少中藥材,例如杞子、蜜棗。



一盅夠3-4個人飲,而湯料份量係一大碟,我以當係一個全份小菜。 呢個係”以本傷人”既完美例子,一大堆材料燉過幾個鍾,湯頭夠哂甘甜,不過花膠依然夠厚唔會溶。雖然加左少少中藥,但唔會有好濃烈既中藥味,岩哂D鍾意藥膳又怕藥味既朋友仔。聽店家講,佢地已經去左湯入面多餘既油,呢點真係加哂分。

食左咁多肉,點都加番兩條菜,芥蘭、青瓜正正常常,冇咩特別。最特別既青瓜係個醬,最後點左兩份青瓜。聽店家講係自家製XO,太好味,好易上癮。如果有白飯,個醬可以撈兩碗白飯食都得。


整體黎講,餐廳位置唔近地鐵站,但係食物質素係超哂同行,值得行5、6分鍾去食。當然一分錢一分貨,價錢都會貴少少,例如花膠燉湯。除左星級中菜食府外,冇一間燒味店會有咁有誠意既出品。

由於住灣仔區,灣仔區喱一條街都有好幾間燒味店,有啲耳熟能詳,有啲似係新開。究竟揀邊間好?我就無咩心得,我純屬都係隨心揀嘅,求其行入呢間燒味店。唔知食咩好,就揀咗佢地樂脆燒鵝套餐。食燒味我就覺得食燒鵝就最過癮啦,第一係因為鐘意個醬,第二香口,第三相對其他燒味嚟講較為淡味,無咁高鈉。食燒鵝我都無咩講究,首先皮脆,喱到有做到,其次肉嫩,都算唔錯,有juciy嘅感覺。其次溫度都係重點,食落唔係滾燙,不過都有微溫,算係唔錯。套餐搭配小食和湯,味道幾好。

唔知食咩好,就揀咗佢地樂脆燒鵝套餐。食燒味我就覺得食燒鵝就最過癮啦,第一係因為鐘意個醬,第二香口,第三相對其他燒味嚟講較為淡味,無咁高鈉。

食燒鵝我都無咩講究,首先皮脆,喱到有做到,其次肉嫩,都算唔錯,有juciy嘅感覺。

其次溫度都係重點,食落唔係滾燙,不過都有微溫,算係唔錯。

套餐搭配小食和湯,味道幾好。

I went to Causeway Bay to run some personal errand a few days ago. I walked pass this restaurant and the menu outside attracted me. I initially was thinking of bringing some food back home for lunch but I changed my mind after seeing the menu.I saw the Happy set and I knew I wanted that. I went to Causeway Bay to run some personal errand a few days ago. I walked pass this restaurant and the menu outside attracted me. I initially was thinking of bringing some food back home for lunch but I changed my mind after seeing the menu.

I saw the Happy set and I knew I wanted that. The set included BBQ Pork with Roasted Goose, a bowl of rice, an appetizer, a soup and a drink. Quite a feast for a quick meal.

The chilled cucumber with special sauce was quite good, I liked the sauce quite a lot, a little spicy and it definitely lifted my appetite.

The BBQ Pork got good texture and quite tender. Full of flavor with a slight sweet taste. The Roasted Goose was tasty as well, especially the skin, very crispy and with a hint of smoky flavor. The portion was quite large and I was full and happy afterward.

61蚊個燒鵝雙併飯,竟然可以俾咁少餸,你話嬲唔嬲?而且,右邊嘅生菜、木耳、青瓜係同事夾俾我!一打開飯盒真係嬲到爆!但好奇怪,同事其他飯盒又多少少餸,不過只算正常至偏少份量餐廳俾餸咁唔平均,真係好有問題而且燒鵝好瘦好健康🙂總結:冇下次!(想俾劣評但要寫200字)

但好奇怪,同事其他飯盒又多少少餸,不過只算正常至偏少份量

跳完舞約了屋企人到灣仔食下午茶。知道千樂開業了一排但從未試過,就決定於此食個靚靚下午茶。下午茶餐牌有不少選擇,但最後我沒有點有燒味的餐,反而叫了一個奶醬厚多加熱檸茶。一上餐時我有點呆,因為店員呈上的是西多士而非奶醬厚多。見西多士份量幾足,而且頗新鮮,於是就沒有要求換餐(單據打的是西多士)。很久很久沒有食過西多士啦~ 這間的西多士牛油滿滿,糖漿適量,麵包又炸得金黃香口。麵包的熱力慢慢把牛油融化,切一口西多士加融化的牛油及糖漿往口裏送,真係幾好食,重要是沒有滿口油。只要是鮮製,食物都好難不好食既。要一提的是,我們入餐廳時未夠下午茶時間的,不過店員好好人,可以提早叫下午茶。

做之前就去左醫肚先...其實餐廳都唔算太難搵,搵到大公報個座大廈就ok

餐廳都係一般茶餐廳格局,但整體都算整潔同坐得舒服
餐牌有好多款唔同既套餐同配搭可以揀,價錢真係唔算貴
乳豬雙拼飯都係$7x,比起其他餐廳或連鎖集團要食乳豬雙拼飯起碼都收費過百...
難得撞到有乳豬飯...當然要叫返碟啦!!
事關我真係好鐘意食乳豬,平時除左出席飲宴之外都唔會有咩機會食到
於是我就叫左個乳豬油雞雙拼飯,我仲要揀左雞脾

油雞脾好大隻,師父斬開左五大件,每一件都非常有份量
雞皮爽脆不油膩,帶微甜,皮唔會過厚,亦都不帶多餘脂肪
雞肉新鮮鬆軟,每一啖都滋味過什麼生炸雞
配上薑蔥油同食,實在一流!

乳豬既份量都唔少,師父真係好大方
每一件乳豬外表都保持甘香鬆脆,最難得係仲有暖暖地既溫度
而乳豬肉亦都好鮮嫩,好淋~點甜甜地既乳豬醬係最夾!

整體黎講食物質素幾滿意,下一次出開銅鑼灣都會再試下其他燒味!

2個人出開銅鑼灣買野,路過見到燒臘舖門面光鮮,入面又幾整潔,就入咗去食飯醫肚啦。點咗嘅雙拼嘅叉燒拼燒鵝,份量都好大碟,夠2個人share嚟食。加了一碟油菜同埋2碗白飯,啱啱好。叉燒口感軟腍,唔會韌又唔會乾,有蜜汁香味,帶出少少焦香味道,有半肥瘦味道,不過就無咁多脂肪,食多幾舊都冇乜罪惡感。燒鵝燒得好香,唔知有無用荔枝柴啦,我就唔係好識分,但係味道就好甘香,見到皮上面嘅燒烤紋就知道個皮係燒得好香脆,一咬即刻滿口油香,鵝肉尚算嫩,咬落唔會好韌。呢度燒味質素真係唔錯,有機會再去銅鑼灣就斬料返屋企加餸。
