之前在這裏吃午餐, 感覺相當不錯, 今次吃晚餐有威靈頓牛柳, 相當夠運. 主廚在Alain Ducasse工作的經驗, 令其菜式在外表和味道上感受到嚴謹和細緻, 雖然不是Fine Dining, 而是走Bistro風格的菜式, 但誠意比同類的餐廳的高得多. 之前提過的威靈頓牛柳就是最明顯的例子, 做法沒有什麼石破天驚的創新, 就是最重要的酥皮和牛柳, 以及中間的火腿和野菌醬, 全部都做得很有水準. 酥皮酥香香脆, 層次感豐富, 醬料不會影響其乾爽. 牛柳肉汁豐富, 熟度剛好, 肉質嫩滑而沒有牛柳容易出現的韌性, 將傳統的Size縮小, 除了吃起來不會吃力外, 火候控制相對更易掌握, 是一個不失傳統的Wise Move.Fish & Chips是我無論在Lunch和Dinner也必點的一道, 外表和吃起來口感相當乾爽, 外皮香脆而厚薄適中, 均勻地舖在鱈魚柳的表面, 用上啤酒的炸漿就是更酥脆. 魚肉口感夾實, 夾起來不會散開, 鮮香簡單直接. 薯條同樣外脆內鬆化, 添加了鯷魚的沙律醬更有鹹鮮味, 不是什麼高深莫測, 就是在細節上令這道菜更好吃.鵝肝配黑松露菌醬的Risotto最令我欣賞的是其Risotto, 外表看起來有點軟糯, 吃起來飯芯依然保持乾爽. 醬汁味道調配得乾好, 在松露醬的濃香中, 添加了Balsamic Vinegar令其味道更清爽, 也帶起了鵝肝的油香, 只是如果鵝肝再大塊一點就更完美.The chef of Gotthatd Base has been worked with Alain Ducasse when he opened SPOON at Intercontinental Hong Kong. Although this restaurant is not focused on fine dining, we still can enjoy the chef’s inclination of perfection. The beef Wellington is not luxurious but every element is well prepared: crispy puff with juicy and soft beef tenderloin. Nothing more and nothing less. 北角搵食,朋友想食好啲,就試吓呢間!即日打電話訂枱,有枱仲可以訂埋招牌菜威靈頓牛柳,一於試埋佢😉先叫一個香草忌廉燴海鮮,配Prosecco ,原來可以叫半份,secret menu呀!唔洗硬食太多,海鮮夠新鮮,味道唔錯呀👍🏻跟住到主菜威靈頓牛柳,叫咗medium,肉質鮮嫩有汁,酥皮夠鬆化,非常滿意😌配咗杯法國紅酒,係我最喜歡嘅泥土味,估唔到house wine有咁高水平,真係意外驚喜呀!👍🏻👍🏻👍🏻最後以甜品combo作結,三個甜品都有水準,唔錯唔錯😊 continue reading

威靈頓牛🐮柳是較考功夫的菜式,首先要選用上好食材,鮮嫩的牛柳用黑椒鹽稍作醃制,新鮮的蘑菇切碎煮醬,包上搓好的酥皮,焗至七成熟,皮酥肉香,再配以燒汁,粒粒新鮮的蔬菜伴碟,完美造型上台,色香味全面承現。今日有幸在這裡品嘗了這道菜,大廚的手藝滿足了嘴叼的我們,再加一個素肉丸番茄意粉,清新又美味,豐富的蔬菜組合令意粉鮮香而有嚼勁,美味而營養均衡,最後的朱古力慕斯蛋糕🎂是保持水准,柔軟而又濃香豐裕,大大滿足了我們的口腹。 continue reading
