好旺角又細食到大。。細個個時媽咪帶我去食,或者去完教會會買外賣俾我地食。雖然好多人叫麵類、撈麵,但我最最最鐘意食係佢既粥!細個媽咪會叫及第粥俾我地幾兄妹食,仲好記得以前佢地未搬鋪仲係旺中對面個時,無新店裝修,伙計全部都上曬年紀,會光顧一次又一次既就真係佢地食物既質素。佢既及第粥煮得好綿,用個細鐵煲加大火去煮,加埋啲料去煮,我見佢每次都係一兩碗咁煮,我真係覺得好好食。而家每次去都會叫一個腰潤粥,加一碟油菜,佢未必係最物超所值既一間,但係我心目中係最好食同最有感情既一間。 continue reading

傳統做法既雲吞麵已經愈來愈少,畢竟手打麪師傅好多都退休,又冇咩後生仔想學呢種手藝。好旺角難得地保留左呢種傳統做法既雲吞麵,老師傅每日親身上陣打麵。廚房位於鋪面,可以見到中氣十足既師傅大顯身手,坐係竹竿上跳動,打出靚麪。手打麪質地爽口,唔會食落有好大陣硯水味,湯底靚,雲吞好足料。$35一碗,絕對係值得。有時食野唔係淨睇味道,仲係對過去既一種懷緬。多得好旺角對正宗雲吞麵既堅持,我們還可以享受這一份好滋味。 continue reading

肥仔奇食盡全香港知名雲吞麵店,門口有明星相嘅、飲食雜誌大肆吹捧嘅都食過哂,一唔係份量太少,就係名不副實,雲吞麵嚟講,肥仔奇來來去去都係鍾情呢一間。坐低無耐,隔籬檯嚟咗幾位洋人,佢哋四處打量又互相商量咗成十分鐘之後,四個人每人叫咗一碗鮮蝦雲吞麵。竹昇麵依舊爽口彈牙,雲吞入面嘅蝦有蝦味,仲食得出有肥豬肉,呷一口由大地魚等等熬製而成再搭幾粒韭黃嘅湯底,實在係人生一大享受。無怪乎洋人都識得嚟搵食。嗱嚟呢度食豬手,絕對記住要食撈麵而唔係湯麵,點解?除咗話撈麵嘅麵底多啲飽肚啲之外,更重要嘅係豬手嘅南乳汁撈埋啲麵嚟食至係一絕,若果叫湯麵的話,湯底將豬手嘅南乳汁溝淡咗,豬手固然之就會冇咁好味,仲會搞到個湯底濁哂。豬手一貫地乾淨冇毛、油香軟熟兼入味,冇得輸。肥仔奇唔食豬潤,但係會食豬潤熬出嚟嘅粥底。粥底綿,皮蛋軟,成個粥底都有鮮甜味,正斗! continue reading

因有親戚在外地回港,指定要去昔日老粥店,唯有奉陪。早有心理準備,是去懷舊和印證香港史,看重於吃,用心多於用口。當日以上年紀舊客和自由行拖喼客為主。食店裝修令人舒服,門口左右兩邊是厨房,用玻璃透視煮麪煲粥和製麪過程。我最感興趣是向街的麪和粥兩個大紅字,有圓圈圍繞,是當年粥粉麪飯店的標誌。點選了腰潤粥和及第粥。豬腰爽口但無豬肉味,豬潤亦欠鮮味,沒有了及第粥原來是用剛屠宰豬的內臟,接濟考生的原意。粥有味精,是敗筆之舉。茘灣艇仔粥傳承廣州艇家用魷魚絲,豬肉絲,蠔豉,魚片,豬皮,菜絲規格,可以一試。吸睛是京都炸醬麪,是北方食物,京都可能是指北京。少辣偏甜,只宜懷舊人士回味。 continue reading
