啱啱同家人去左一趟味蕾之旅,我哋揀左幾樣招牌菜,真係好食到喊出嚟呀🤤!首先上嚟嘅鮮蟹肉竹笙翅,鮮蟹肉大塊,配上富有口感嘅竹笙,食落真係過癮,但係金華火腿味道啱晒我口味,有少少鹹但夠哂character。跟住嘅廿八頭吉品鮑加上鹅掌,哇,呢個絕對係全場明星!隻鮑食落去淋嫩得嚟有勁,戳一戳就爆汁,而鹅掌軟滑得嚟又帶少少嚼勁,添返少少醋更加醒胃呀。蒸龍蝦絕對值得一提,肉質新鮮彈牙,咬一口就知道呢隻龍蝦幾時從海裡捉上嚟,咁新鮮嘅料理真係少見。脆皮雞個名真係名副其實,外皮香脆吸引,食落嘅每一啖都有足夠嘅驚喜。最後,阿一抄飯嗰陣,一打開鍋,香味四溢,「鍋巴」香脆得嚟唔會焦,真係好抵讚!雖然普通嘅鮑汁生菜同蛋白杏仁茶都只係算得上中規中矩,但總體嚟講,哩度食嘅每一樣嘢都好夠水準。下次再有機會,我一定會再嚟試下其他美食😋🍴!

發財大好市: 由於是次的晚餐也是蛇年初次的開年飯, 能有一個好意頭的菜色也分外的有意思。賣相也吸引, 堆成一個很有氣勢的小塔, 材料有髮菜, 蠔豉, 還有豆苗。翠綠的豆苗配髮菜, 也很好吃。雖然吃髮菜不合乎環保主義, 畢竟過程也是有機會導致沙漠化的, 但吸收了湯汁精華的髮菜和豆苗也真是很討喜的, 而且那種口感也很精彩。

窩貼香蕉龍躉球: 不得不讚嘆菜色的創意, 龍躉和香蕉的配合也真讓人意想不到。賣相和做法也似是蝦多士,墊底的也是炸多士, 只是蝦膠換上龍躉和香蕉。炸功亦算很不錯, 油氣不重, 而且也夠酥脆。龍躉的肉質很滑身, 想不到龍躉和香蕉的配合也可如此和諧,香蕉的微酸能補龍躉味道上的不足, 雖然龍躉的水準和味道比不上名人坊的出品, 但論創意還是值得一讚的。

雙冬扣水魚煲: 其實我是從沒有吃過水魚的, 但總是道聽途說水魚賣相有點嚇人, 後來發現的確如此, 但切開一件件後其實還好, 就一試吧! 不太會分辨, 但聽食友說是鍋中的水魚多是帶裙邊的好貨色呢! 無可否認的是水魚的骨膠原真的很豐富, 入口全是黏黏的膠質, 味香, 感覺就是比較滋補。

碧肉翠珊: 名字是十分典雅, 碧肉指的是蟹肉; 翠珊指的是青菜吧, 用的是菜莖嫩滑的部分, 入口的確是滑得令人驚嘆, 不知道是剝掉多少外圍我部分才會有此效果呢? 相比平常的幾乎不用怎麼多加嘴嚼, 伴上加了蟹肉的茨, 也富蟹肉香, 兩者相得益彰, 是一個清淡怡人但又不簡單的菜式。

富臨脆皮雞: 吃中菜少不了在最後要來一隻雞吧,而這晚吃的是脆皮雞, 其脆皮程度是相當貼題, 雞皮是薄脆的, 一咬下去便發出輕微咔嚓的一聲, 帶點煙韌而且皮下油脂不多, 感覺沒那麼膩口, 也比較健康, 但稍嫌就是雞肉欠了一點肉香, 沒有想像中的出色, 比較可惜。

整體而言, 富臨飯店阿一鮑魚的水準是出色的, 但可能是懷了極大的期望前來, 感覺有點未完全附合期望 (是因為沒有吃到招牌鮑魚嗎...?) 價位也是偏高的, 但整體也是很值得一試的。富豪飯堂, 也總算來過了。

如果不是有食友安排飯局,我是沒有想過會來這一類富豪飯堂晚飯的了,因為這裡都是吃鮑參翅肚,動輒就過千元一位,自問還未吃得起,所以有機會來試試看,實在感到很興奮。店方安排我們坐在二樓,雖然樓底矮了點,不過檯與檯之間有足夠的空間,一點也不覺得焗促。每一檯都會有一部大電視,那天剛好電視正在播放唐唐的僭建風波解畫記者會,大家都議論紛紛。第一道菜是龍躉多士,蝦多士就吃得多,龍躉多士還是第一聽第一次吃。多士炸得很香口,而且一點也不油膩,不過不告訴我的話,我也吃不出是龍躉,只知道是魚,不過與如果與蝦多士相比的話,我會比較喜歡吃蝦多士,因為多了一份爽口彈牙感。這個北菇扣鵝掌,最厲害的不是冬菇和鵝掌,而是那個汁,非常濃郁,大家都忍不住叫白飯,因為就算不吃餸,只配那個汁可能每人也可以吃掉兩三碗白飯,可想而知這個醬汁有多好吃。當然冬菇和鵝掌都炆得很入味,自然沒有不好吃的道理。雙冬扣水魚。其實我不吃水魚的,因為覺得它的樣子有點恐怖,所以我只吃了下面的燒肉、冬菇和冬荀。這個汁跟鵝掌那個同樣是非常濃郁的,可是不同的是這個多一點肉味,再濃烈一點,兩者我會比較喜歡這個,而同行的鬆弛就比較喜歡之前那一個,各有支持者。特別

如果不是有食友安排飯局,我是沒有想過會來這一類富豪飯堂晚飯的了,因為這裡都是吃鮑參翅肚,動輒就過千元一位,自問還未吃得起,所以有機會來試試看,實在感到很興奮。

店方安排我們坐在二樓,雖然樓底矮了點,不過檯與檯之間有足夠的空間,一點也不覺得焗促。每一檯都會有一部大電視,那天剛好電視正在播放唐唐的僭建風波解畫記者會,大家都議論紛紛。

第一道菜是龍躉多士,蝦多士就吃得多,龍躉多士還是第一聽第一次吃。多士炸得很香口,而且一點也不油膩,不過不告訴我的話,我也吃不出是龍躉,只知道是魚,不過與如果與蝦多士相比的話,我會比較喜歡吃蝦多士,因為多了一份爽口彈牙感。

這個北菇扣鵝掌,最厲害的不是冬菇和鵝掌,而是那個汁,非常濃郁,大家都忍不住叫白飯,因為就算不吃餸,只配那個汁可能每人也可以吃掉兩三碗白飯,可想而知這個醬汁有多好吃。當然冬菇和鵝掌都炆得很入味,自然沒有不好吃的道理。

雙冬扣水魚。其實我不吃水魚的,因為覺得它的樣子有點恐怖,所以我只吃了下面的燒肉、冬菇和冬荀。這個汁跟鵝掌那個同樣是非常濃郁的,可是不同的是這個多一點肉味,再濃烈一點,兩者我會比較喜歡這個,而同行的鬆弛就比較喜歡之前那一個,各有支持者。特別一提的是裡面的冬荀很爽甜,如果再多一點就更加好了。

京蔥遼參燒豆腐。這個菜式我同樣是很欣賞那個醬汁,濃稠度剛好,剛剛好可以掛在豆腐上面。不知道是不是加入了京蔥去煮,所以醬汁帶一點甜味,再配上滑溜的紅燒豆腐,雖然是簡簡單單的一道菜,這裡卻做出了不平凡的好吃。遼參我只吃了一小件,平常少吃,所以不是很熟悉,不過口感是挺彈牙的。

豉油皇三蔥焗鱔球。我很喜歡吃鱔,這個鱔球的賣相十分吸引,也飄來陣陣豉油皇的香氣。鱔球很肥美,外層微脆,裡面油脂豐腴,只可惜的是這鱔球不夠熱,只能說是微暖,不知何故會冷掉,可是真的浪費了這美味的鱔球呢。

蜜汁煎金蠔。因為金蠔本身的味道比起蠔豉鹹一點,所以通常都會甜味,如蜜汁等烹煮。金蠔的外層甜甜的,蠔味濃郁,只不過我覺得裡面比較乾,沒有想象之中的飽滿肥美。

蛋白杏仁茶。杏仁濃郁,不太甜,不過裡面的蛋白凝結成一舊舊,頗為影響口感。因為之前在小型點心店吃過水準不差價錢又平的蛋白杏仁茶,裡面的蛋白都是一絲絲的,所以以這裡的級數應該可以做得更好。

炸無餡煎堆。超級愛吃這個煎堆,不油膩,而且在外面的粥店是非常之難吃到新鮮炸好的煎堆,剛炸好的煎堆軟糯煙靭,好吃得我忍不住吃了兩個。

埋單每位六百,其實我也不太清楚walk-in來的話到底要多少錢,不過我們沒有點什麼飽魚、魚翅等東西,最名貴的就是那遼參,不過份量也不算很多,所以整體價錢也不太貴。

這裡的菜式都偏向濃味,可是濃味之餘又不會覺得過鹹,特別在炆煮類菜式的醬汁方面更加要用出色來形容,好吃得有食友甚至想打包回家撈飯、撈麵、撈菜。

最後再一次要感謝食友安排,讓我可以當一晚小富婆,嘿嘿~

I can say that Forum is specialise in abalone and they just do it so well here. I have tried many abalone restaurant in Hong Kong. But it is the best Chinese abalone I have ever tried. The abalone is so tender and just-right flavored! The brown sauce is just a bit sticky and it is so well with the abalone. I really would like to order one more if I get more money!!!

Price is more expensive than a typical Chinese restaurant but the food they offer is truly top of the class. It is such a great place for tourists and even for fine dining.

其實富臨都幾有酒店feel架, 就好似點菜咁, 個侍應曾經提議過我有啲菜色係可以自選配料既, 不過當然係要做到出嚟啦, 只要係配搭到既話, 佢地都會盡量滿足. 雖然我冇叫到佢講嗰種fusion菜, 但係我又真係未聽過其他飯店有咁特別既服務, 都幾friendly呀^^

My family of four came to Forum Restaurant for the first time to celebrate the Easter Holiday. We arrived at 7pm and the restaurant was only 20% full We have ordered the set dinner as below:1. 蟹皇燴燕窩Very rich and tasteful! But we think it is a bit over-seasoned and that there are too much pork pieces in it 2. 吉品扣鵝掌伴唐生菜The abalone is very tender and taster very nice! The presentation didnt seem too good but actually it tastes nice! The abalone sauce was very rich, and the rice was with very good chewy texture that its not fluffy even with so much sauce on. Yum Yum

The dessert was very nice! I love the fact that the egg white was made JUST RIGHT and they added some sago into it so theres something to chew. The almond soup was also thick and nice and nicely seasoned so its not too sweet.

This is just soso ---- we think they added syrup to make it sweet

Overall the food is okay but not as nice as we thought it would be.
A bonus though is that the waitors there are very polite and welcoming

席間一哥都提到他的煮鮑魚秘技並非學自大餐館大酒店, 而是來自一位愛煮食的太太的廚房, 可見民間食家真是多的是!
