要數北歐菜,第一時間我會想起FINDS, 從餐廳名就知菜式有芬蘭、冰島、挪威、丹麥及瑞典,食物的賣相及味道都是十分討好的. 今次餐廳與源自瑞典的Volvo Cars推出Volvo's Social Dining menu, 適合與好友一起聚餐. 從頭盤至甜品, 我們大概花了兩個多小時, 是一頓輕鬆愉快的fine-dining. 自家製的三款麵包暖熱鬆軟, 配上刁草忌廉、橄欖油及牛油, 均十分香口. 共享菜單包括湯、頭盤、主菜及甜品. 香滑烤三文魚頭湯配刁草忌廉充滿濃濃的三文魚香,湯內有三文魚蓉,口感不錯,配合刁草特別的香味、忌廉的香滑,頗有層次感. 頭盤是很美的北歐海鮮拼盤- 漬帶子、刁草蝦、自家燻蝦、藍青口、甜蜆、冷燻三文魚、輕煎三文魚及醃三文魚. 幾款海鮮各有特色,論味道,刁草蝦、甜蜆及有黑椒圍邊的冷燻三文魚最佳. 但其實整體水準也高. 而主菜方面,有煙燻挪威三文魚、香烤安格斯黑肉眼扒、家傳秘製牛肉豬肉丸配薯蓉或澳洲走地雞(全隻)選擇,奈何到訪當日剛巧沒有雞,我和朋友只好厚著臉皮問問店方可否轉做其他菜式,因為我不吃魚和牛...慶幸另行安排了紅菜頭芝士蔬菜意大利飯. 紅菜頭的味道頗突出,但沒有很濃的泥味或草味,汁的稠度剛好,而飯上的芝士咸咸的,弄碎拌飯很好吃, 另外, 黃色小蕃茄很清甜! 最後來到JAAKKO精選甜品拼盤, 四款甜品, 到底該吃那一款呢? 該是以雪糕伴果仁而做又有咖啡豆在上的, 很香滑啊! 滑溜非常兼一口大小的panna cotta充滿呍尼嗱香. 論口感, 必定是朱古力脆脆慕絲蛋糕, 濃郁的可可, 夾層是幼滑的朱古力, 這個份量剛剛好, 因為也頗甜. 焗芝士蛋糕有蛋香, 質感鬆軟不死實, 可是我實在太飽....只能吃半件. 若果是Volvo車主, 只需於惠顧時出示Volvo車匙, FINDS便會送上Volvo Ocean Blue Mocktail 一杯, 甜甜的,沒酒精, 放心喝, 飲後可駕車. 每個國家都有它們獨有的文化,不論是語言、衣著、打招呼的方式等,最明顯的,莫過於飲食方面。飲食文化博大精深,不論是哪一個國家,要學習的總是多不勝數,可謂每次都會學到新的知識,往往學習新的知識,就是我喜歡的事。今次來到尖沙咀這家精品酒店,品嚐北歐的美食。北歐總是給我一種溫馨的感覺,因為北歐的傳統文化是「以人為本」,總是特別重視家庭生活,也總特別重視和家人、朋友共享的時刻。每年的6月至8月,是北歐傳統國慶的月份,當地人會大肆慶祝。剛巧現在就是七月時份,很想在香港也感受一下這個氣氛。雖然並不能足足三個月只寄情慶祝不工作,但對於一晚半晚,我還是可以騰出時間來吃吃,吃一頓富有當地文化的晚餐,當作是感受過那裡的氣氛。 今次我來到這家叫做FINDS的北歐餐廳,早前在餐廳的網站上看到餐廳名字的意思,就是由北歐五國的英文名首個字母組成,分別是芬蘭 (FINLAND)、冰島 (ICELAND)、挪威 (NORWAY)、丹麥 (DENMARK) 及瑞典 (SWEDEN)。再者,餐廳自開業以來,一直由來自芬蘭的星級名廚Jaakko Sorsa主理菜式。看到這裡,我已經極期待今次的晚餐啦。今次這個Menu是乘聯瑞典哥德堡Volvo Cars而設計的”Volvo’s Social Dining Menu”。FINDS跟Volvo Cars都是以人為本的,兩者之間可以擦出甚麼火花呢?也是我今次期待這頓晚餐的原因之一。 先是廚師每日自家製的麵包,不論是白麵白好、香草包好,又或是口感極似蛋糕的甜麵包好,三者都是作為餐前的最佳包類,加上麵包前面的酸忌廉、牛油跟橄欖油,平日不喜沾上醬料來吃的我,尤其是牛油,但在這邊吃這籃麵包,不用醬料已經很棒,加上醬料就好像是為味蕾添上色彩、添上驚喜似的。 湯品 – 香滑烤三文魚頭湯配刁草忌廉 餐廳每隔兩、三天便會從北歐那邊運入整條三文魚,並好好的利用每一個部位,這個湯就用上三文魚的骨去餚製,所以喝下去的時間就品嚐得到濃郁的烤三文魚味,鮮而不膩。再者,湯品之中加入刁草忌廉,讓湯品飲落更甜更滑。 頭盤北歐海鮮拼盤 – 漬帶子、藍青口、甜蜆、刁草蝦、自家燻蝦、藍青口、甜蜆、冷燻三文魚、輕煎三文魚、醃三文魚 三文魚蓉並沒有在餐牌上列出來,但其實這個三文魚蓉也不能少看,它的味道有點像罐頭吞牙魚味,但當然比它鮮甜很多倍啦,加在自家製的香草麵包上,把香草麵包的香氣跟三文魚的鮮甜味夾雜在一起,入口口感相當豐富。另外,三文魚蓉旁邊的是廚師自家製的芥末,但一點也不辣,反而有點點甘甜味,添在麵包上也一樣美味。 漬帶子薄薄的一片,食落味道淡淡的,但廚師在帶子上面加入橄欖油跟帶子籽,粒粒橙紅色的小粒便是了,讓這片帶子食落的時候帶點點鹹香,比起就這樣子單單吃一片帶子,這樣子食的口感相對豐富多了,味道層次亦然。 藍青口、甜蜆相當鮮味,甜蜆上的是醃製過的白蘿蔔絲,酸甜跟鮮味融合,令味道更佳。藍青口上面加上廚師自加製醬汁,味道層次更為豐富。 刁草蝦跟自家燻蝦的蝦隻均是從北歐新鮮入口,原來北歐那邊的蝦相對細少,但肉質鮮甜,而且肉質相對結實一點。刁草蝦味道較淡,加點檸檬汁把鮮味全部都逼出來。自家燻蝦的味道相當濃郁,帶點點煙燻味,味道鹹香得叫人捨不得嚥下。 至於冷燻三文魚,輕煎三文魚及醃三文魚,我是由比較淡味的冷燻三文魚開始食起,味道雖淡但不失其三文魚的香氣,淡而不膩;輕煎三文魚相對冷燻三文魚厚身,輕煎三文魚也蠻肥美的,三文角的油脂跟鮮味香氣充斥著口腔;最後的是醃三文魚,帶煙燻味道且十分濃味,比起一般一塊塊的煙三文魚更濃味,油脂味比起前者更甚,甘甜可口,味道細膩叫人喜歡。三款造法不同的三文魚,讓我感受到三文魚最美味、最簡單、最撲素的味道,真的是一試難忘。 主菜 – 澳洲走地雞(全隻)配烤意大利青瓜,小胡蘿蔔,黃金甜菜頭及迷迭香肉汁 原隻走地雞,份量原來極多,兩個人也差點吃不完一整隻雞。廚師在焗盤之中加入迷迭香肉汁,讓雞件更是惹味、更是鹹香。雞隻的肉質很厚,而且也蠻結實,但又不失其嫩滑感。此外,平日不吃雞皮的我,喜歡上這道菜的雞皮,事關雞皮被焗得相當香脆,就連脂肪也被去除了,叫我這個怕胖又愛吃的女生吃得更放心。 至於伴碟也很出色。意大利青瓜看上去乾巴巴的,但原來它鮮甜多汁;小胡蘿蔔沾有迷迭香肉汁的味道,讓本來爽甜的小胡蘿蔔添加幽香的氣味;黃金甜菜頭呢,看似是蕃茄似的,但食落卻是比紅菜頭更甜更鮮的味道,加上醬料,讓黃金甜菜頭變得有點點酸的,但讓人喜歡。 甜品 – JAAKKO精選甜品拼盤 不但賣相精美,而且款款都有特色,就連醬汁都用心過人。碟上紅色的是紅桑子醬汁、橙黃色的是以北歐特色莓果沙棘莓製成的醬汁,次者均酸酸甜甜,當作是飯後Refresh,又或是甜點跟甜點之間的相隔。 甜點方面,先是中間的DAIM芭菲,以杏仁、焦糖及朱古力作為主調,中間部分加入涼透心的雪糕,味道略甜而有層次;最上面的是百利甜酒芝士蛋糕,在咀嚼蛋糕的時候,Bailey的香氣慢慢從蛋糕之中溢出,配合上酸甜恰到好處的紅莓跟脆卜卜的粉紅色朱古力粒粒,甜而不膩,是為女生最愛;最後的是迷迭香朱古力慕絲,朱古力味特濃,味道極香,以此作結讓人感覺圓滿。 飲品 – Volvo Ocean Blue 最後少不了的,就是這杯望落已經涼透心的Volvo Ocean Blue。為了想要感受到整份Menu,我們另外加$65點了這杯飲料。店員提及只要於惠顧時出示Volvo車匙就可以免費得到這杯Volvo Ocean Blue Mocktail,可惜我沒有啦 (知道啦,要乖乖去學車嘛) 。話說回來,這杯Mocktail在大熱天時飲用真的很棒,店員在飲品中加入柚子、荔枝,味道清甜可口,而且飲料本身甜度恰到好處。用餐時飲用這杯Mocktail,的確是最佳享受啦。 continue reading

FINDS, located in hotel The Luxe Manor, is one of the very few Nordic restaurants in Hong Hong. Executive Chef Jaakko Sora fuses Nordic culinary traditions a wide range of other nordic dishes can also be found on the menu using all fresh and largely imported ingredients, while the restaurant specialises in salmon dishes using different preparation methods.Though there is a big 5-course meal on the way, their bread basket is not to be missed. There are three types of bread served with three kinds of condiments including cheese sauce, quality olive oil, and butter with sea salt. ScandipolitanQuite a number of dishes use fruity ingredients like berries and root vegetables. With no exception, this sexy ruby cocktail is made out of raspberries, lingonberry, passion fruit, vanilla vodka & lingonberry vodka, passion fruit syrup & cranberry juice. You can also find some edible cointreau gold caviar at the bottom that actually took us by surprise. Salmon in Six WaysWe were told that there are 50 ways to prepare salmon because it is a very versatile fish that can easily go well with different cooking methods, seasonings, as well as ingredients. Luckily, we have the chance to try six of them and we cannot be more anticipated.Gravad LaxStarting with an order, we were recommended to try the lax first which is a very traditional Nordic appetiser to enjoy, usually with rye bread. A very thinly sliced salmon has been cured with beetroots, dills and sea salt for more than 20 hours, served with the mustard sauce to intensify the savouriness from this little piece of fish. Smoked RoeSmoked salmon roe remained plumped and shiny after this preparation process. The fishy taste is not as strong when the smokiness becomes more prominent. These delightful savoury roes are sitting on a bed of sweet sour cream and chives, a perfect condiment to go with any salmon dishes. Cold-smokedThe cold-smoked salmon piece is not as savoury when comparing to other ways. It's smoked with alder wood imported from Finland. This is probably our most familiar way to enjoy salmon. PickledIn contrast, pickled salmon is quite uncommon in Asian countries. A small cube of salmon has been pickled with sugar, dill, vinegar and water for over 20 hours, served with a slice of pickled carrot, a halved shallot, garnished with dill flower. SearedA seared salmon with a twist as it is rolled with fennel seeds and crushed peppercorn and served with avocado mousse. Basic but phenomenal. MousseLastly, we have a dollop of salmon mousse with a crispy malt bread. The mousse is very smooth and packed with a complex salmon flavour, while the crisp bread has a little bit of sweetness to it. We were also recommended to try the mousse with the malt bread from our warm bread basket! Beetroot, goldroot, mushroomWith only fresh ingredients are used at FINDS, we are very confident and comfortable to enjoy their veggies raw or cooked. This vegetarian dish consists a mix of colourful red and yellow roasted beets and goldroots, mushroom-celeriac-apple salad, beetroot sprouts from Skane, Sweden. You are experiencing a ride on a rollercoaster towards earthiness, sweetness and even smokiness flavours in a plateful. Porcini mushroom soupA hearty bowl of hot rich soup full of flavourful parcini aroma, blended finely with onion, thyme and rosemary with vegetable stock as the base. The crushed hazelnuts on top kind of complete the whole thing because roast nuts are actually good with mushrooms. There is no fancy truffle but pure beautiful earthy mushrooms. Slow-roasted venison tenderloinVenison is not the easily kind of meat to find in Hong Kong and we have heard that it is quite hard to source them. These venison tenderloins are extremely succulent. It is like cutting butter when your knife run through it. The seasonings and sides are taken seriously with Finnish pine salt, charred carrot, crispy celeriac, black current white wine sauce. Instead of the traditional Italian risotto, a healthier version of porcini barley risotto is used which gives an even stickier texture. Findland vodkaVodka is part of the country so you can't have a nordic meal without some vodka, especially lingonberry vodka. Rustic cold stone shot glasses are used to keep its temperature cold. A lot of other kind of Nordic hard liquor can be found at the bar to keep you warm in this cold weather. Lingonberry & yogurt mousseA fruity refreshing dessert made with mostly sweet and sour lingonberry and yogurt, complimented with different elements including meringues, lingonberry jelly, dried lingonberries, and lingonberry syrup. The mousse discs are very smooth and thin in texture. It is almost melting but it is not. You can easily down a few of these even after a satisfying meal. Since FINDS has been relocated from Central, I see them as one of the most underrated quality restaurant offering unique dining experience at a reasonable price. 一直有聞FINDS的大名,以在香港極之罕見的北歐菜而備受讚揚 餐廳名字竟由Finland, Iceland, Norway, Denmark及Sweden五國組合而成,別出心裁 雖然往昔已因其特色深受吸引,但是去過北歐幾國一趟後才是真正敞開心扉的契機 終於在Feedme Guru與餐廳合作,設計了只售$588+10%的五道菜晚餐餐牌的時候相遇 供應期僅由1月16日至31日,在短短半個月的時間內趕忙一嚐,要食就自己上網搵Link訂位 以木系裝潢配上草綠色餐墊,有如置身大自然中,想起了往日在瑞典偕友野餐的時光 早已有聞FINDS的總廚Jaako Sorsa同時主理Cafe Roma,確實如是 閱過Bar Menu,看到熟悉的餐點,聚焦於我喜歡的Bailey's Cheesecake 但一場黎到,見FINDS主打北歐菜,主餐牌的甜品固然更為亮眼,尤其有Daim出現的一款 可惜這次的五道菜套餐是固定式,未能另作選擇,卻令我未食先諗定下次幾時黎 套餐不包飲品,擔心吃餐包時會太乾涸黏喉,加上要放鬆心神,百元有找何以不嚐? 本沒有打算喝酒,結果在看到Hey "Ju"! $80時一秒破功,竟然再遇大概一年前在挪威初嚐過的Aquavit! 作為加入葛縷子及八角的草藥烈酒,味道確不易入口,不過香氣則是斐然 FINDS的Cocktail版本加入接骨木花糖漿、鮮葡萄柚、薑啤及青檸汁,添上花果香甜 Aquavit的藥水甜在調配之下變淡,依然不是十分平易近人,叫做稍為溫和下來,入門之選 麵包籃亦是木系風格,與整體質感色彩相襯,其中一款是無比熟悉的黑麥包 與北歐出品相近,富有嚼感但未及在北歐時吃到的出品,幸好夠濕潤,不會咬到咀嚼肌抽筋 對其他兩款外乾爽脆口,內綿潤香腍的餐包本來就合意;其實有刁草忌廉芝士已經萬事足 不靠豐盛猛料食材堆砌,Salmon in Six Ways 挪威三文魚驚喜六重奏依然讓人喜愛有加 全是自家製作,購入挪威新鮮運港的三文魚後分以不同烹調方法帶來驚喜 一碟六款未到極限,總廚指幾十種亦非難事,當然以他的廚藝及對食材的認知不是不可能 跟隨既定次序,一道道細味,先有染至略紅的紅菜頭漬三文魚,細薄腍綿,意外的清新 第二款為鹹鮮脆彈的燻三文魚子,從濃鹹出走,又變成富刁草香氣的嫩滑燻三文魚 及後酸漬三文魚憑著經過約廿小時浸醃的酸甜帶出,上桌時以蘿蔔及蕎頭相伴更清爽 由回歸香濃深邃的醃鹽三文魚配合黑椒及小茴香重返戰場,伴著牛油果的香潤同食 最後的三文魚慕絲原來是回憶中的滋味肉醬,味甚甜美亦無腥,順口不已,劃上完美句號 提起Beetroot, Goldroot & Mushrooms 紅黃菜頭及野菌,本覺得會清到味寡,青味重烈 紅菜頭確實甜美,少見的黃菜頭會淡清一點,然而沒有印象中的過度青意 而當中有另製的鹹醃菜頭,薄片味濃,平衡甜度之餘作為對比,來得正好 藏於中心的蘋果沙律切得十分細碎,雖然再次是甜味,但又有本質上的分別,豐富層次 旁伴一片北歐人常吃的脆麥餅,深色,薄身乾爽,麥香非常明顯,有可能是全碟最濃味 Porcini Mushroom Soup 牛肝菌湯並不罕見,可是又曾否與榛子碎合奏過一番? 沒有加入大量忌廉沖淡菇香,味道仍舊濃郁得很,榛子及麵包碎增添脆香,更為可口 其實剛才盛得滿滿的麵包籃在此可大派用場,若然還擋得住誘惑,還未清光的話…… 延續年多前在澳門米芝蓮二星御膳房嚐過的美味,一款易入口易上手的野味 Slow-roasted Venison Tenderloin 慢烤黃麂柳有如牛柳般奉桌,外帶焦,內無疑粉嫩 肉質不韌柴,腍柔易嚼,易入口的另一原因是只有微膻,就算初嚐的友人也不猶豫的吃光 除了甘筍及芹菜頭外,牛肝菌薏米意大利燴飯亦見特色,成為連接主菜與湯品的橋樑 軟彈薏米調味意外輕手,在嚐過伴送主角的芬蘭松子鹽及黑加侖子汁後卻顯得過淡失色了 讓對甜品沒有必嚐欲望的友人都讚不絕口,甜而不膩,倒是醒胃清怡的粉紅佳人 Lingonberry & Yoghurt Mousse 越橘莓乳酪慕絲以慕絲、啫喱、果乾及果醬酸羸得歡心 即使是慕絲都不會過重奶膩,莓酸及乳酪酸挽救一切,蛋白脆餅增甜添脆,豐富嚼感 興之所至,我們再off-menu點了每人一杯產自芬蘭的Koskenkorva Vodka $80 37.5%酒精濃度,卻未見平時Vodka的嗆烈,並以石杯保冷,教人喝著喝著就一杯乾 有留意到嗎?這是Lingonberry口味,正好以莓果香配合上述的甜點,去膩再去膩 同牌子有Original、Blueberry Juniper、Lemon Lime Yarrow及Sauna Barrel味道,部分在此供應 口味獨特,只是已破例喝了Aquavit Cocktail再飲了一個Vodka Shot,留待將來再會! continue reading

Tried the finds x littla afternoon tea setOverall the food was quite good, though in small portions,so should treat it as snacks rather than something to fill up your tummy. Service was great also.The price was alright for the environment. I like the decorations and the theme for the cutleries and containers. continue reading
