香港分店的餐牌與台灣總店有些微分別。最馳名的多款紅燒湯底牛肉麵當然不會缺少,但偏偏部份乾伴麵款式就消失了,較難以理解連清燉牛肉湯麵也沒有。始終並非所有人都嗜辣⋯⋯即使「段純貞」的紅燒湯底香而不(太)辣,也並非人人都可以接受;少了清燉牛肉湯底就等於做少了生意。

在香港食台灣牛肉麵,只要店家來自台灣、在台灣又稍有名氣,就一定不會便宜。以牛肉麵標準來說,三寶麵($94)索價相當貴,尤其對比台灣「段純貞」只售NT$200(約HK$55)。紅燒湯底沿用台灣總店秘方炮製,過程複雜;皆因秉承創業宗旨,各種麵類調味的醬料醬油等,都依足民間傳統方式及段女士的秘方自家製作。堅持唔用現成桶裝牛脂,而係使用新鮮肥牛爆炒提煉出油後,再下辛香料、四川郫縣馳名豆瓣醬、台灣岡山豆瓣醬、酒釀爆香,之後再加入花椒、麻椒、薑、蔥、蒜等等23種中藥材及香料,文火慢炒8小時才完成醬料,然後再用於炆煮紅燒牛肉。同一時間,又用牛大骨熬煮數小時成牛骨高湯。將紅燒牛肉醬汁同牛骨高湯兩者混合,就成為「段純貞牛肉麵」引以為傲的紅燒牛肉麵湯底。飲一啖湯,其四川口味的鹹、香、麻、辣湯底與別家台灣牛肉麵店的紅燒湯底有明顯分別,口感厚實、濃而不膩;味道複雜,麻而不嗆、嗆而不辣、溫而不火,果然較別家台灣牛肉麵(以香港可以食到的來比較)優勝。

每款麵都可自選手工粗麵或幼麵,前者麵質充滿韌性,輾壓厚薄不均、手切大小不一的麵身可吸收更多湯汁,有口感、有嚼勁。後者就滑溜、軟腍,麵身充滿氣孔,更能有效吸收湯底精華,最適合作為乾伴麵;如果用作湯麵就可能愈浸愈腍,變得霉爛。

台灣牛肉麵的三寶一貫指牛腱肉金錢牛肚牛筋。選用筋肉比例最佳嘅牛腱心,軟膏軟筋膜呈花紋狀。原條牛肉燙香表面後,滙同23香紅燒醬料一齊燉煮幾個小時,奉客前才起鍋切厚條。牛肉保持原狀,鬆軟而不爛;咬落Q彈又有肉香、醬汁完全入味。

據經理介紹,除了兩款採用清燉雞湯底的湯麵之外,其他牛肉麵全部都是紅燒湯底;唯一唔算辣的就只有原味牛肉麵($82)。送上來之後,目測實在看不出同三寶麵的紅燒湯底有什麼分別。喝一啖,隱隱然仍有少少香麻辣,只是辣味更輕,估計牛大骨清湯及紅燒牛肉湯汁之間比例,前前更加多。莫非銅鑼灣分店開張不久,一眾員工尚未試齊所有麵款,只是聽從廚師轉述?原味牛肉麵揀了細麵,一如所料,麵質較為軟腍,小公主就好鍾意,小編就寧取手工麵。

上網一查「段純貞」的台灣網頁,並沒有雞湯抄手($48),香港分店限定?雞湯呈淡奶白色,飲啖湯,雞味鮮濃,好味過很多小籠包拉麵店或京滬菜小館的雞湯拉麵湯底,唔怪得經理落力推銷雞湯係由鮮雞及雞殻熬煮,並非用現成濃縮雞湯開水還原。

抄手唔同水餃,較接近雲吞。一般來説,水餃皮較厚,盛行於中國北方;抄手及雲吞較薄,流行於中國南方,而抄手及雲吞的分別在於包的方法。「段純貞」的抄手參考了香港出名的廣東雲吞,採用全蝦作為餡料,但食落去味道欠缺了大地魚粉及蝦籽,及不上港式雲吞麵名店的出店。不過,蝦肉餡夠鮮味、亦夠爽口,已勝過不少普通雲吞麵店;再配合鮮甜雞湯,好食。只嫌$48得6隻,有點貴。

印象中,在香港未食過一碗無論湯底、牛腱心肉、金錢牛肚、牛筋皆滿意的台灣紅燒牛肉麵,「段純貞」好可能係第一間。難得雞湯底同樣出色。期待會盡快引入台灣總店的清燉牛肉湯麵。

There are loads of Taiwanese beef noodle joints in town but less than a handful that have made it to my favorite list. Duan Chun Zhen being one of them has made its debut in Hong Kong this year and sits high on the list.

In the midst of covid, physical interaction is always a concern but with the aid of technology, customers can place orders through their cell phones which completely solved the problem plus it minimizes the chance of staff taking incorrect orders.

The handmade thick noodle had a chewy texture while the beef shank was soft and tender.  Together with the rich soup base and its distinct flavor, the combination is just perfect to my liking.  Alternatively, the tomato soup base is equally as good that you can't go wrong with either one.

The pork dumpling is one of my favorite dishes.  Juicy pork was wrapped around in thin and crispy skin that the texture is unmatched by others.

Staff are very friendly especially to kids where my boy had a great time there.

官網講話湯頭以花椒,豆瓣醬等多種辛香料炒製後,再加入23種中藥材,牛脂,八角,老薑,紅蘿蔔,白蘿蔔等熬製8小時。

湯底非常濃郁,除咗有香濃嘅藥材,香料,牛骨味之除,又有豆瓣醬同花椒嘅麻香味。但對我黎講,我就覺得太濃同咸咗DD,如果調味淡返少少就啱我口味多D。

牛筋同牛腱都燉得好夠腍,牛筋入口即溶,兩者都好入味。

聽講呢間牛肉麵好出名,本身以為會好多人,但係閒日下午一點正正lunch hour都好多空位,大概只係三成入座率。麵體軟硬適中,但係就無乜彈性。牛肉同牛筋都燜得幾好,夠軟腍亦入味。不過,最大敗筆係個湯!係好濃,但係好鹹,所以除咗鹹之外其實食唔到其他味。好需要靠酸菜吊味,之但係佢嘅酸菜亦都係鹹!不過,始終都好過就咁食嘅。總之一路食一路要不停飲水😕 可以一提嘅係,侍應服務都好快手,keep住加水,唔駛我四圍搵人。

在台灣吃過很多次,覺得味道都不錯。路過這裏幾次,今天終於進來午餐。大失所望!點了一份半筋半肉牛肉麵。無論牛肉,湯底,麵質都不堪入目。台灣牛肉麵的基本,辣椒都沒有。問店員要辣椒,回答我們只有辣椒油😥另外點了炒青菜,有炒焦,沒有香味,而且很油膩。覺得廚師根本沒有用心去炒菜。點了鍋貼,一眼看下去已經知道是冷藏的餃子,沒有什麼味道。點了一個冷泡茶,放在一個玻璃瓶,茶包沒有在裏面。估計那個玻璃瓶是重用的。即時有點擔心那個瓶蓋以及瓶子的清潔程序😨而且茶味也不好👎難怪經過好幾次都沒有什麼人。
