尖沙咀蟹仙海鮮私房·蒸氣石鍋,一入門口就見到成排生猛海鮮,水缸裡面啲蝦蟹魚一條條游嚟游去。餐廳坐位闊落,環境乾淨。我哋叫咗個海鮮套餐,有齊曬店舖主打嘅野生海鮮。第一輪上嚟嘅係斧山鰻魚同琵琶龍蝦,鰻魚肉質好滑,冇骨嘅部分特別Juicy。琵琶龍蝦,一打開已經見到蝦膏流晒出嚟,香氣十足,帶住天然鹹香,非常正。野生膏仔蟹,打開蟹蓋就見到橙紅色嘅蟹膏,好香,食落鮮甜無腥味。釜山蠔超出預期,蠔肉肥大,晶瑩剔透,入口即爆汁,仲帶海水咸香。係現場即蒸,完全無腥味。海虎蝦尺寸夠大,蝦殼一撕開,蝦肉雪白彈牙,就咁食已經好清甜。蒸完海鮮之後,啲海鮮精華會滴落粥底,唔加味已經好濃鮮甜。粥底裡面仲有加入咸菜、蔥花,每啖都好有層次。餐廳送咗甜品,椰汁燕窩燉品,唔太甜,椰汁香濃,燕窩滑滑咁,食完好滿足。 continue reading

位於尖沙咀的這家海鮮店係專門食野生捕獲的海鮮,所以很啱一啲有要求的食客。此店裝修絕對不是很高貴,大眾化格局。鰻魚肉不算太肥美,所以唔會食到一口油膩,反而更加食到鰻魚肉嘅本身厚實感,很爽甜。[韓國釜山野生生蠔]size大隻而且很飽滿,當蒸好時打開蓋,蠔殼還裝滿了蠔液,啜一口很美味,蠔肉亦很爽滑,印象難忘。[罕有藻食綠膏蟹]平時的蟹膏是黃色的,據侍應所說,如果蟹以藻類為主食,其蟹膏亦由黃色轉為綠色,數量罕有,而他們是提供菲律賓深海的蟹,所以蟹肉非一般養殖可比。我品嚐之後,發覺肉質爽甜,確實幾好味。整體來說,食的裝修不算美觀,走大眾化路線,食物質素有保證,價格不算高,同我們去食西貢海鮮都是差不多價錢,而且又有粥和甜品,咁尖沙咀就更為方便。 continue reading

大部分海鮮檔或酒家吃的海鮮都是養殖的,口感始終不及野生捕獲,所以十分難找到。今天朋友相約此飯店晚飯,地點有點隔涉,不過入到去有不少食客,證明食物品質有一定保證。朋友說之前來吃過感覺不錯,所以約我再來encore。我們叫了兩個海鮮套餐,港幣449元一位,有十道菜,包括鮑魚、鰻魚、琵琶龍蝦等,服務員端來海鮮材料,然後逐樣逐樣放在蒸鍋個海鮮都有不同的蒸焗時間,蒸爐可以設定時間,一夠鐘就會響,咁就唔怕錯過。每個海鮮都很鮮味,基本不用再點醬汁,當中我覺得野生琵琶龍蝦十分特別,首先其外貌不揚,而且也不怎麼像平時吃的龍蝦,龍蝦的尺寸也不大隻,不過聽服務員解說,琵琶龍蝦活在深海當中,無法人工養殖,所以十分稀少,是罕見品種。口感方面,琵琶龍蝦的蝦膏軟糯,肉身爽嫰,雖然尺寸不大,卻可撩起一舊肉,吃得滋味。吃完所有海鮮後,還有一直在蒸鍋煮的粥,加入菜脯及葱,十分惹味。最後更有椰汁燕窩做甜品,圓滿一餐!;整體來說,用蒸來烹調的食物,可以吃到食材的鮮味,比起平時的打邊爐,更可以食到最自然的好味。 continue reading
