鵝腸的新鮮度和口感我都很滿意, 是這道菜的亮點。鵝腸夠新鮮, 吃起來是爽脆彈牙兼有咬口之餘還吃到它的軟糯, 不會缺乏嚼勁。新鮮的鵝腸口感果然很好。很喜歡鵝腸的口感, 煮的廚師相當專業, 因為鵝腸是難度很高的食材, 要煮到鵝腸脆爽中帶點嚼勁, 然後還是滑順的, 殊不簡單。而且值得一讚的是處理得相當乾淨,完全沒有半點腥味。大豆芽吃起來很爽口, 也是滿分, 想不到有鵝腸的同時大豆芽還可以保持爽脆口感, 並不會煮得過爛。豉油皇的香味也吃到, 是那點醬香鮮味十足, 同時, 大豆芽的清甜味並沒有被豉油味掩蓋,還是能夠吃出清新的感覺, 可謂相當成功。 continue reading
