而家先得閒出返個食評,上次幫襯完家常便飯食隻鷄炒幾個餸,同老闆傾開計先知原來可以預訂海鮮,咁啱老母節就一家人嚟食下海鮮啦,叫老闆幫我預訂下,有蝦有魚有蟹有聖子滿足到老人家就得了。海鮮處理有別於其他大排檔,即使蒜蓉蒸咖喱炒甚至鼓汁蒸,仍能保持海鮮鮮味,份量都足唔會得返啲殼。食左都好多海鮮燒埋乳鴿同鷄,埋單竟然比出面酒樓啲咩套餐抵。

蒜香雞翼尖,肥美滑嘟嘟,醃味清淡不辣,咸香蒜味可口啜得舒暢。人家都寫明蒜香,不是蒜辣,就算唔辣都正常不過既,有辣就更添風味啦。蒜辣雞腳,出色的烹調,最愛炆到雞皮黏黏膠膠漿住我的櫻桃小嘴。蒜味完全滲入,辛中散發甜味,損得開心過足癮。越食越辣,一隻比一隻辣,美味刺激興奮出晒水。


涼拌豬耳,芫茜味濃,酸醋味弱,辣味幾乎感覺不到,室溫口感麻麻地不夠清涼。豬耳半爽半脆,即叫即撈那會夠入味呢。汁還汁、耳還耳,攤半個鐘後再食,味道才強烈一點點。


涼拌青瓜,溫度免強夠清涼,微酸不辣的,爽脆而偏淡。可以用鹽醃耐一點,醃過夜就更好。涼拌雲耳,彈彈索索聲,本身不索汁的雲耳比青瓜味道更加淡,要比多少醃料及陳醋的啊。


涼拌蓮藕,薄薄的片爽脆依舊,散發蓮藕獨特出於污泥而不染的清甜味道。涼拌皮蛋,四款前菜小食酸汁齊齊淡茂茂又沒半點辣味,單調貧乏,最濃郁只有皮蛋。蛋黃黏黏軟棉,甘香無比食得滋味,親托著勁彈外皮,較為滿意的一道。


明爐燒雞,不要斬不要讓肉汁流失,保持絕對的原汁原味。滾熱辣熱力迫人地送上,燒烤香氣強烈吸引,口水流!帶上手套自撕雞,熱到燙手要渾功使出鐵砂掌才能免強應付!自行扯下整隻雞髀給壽星女享用,剩下雞胸雞脊雞屁屁讓我處理掉。皮脆肉嫩,鳳肪油潤甘甜,髀彈胸綿。手撕不會破壞天然味道與肉質,原始粗礦舔舔脷。必須趁熱食,醃味稍濃,放涼會感到略咸。


新鮮出爐,熱力澎湃,忍住高溫手撕品嚐,一扭一扯雞髀飛脫,雞汁激射,香氣突襲攻擊,狠狠地咬落薄脆雞皮,索一聲十分悅耳,皮香肉嫩超多汁,雞甜味非凡,穩守招牌菜首位。手撕最高興,但同學們似乎不太習慣,想以刀叉對付,唯有讓我來啦!帶套即埋牙開波,勁燙手呀!


扯甩兩隻髀兩隻翼已經要停低,讓手指們降降溫,不能一氣呵成呢。扯開雙腿,大量雞汁雞油噴射,燒雞氣味芳香輕飄!朋友們就算無刀叉都堅持要用絞剪,大叔們無啦啦變得怕醜加斯文,我就頭都痕!我就最愛手撕原汁原味,間中燒味店買隻雞或鵝都要免切,原隻直接咬,不知幾鬼狂野美味!


靚雞身材適中,皮光肉滑不肥膩無肥膏,雞皮燒得薄薄脆脆,裂的一聲撕開,非常悅耳,聽得興奮開胃,全力殺呀﹗雞肉滑溜溜水潤無比,髀彈胸綿,肉汁不停流出,啖啖 juicy 極和味。雖然某些部位有點咸,不過整體都高質美味,食得過舔舔嘴。雞籮友肥美油香皮脆充滿彈性,只甜不羶,愛不釋手。


鮮魷炒芥蘭,重咸魷魚只咸不鮮,多汁爽爽的。高質芥蘭爽甜無比,翠綠嫩嫩沒半點渣,不苦澀不生水。隔離檯班大叔大嬸還在討論芥蘭不是時令不是季節味道不會好,您地唔食就笨喇,真係懶醒。韮菜花炒豬頸肉,翠綠爽甜,而墨綠有點渣。豬頸肉彈爽滑香口不油膩,大注大注韮菜花夾住豬頸肉,油香美極齊齊食就最正喇。


酸菜炒大腸,酸菜大大塊,要切絲架麻?成塊咸菜咬,淡口爽脆,甜酸都不夠濃。腍腍微彈大腸皮,一試無妨,好悶的小炒。茄角雙燴,乾乾豆角,爽脆茄子,腍腍百合,油淋淋清淡的味道。


薑汁倉魚煲,噴住煙吱吱聲出場,開呀!二四六切件倉魚芳香無比香噴噴口水流,菜牌張相係原條架喎。薑味微弱不太感受到,反而咸味十分突出。魚肉嫩滑多汁,魚味濃郁,最愛啜魚頭肉,膠黏彈彈,色香味兼備。


奇味雞煲 1 隻,取消左半隻。黃昏的早餐,終於有朋友陪我食雞煲。甜醬油味濃濃,油油甜甜的微辣無麻,整體味道單調,連雞都沒什麼味道。除雞髀外,其他都偏乾鞋。


家鄉炆鴨煲細,好采訂位時要求預留,否則就無得食喇。米鴨仔都尚算肥美有肉食,有髀有胸也有翼,真材實料無欺場。噴煙起泡吱吱聲上檯,香氣撲面而來,口水分秘異常,我唔客氣喇﹗濃稠可口的醃汁,緊緊包著鴨肉,髀肉滑滑,胸肉實實,鴨皮彈彈,味道得宜。不過只有薑蔥作伴有點單調,加入菇菌及鮮筍會更開心美妙。


至尊燒排骨,最怕肉質霉鞋鬆散,這排至尊不會呢,太興奮咯﹗製作需時 20 分鐘,慢燒請耐心等候,溫柔地暖暖的到來。肉彈滴汁,輕輕的調味非常恰當,食得到豬肉原始香甜味道,啜得暢快舒服啖啖肉,不錯的選擇。脆香骨,至尊燒排骨的進化版。炸得非常乾爽完全不油不膩,外層香脆無比包著嬌嫩豬肉,帶汁嚥韌有趙口,食得過。


豉椒炒花蛤,轉眼到尾聲。花蛤被烚到乾乾淨淨,無泥無沙亦無晒味,肉汁完全流失變得乾瘦韌韌。豆豉蒜蓉辣椒落味平凡單調,青椒低水平不爽甜,紅椒直程起渣即吐。


豉汁蒸倉魚,沒有半點煙的,暖暖不燙嘴,油浸一樣,感覺肥膩。魚肉有點霉,新鮮度強差人意,鮮味欠奉,還配上單調乏味的豉醬。免強下嚥,不想浪費。我自家調配有蒜蓉、豆豉、辣椒、青椒、洋蔥、砂糖、蠔油,味道豐富吊出鮮魚氣質。


燒雞肉咸菜炒飯,大大碟重份量,足夠完全餵飽兩位食家。鑊氣非凡,索一索舒筋活骼,聞一聞精神爽利。炒功了得,燒雞味芬芳,趙落蛋味出眾。蛋香肉香環繞四周,乾爽嚥韌的飯粒配上咸菜燒雞肉,十分可口醒神。溫柔的動人咸香,咸菜味夠醒胃。其實已經好飽,都要食返碗先肯收手呢﹗食完一啖又一啖,不經意連食兩三碗呢!罪過罪過,無可挑剔得滿分。

講到呢間雞屋,已經第二次幫襯~佢店如其名,係一間只有屋咁大嘅店,主角就緊係雞啦😄上次幫襯一行5人叫左1隻雞,每人只係試到少少,所以今次同老公2人撐枱腳🤭2個人KO成隻雞~主角燒雞原隻上~呢個係店員推介嘅,但唔想整污糟手嘅朋友都可選擇切件上。我地2次都原隻上,由於店員會提供手套,所有用自己手撕開好似原汁原味d😄不過隻燒雞熱辣辣咁上,都幾難撕㗎~好在店員又有提供胶剪😀結果老公好輕鬆就將隻雞解左體,我再用手拎泥食~隻燒雞果然外趣內嫩!咬落去d皮仲趣卜卜,d雞油同汁好自然向下滴🙊d雞肉一d都唔”鞋”!而且好入味,夠哂咸!但個人覺得有d汁點會更吸引~不過2個人食一隻雞真係幾多🤣攪到隔離枱嗰一家七口竊竊私語🤨唔知係咪笑我地大食呢~除左食隻雞,我地仲叫左碟大腸炒芥蘭~賣相同份量都值8分,大腸算洗得乾淨,芥蘭夠鑊氣,唔會過淋或過硬~除左拼大腸,仲可以簡咸肉嗰d~食到飽飽,叫左罐出面好少有嘅加多寶!其實我未飲過🤭原來超級甜!中和翻餸菜d咸都唔錯👍🏻燒雞~~~~我會再泥的!🤪

難得周日,中午與家人預約了大埔體育館打羽毛球。運動之先要醫飽個肚才有力氣😂😂經過雞屋,見到宣傳海布寫著下午5點營業,本想轉身離去,留意到餐廳內有一台客人,一家大細正在吃飯,便膽粗粗進內詢問,原來那台是熟客,特地致電預約老闆回來做午市生意,所以當天中午都有營業。今次真係有食神必食燒雞,外脆內juicy!原本我們吃剩雞頸部分,老闆見到,特意提醒我們,每隻雞他們都已仔細把淋巴挑出,挑到手都有職業性酸痛,所以是十分乾淨的,可以安心食用!當下我就覺得很窩心,怎麼會有這麼細心的餐廳總結是,家庭式餐廳,感覺像是私房菜般的~東西好吃,燒雞有特色!吃過這一次,下次我變成熟客再去幫襯
