While 2016 has been a boring year for restaurant openings, it's the year of re-branding and makeover. Recently, we saw Riva and The Deck successfully transformed into Skye rooftop bar at Park Lane Hotel and Blue Butcher now officially "Blue - Butcher and Meat Specialist". Even Bostonian, the decade-old surf-and-turf resto at Langham Hotel, decided it was time for a facelift.After an extensive two-month makeover, the new-look Bostonian now sports a shipyard chic decor with wooden panel walls, mahogany seats and vintage dark brown sofas. The bar near the entrance of the restaurant added a vintage touch to the vibe.The semi-buffet brunch ($588 on the weekend) features a wide selection of appetizers (mainly salad), luxurious seafood platter, sashimi and made-to-order main course. Free flowing bubbly is additional but non-alcoholic drinks like soft drinks and juices are included in the brunch.Round one - I started things off jumping all over their poached lobster, one of the highlights of the buffet. The foie gras terrine with red wine jelly was very high on my list too. I didn't like the salmon confit (and smoked salmon), which I thought was way over-seasoned. Round 2 - The prawn skewers were nice but a bit oily. I like the tiny little crab legs. Very sweet and meaty. I suggest not wasting time with the baked scallops which were kind of disappointing. There's not a whole lot of places that offer oyster kilpatrick with their weekend brunch so it was a real pleasant surprise that Bostonian does offer it here. However, I wasn't happy with the fact that they stopped refilling it midway through the brunch (more on that later).Braised abalone - this was seriously good. Another pleasant surprise.After several rounds of non-stop seafood, I finally threw in the white towel and started getting ready for my main course but right before that, some complimentary dishes from the kitchen.Porcini soup was not nearly creamy enough and I didn't like the addition of barley there. When I'm having a buffet, the last thing I want was to use up my stomach space for stuff like barley.Baked crab meat with sea urchin - This was much much better. I wish they could provide unlimited supply of these at the buffet counter.Foie gras toast - Not bad but the toast was a little on the hard side.Fast forward to my main course. I had this Dijon mustard-crusted beef mignon with chorizon hash, roasted corn flan and pepper jus. It was done exactly as they were instructed, medium.Dessert was a variety of magnum ice-cream bars in different flavors.Now I want to talk more about this brunch experience..... For the premium price that they were paying, I fully expect all the dishes to be refilled periodically but that was not the case at all. Certain dishes such as the baked oysters were never available except for the start of the brunch (when this photo was taken) and the same goes for other dishes like prawn skewers.There were definitely enough waiting staff to handle a half-full crowd but for whatever reason, my glass was always more than half empty.For about $600 per head, there were plenty of choices for a good weekend brunch in the city. I had pretty lofty expectations coming in for the revamped Bostonian but came away slightly disappointed with their efforts. 相隔數月,朗廷的Bostonian終於翻新完工,在八月下旬重新營業。為了慶祝食店重新開張,於八月份前來用膳,除了可以享有七折的優惠,還可以參加即場的遊戲,贏得額外高達八折的優惠。推廣的優惠期僅得兩個星期,肯恩趕快調動時間表,夥同仮面Sky到來一窺食店的新貌。送走了The Bostonian,食店換上了新的名字:Bostonian , seafood and grill。酒店官方網站就連食店舊有的中文名稱-美岸海鮮廳-也一併删走,誓要與過去來個一刀兩斷。進入酒店,沿扶手樓梯向下走,尚未來到地窖入口,已開始感受食店到跟以往截然不同的沉鬱風格。幽暗的燈光,以木及水泥為主的裝潢,完全把食店推向更時尚更高檔次的格調,一洗以往的老氣風格。昏暗環境配襯桌上燭光,晚餐更富fine dining的情調。不過跟以往類近的是,食店依舊保留了對藝術畫作推廣的熱衷。店內牆上依舊掛上不同藝術家的畫作作品,配搭店內陰暗的風格,更富當代藝術的風味。全新的食店Aa la carte餐牌,三份二的供應菜式以海鮮為主,對海鮮的烹調方法變得更為講究,尤其在生蠔方面,除了新鮮生蠔即開即食,凍蠔與熟蠔還有各三種的煮法。不過Set dinner的餐牌就取消了,不知道將來的日子會否重新加入。很多食店喜愛在食店重新裝修之後趁機也讓餐牌食物的價錢翻一翻,不過肯恩對比過舊的餐牌,新餐牌的菜式價錢跟舊餐牌類近的菜式基本上沒有改變過,值得一讚。既然食店繼續以海鮮為主打強項,是夜便點來了數道海鮮菜式一試。點選過食物後麵包先送上來。麵包款式跟以往差不多,以往肯恩曾評論過上桌的麵包不夠熱,這點在是夜的晚飯終於得到改善。上桌的麵包帶有微温,令麵包的味道更為突出,塗上牛油後亦更能充份帶出牛油的香味。跟麵包送上來的時候還附有餐前小吃,這應是食店重新開張後的新安排。餐前小吃是茄子芝士卷。茄子竟然做出了爽脆的口感,捲着內裡軟心的芝士蓉,味道清新有驚喜。兩道頭盤的上菜速度都很快,品嚐了一半的麵包已經上桌。雖然是頭盤菜式,但這道帶子的煮法複雜,味道層次感豐富,非常出色。帶子是珍寶Size, 上面舖上混有辣椒的芝士去焗,份外覺得帶子惹味。帶子厚度十足,吃落份外覺得彈牙可口及滿足。菜式另一令人驚喜的地方,是伴帶子所用的配汁。中間的洋葱以醋去調味,味道醒胃帶酸,而外層的蘸汁夾雜了數款的香草及豆香,味道調得十分獨特,帶子蘸上這種獨特的蘸汁鮮味更為突出。一式兩件的蟹餅,外層兩邊煎得金黄,擺盤與賣相均不錯。切開蟹餅,一絲絲的蟹肉奪殼而出。蟹肉比重差不多佔了蟹餅九成五以上,啖啖肉很是滋味。外層早正經高溫煎煮下令蟹肉鮮味封鎖在內,沒有沾到外面的油份,所以一點油膩感也沒有,做到外脆內軟的效果。為了要做到蟹餅不易變型,蟹餅口感都會較乾,所以一般都會伴蛋黃醬同吃。這裡的蛋黄醬還添加了墨西哥辣椒粉,令蟹餅更覺惹味。主角三文魚的份量十分巨大,一個人吃其實十分吃力,兩個人去分享似乎較為恰當。一大塊三文魚去烤,對於生熟度的控制需要一定火喉。切開三文魚,熟度平均,三文魚外脆內軟,魚肉部份特別油潤肥美,脂香撲鼻。跟三文魚伴碟的還有少許薯蓉,薯蓉上面再伴上海膽。可惜份量較少,有點到喉不到肺的感覺。菜式用了大量青醬,不過青醬味道做得有點兒過鹹,若以麵包或意粉佐醬品嚐更為合適。相較三文魚,鱈魚的肉質更為幼滑,入口即溶,魚肉味愠婉細緻,充份享受深海魚的滋味。大蜆雖是伴碟配腳,但幸好鮮味沒有被青醬蓋過,不失爽彈的口感。由於頭盤及主菜的份量頗大,吃完已足夠飽肚,甜品方面只好點其中一份跟Sky去分享。不過上桌的朱古力甜點,份量其實足夠二人享用有餘。基本上把朱古力甜餅一分為二才是普通甜品店內甜餅的正常份量。過去吃過食店的甜品,感覺太甜。但今次朱古力甜餅甜度適中,配襯檸檬雪芭不覺漏滯,不過底層的榛子脆米仍嫌做得太硬,要使勁用餐匙痛敲才可以破開底層的脆米餅去進食,吃得不夠痛快。先前提及過的現場遊戲,於結賑時才進行。參予者需要在十秒的時間內用釣竿捕捉遊戲裝置內的小魚。每捕捉一隻小魚可以享得額外5%的優惠,最多捕捉到四條魚的話便可以享用額外20%的優惠。肯恩近期疏於練武,最終只捕獲一條小魚,全單總共享用了七折加5%等於六五折的優惠。送舊迎新,新店保留了美式食肆大份量的風格,但在煮法調味的細節上顯得更見用心細緻,配合更富現代感的裝修與燈光佈局,相信絕對有能力吸引一批新的食客捧場。 continue reading

慶祝太太生日,Open Rice 纲上訂枱時己註明「生日」,再致電服務員訂了生日牌。在確認訂枱時也再三提醒服務員此安排。20/6(Tue) 到餐廳用完餐,遅遅未有發現此生日牌,埋單後查詢服務員,解釋說已準備,但忘記送上。高級經理 Kelvin 回覆電話說 'sorry, sorry, lunch already finished, can't give you another cake. Hope you can visit us in the future。以一間五星酒店來說,此過失絕對不能接受的!用餐發覺日式八爪魚片有點變味,向在場廚師反映,但毫無反應,更速速走開。枱上吃完兩 round 食物,兩個碟子十分鐘後始有人收。待應散慢。餐廳已幫襯十多年,發覺食物質素和服務質素極速下降(凍琵琶賣相和味道奇差)!就價錢、食物質素和服務看,,不久將來也不會再光顧了! continue reading

跟朋友在這餐廳聚會。入口非常隱蔽,在酒店大堂側面的小門步行下樓才到餐廳。內進後地方舒適,我們一行四人,安排了一張大的卡位,但吃自助餐不是太方便。出到自助餐bar枱取食物,令我十分驚喜,沙律選擇有很多,也有刺身及壽司,意想不到的是有生蠔及紅酒鵝肝。生蠔新鮮肥美,鵝肝味道濃郁。主菜選擇也多,待應細心介紹每項主菜,我們各人也點不同的食物,以便大家分享。雖然主菜份量不多,因為之前吃了不少前菜,所以也覺很飽,加上味道一流,我們也能把食物全部食清。最後,不得不提甜品,雖然只有2項選擇,但每樣也造得出色,芒果布丁甜度適中,朱古力脆皮雪條配雪芭,雪芭的酸味配雪條的甜味,十分匹配。食完這餐立即計劃下次再來 continue reading

朋友介紹在此食brunch,很有驚喜,自助餐bar竟然有生蠔及鵝肝等貴價食品,仲有不可缺少的各式沙律及刺身,新鮮好味,單是自助餐bar而令我食飽。以為會吃不下主菜,幸好主菜份量不是太大,加上好味,我也可超額完成。最喜歡杏片三文魚,杏片焗至脆身,竟然與三文魚出奇地夾。之後再來一客甜品,實在太好吃,忍不住把它全清。我的減肥大計又失敗了值得一讚是服務員的態度,詳細講解每項主菜及甜品我們要求侍應為我們拍照時,他甚至取出手機為我們打燈,讓我們學習了專業的攝影技巧。 continue reading
