香港自設廠房 一流「韓式熟成牛排」
bong 設於紅磡嘉里酒店內,遠眺紅磡碼頭海旁,氣氛情調一流。餐廳主打「韓式熟成牛排」,在香港自設廠房用牛肉本身的天然酵素在120天裡熟成,讓肉質嫩滑多汁,甚至媲美一級韓牛肉質。bong 主要用美國中西部伊利諾州的「Aurora 穀飼黑安格斯Prime 級牛扒」,使用的酵素比一般強勁3倍外,120天的熟成期也比坊間的30至60天更久,讓肉質更軟嫩。

除了「韓式熟成牛排」外,bong 也有多道主打菜。先是主菜-「意式章魚沙律配芥末醬」、「藍鰭金槍魚刺生配芥末醬」都是開胃之選。bong 的麵包也是每天新鮮製造,相當鬆軟。

主打菜有「熟成雞胸肉釀鮮蝦、蘑菇和西蘭花」,嫩滑雞胸肉一炸一煎兩食,非常香口;另有「香煎銀雪魚配藏紅花忌廉汁」滑口忌廉汁配上新鮮魚肉,口感幼嫩。

認識我的人都知道我是食肉獸,無論是燒臘檔的燒肉,鐵板牛扒,東坡肉,甚至煲湯的豬肉湯渣,我也一樣可以吃得津津有味,最近好朋友問我有沒有興趣試試乾式熟成牛肉,雖然價錢會比一般牛扒稍貴,但我一向抱着要善待自己的心態,試試又何妨!一個風和日麗的黃昏,乘船往黃埔,夕陽映照海上,金光閃爍,迎著微涼的海風,感覺到秋天已俏俏降臨,這是我最喜愛的季節。餐廳就在紅磡碼頭附近,在一間新酒店旁,也許開業不久,人流不多,餐廳環境優雅恬靜,座位舒適,又可以欣賞到維多利亞港景色,餐廳一角的雪櫃內擺放了多種乾式熟成牛肉,有肉眼,西冷,L骨牛扒等等,讓客人可多些了解擺放不同日數熟成牛肉的狀況。原來這是一間由韓國人主理的餐廳,用了三年時間鑽研並於韓國取得專利的熟成技術,熟成過程對優質牛扒來說,更能提升味道,因此餐牌中主打食品是乾式熟成牛扒有六種之多,價錢由$450的280克牛柳至$1150的950克戰斧牛扒不等,除牛扒外也有頭盤,湯,沙律,意粉等,還有三款晚市套餐,分別是$640, $760及$1100,我們都選了中間價的B餐。首先送來了麵包,旁邊有牛油,橄欖油和黑醋,烘得暖暖的法式麵包,外皮香脆,內裏軟熟,一款還有黑水欖,在微涼的天氣吃一口塗滿牛油的暖麵包,感覺比兒時用一片方包捲些白砂糖吃幸福得多。套餐的第一道菜是 Corn cream soup with almond, cheese croutons,粟米忌廉湯名字雖然普通,但無論賣相和味道,與港式西餐廳的,實有天壤與雲泥之別,首先當中是不會見到任何一粒粟米,但口感綿滑,粟米的味道濃郁,湯面放了少許脆杏仁片,伴一片烘乾芝士的薄麵包,效果提升了不少。第二道菜是 Steamed scallop & shrimp mousse with panfried scallop,擺盆講究,碟的一邊是蝦和帶子,琢成蓉,蒸熟成小餅狀,另一邊是煎帶子,碟的周邊擺放了食用花朵,非常悅目,味道和份量方面較能取悅愛美的女性。一個套餐,好像吃極也未到主菜,接着下來是Duck breast salad & simmer apple with red wine,有兩片鴨胸,中間釀了菇菌,旁邊有一碗蔬菜沙律,另有一小碟酸乳酪,我將酸乳酪拌入沙律吃,鴨胸肉質幼嫩,鴨味濃而不膻,沙律中另有紅酒醃過的蘋果,開胃怡神。千山過盡,想必下一道便是主菜,然而,送來的竟是鹽,長長的木板上有三種鹽,分別是海鹽,喜馬拉雅山粉紅色的岩鹽及海藻鹽,而另一塊木板盛有酸青瓜,芥末和紅酒汁,都是用來為熟成牛扒調味的。千呼萬喚,主菜終於出場,Dry-aged rib eye steak & king prawn,驚歎分量之大,一件約有八安士肉眼牛扒,一件扒大蝦及一大堆薯菜,種類之多是我吃牛扒以來最多的一次,有美國焗新薯,質感較一般美國大薯仔滑,上面還放了很傳統的配搭---酸忌廉,相當好味!蔬菜方面,有蘆筍,扒茄子,雞髀菇,南瓜,青瓜,甘筍,番茄,鮮嫩多汁,吃得出是舶來品,最特別的是一件深紅色像寶石般的燴蘋果,原來是以紅酒加肉桂烹煮而成,微酸帶爽,芳香暗送,少少一件足可解肉之膩。放中間的扒大虎蝦,少說有八吋長,上邊鋪天蓋地下了白酒忌廉汁,大虎蝦愈大會愈爽,肉質結實,很新鮮,味道甜美,配忌廉汁也得宜。最後要品嚐期待已久的的肉眼牛扒,是用了美國牛扒放零度以下熟成了六十天,吃牛扒尤其是吃熟成牛扒,烤至四成熟是最理想的,既不至茹毛飲血,也保留肉質的嫩滑,外層是香脆的,經過數十天的熟成期,肉質已改變,首先將水份從牛肉的肌肉組織來蒸發出來,從而令肉質和油花更集中,另外牛肉本身所含的蛋白酵素會慢慢分解牛肉纖維,肉質會變得更軟嫩,此外,牛扒的酵素會增加四倍以上,同時亦會增加不飽和脂肪酸,相對飽和脂肪算的含量卻會減少。肉眼牛扒入口感覺肉質柔軟,肉有幽香,肉味甜美,蘸點些岩鹽,肉味大大提升,始終生活中不能缺少鹽。偌大的主菜,慢吞細嚼,好不容易才吃光碟上的一切,侍應清理碟子時詢問食後感,並告訴我熟成牛扒之價錢稍貴原因,原來經過熟成後的牛肉外層表面已變乾,廚師要將外皮切掉,只要內裏的部份,損耗了一部份,怪不得是這麼矜貴!接着下來侍應送上紅桑子雪葩,酸酸甜甜的,正好洗滌口腔殘餘肉類的味道,準備迎接下一道菜,廚師手工意粉,簡單用了番茄醬,羅勒等煮成,煙韌的口感與一般現成的意粉不能相題並論,雖然已經很飽,但也不想糟蹋廚師的心意。甜品是朱古力撻和山核桃撻,雖然小小兩件,但味道十分濃郁,配一杯濃厚沉實的咖啡,人生一樂也! continue reading

大部分熱門想試的餐廳都full booking(星期二晚都full真的好奇怪)咁就係OpenRice 搵到呢間,見佢新開環境又唔錯就試下,希望唔會太失望。(我地網上book,但得8點45揀,呢點非常不滿)去到酒店環境唔錯,行到餐廳就有小小擔心,人唔多,三四枱,似係酒店住客,但都到咗又餓點都俾次機會試下咩料!餐廳主要食牛扒,見有dinner set就揀了B &C(太難揀,食餐就基本嘢都試到)湯正常,前菜用心好味,沙律普通,牛扒好好味(真❤️)肉質鮮嫩有牛味(絕對靚牛)配菜都非常好,食完已超飽,點知仲有意粉,好彩份量係三口左右,口感外軟內硬好適合我口味👏👏👏最後食埋甜品,完美唔錯的餐廳,就價錢比較貴,人均1千左右 continue reading

Alex Chui, [13.12.18 23:16]This little secret restaurant lies next to the harbor. If you have trouble finding it, it is right at the Whampoa, Kerry Hotel. I and a friend decided to have a what-the-hell gathering for some delicious treats. The pumpkin soup, dry aged ribeye steak, and cranberry sorbet were exceptionally good. Haha, in this chilling weather! Whats better to do then to DRINK and enjoy our pre-Christmas meetup! High recommended for people who are looking for some good food, some space and superb customer service. As for transportation, there is MTR station Taxi at night. If you feel like taking a walk. 一直很喜歡去kerry hotel 到今天才發現🈶️這家意大利🇮🇹餐廳其實是韓國fusion 意大利走入去 完全沒有人 真的幾驚但頭盤olive 麵包已經很有驚喜賣相真的不錯 頭盤跟餐湯也up to standard看了其他食評原來牛肉才是主菜可惜我們今天是為了吃薄餅而來的下次可以來試試他們的韓牛 看看是否真的好吃😋我覺得這裏食物不錯環境不錯服務也不錯只是真的很少人知道有這個地方這才是真正的敗筆期待再來試試他們的牛肉希望他們繼續支撐下去 continue reading
