situated in IFC this French burger joint is all about the burgers and how they are cooked with Frnech flair. with the big open grill top with the chefs busy preparing each burger to perfection. the hospitality and service are great with the chefs and staff striking up good conversation. the burgers were big and juice and done medium. not greasy but absolutely juicy , with juices spilling out with each bite.

麵包好大個又厚身!表面有一粒粒芝麻粒,質感感軟熟!

我點了雞肉漢堡,雞肉好dry又硬喎
藍芝士又咸,雖然配上麵包,可以減輕咸味,但雞肉未免太硬吧,中伏!


朋友點的牛肉漢堡,我們選了5成熟,我吃了一口,牛肉好juicy好多肉汁
,好味道啊!

心想...我唔想吃返我個硬雞包...


真心覺得m記的板燒雞扒好味過我個法國雞漢堡!

去完嘉年華已經筋疲力盡, 再由碼頭行回IFC已經沒有力氣去搵餐廳食晚飯。突然望到有間名叫BigFernand的漢堡包專門店, 從門面到內部都滿有特色, 飛撲入去休息休息。原來這間BigFernand是法國的過江龍而且大有來頭。早於2012年在巴黎開設了第一間法式漢堡包專門店, 短短幾年已開到多間分店, 今年再開到香港。室內以啡木色來做主色,天花有吊燈。枱椅是communal table 比較causal; 店內放著輕快的音樂,氣氛輕鬆, 如置身外國的小店的感覺。BigFernand 自訂9條對食物的質素要求, 如採用法國原件芝士即叫即切, 薯條及dressing自家製…等; 可見店方對食物的認真。店方提供6款以不同新鮮材料製成的漢堡: 牛肉、小牛肉、羊肉、雞肉及大磨菇。漢堡有趣的是餐廳棄用法國肉類, 改用澳洲食材。客人還可以自行組合喜歡的漢堡, 加甚麼、加多少,客人話事。但是menu內的菜式及配料只有法文及英文, 有些食物的專有名稱真不太明白。快餐店形式, 自行到Cashier選購食物, 自行搵位後再領取食物。每個漢堡要百多元再加$50轉套餐, 即多薯條及飲品。差不多廿蚊歐羅的快餐店漢

Big Fernand用上無激素、抗生素的澳洲草飼牛肉、煙肉、焦糖洋葱、Raclette芝士和自家製的BBQ汁。肉的份量還真的算不上是塊「扒」,口感和飽足度跟美式漢堡比較有很大差別,而且牛肉味不太濃郁, 反而炸得脆口的煙肉味道更加突出。另外自家製的BBQ汁惹味, 但是味道濃厚跟不淡味的澳洲草飼牛肉不太匹配。反而配上煙肉更加可以帶出煙肉的油香味。

後感: 再筆者心中, 法國人追求的是高品味而且精緻的美食, 以為法國只有法包, 不會有漢堡包這類低品味的街頭食品。第一次品嚐的法式漢堡包, 發現他們少用蔬菜番茄, 芝士用上重口味的藍芝士, 醃菜款式比較多,如焦糖洋葱、番茄乾等。相反美式漢堡包卻以蔬菜番茄, 車打芝士及醃酸瓜最主。另外, 有趣是法國人食漢堡包都配以紅酒及lemonade等特色飲料, 貫徹法國人高品味的特點。

另外, 近年在香港的以美式漢堡包為主的漢堡專門店越開越多, 漢堡包越來越厚身, 餡料都越來越豐富, 用上鵝肝龍蝦這類矜貴食材, 有些偏離了漢堡包的原有味道及精神。反而BigFernand沒有浮誇的材料及厚度, 回歸簡樸原始, 追求新鮮食材為主的漢堡包。

每人差不多花了$170 食過法式快餐漢堡包, 老實說真的不太值得。不過一生人試過一次已足夠。

Things all started back in 2012 for Big Fernand when the little burger joint first opened at the border of the 9th and 10th arrondissement in Paris. That's a very impressive lineup of burgers they've got here. On top of the different types of beef burgers, they also have chicken, veal, lamb and a vegetarian version with portobello mushroom in the mix.

This French burger joint only uses the best products and ingredients in their burgers, highlighted by the Australian graded pasture fed beef in their beef patty which is absolutely hormone and antibiotics free.

Apart from the medium rare beef patty, Le Big Fernand also features sun-dried tomatoes, parsley, Tomme de Savole cheese and a specially homemade cocktail sauce. The key here was the Tomme de Savole cheese which was a lot richer and more buttery comparing to the cheese used for American burgers.

這亦是一眾漢堡選擇中材料最充實豐富的一個 ---- 有來自澳洲無激素及荷爾蒙的草飼牛肉、加上煙肉、raclette芝士、焦糖化的洋蔥、細香蔥以及自家製的BBQ及咯嗲醬汁,層次味道兩者皆甚豐盛多彩。牛肉味本身還濃的但其texture是略帶偏乾嚡,幸好醬汁之豐盈、源自洋蔥的甜味及青蔥碎之香是異常突出算是瀰補了肉汁的欠奉;麵包身方面是相當的軟綿討好,熱熱的放入口的確令人口腔極為舒服受用....

舅仔是一個不折不扣的羊痴,故此眼前放著這個以羊肉作主打的L'Alphonse,當然成為了他的主菜了....

同樣以來自澳洲的全天然飼養羊腿肉製作,配菜方面則用上了較少於漢堡出現的燒茄子及莞莤,著實是蠻特別的漢堡饀料搭檔。羊肉是沒有想像中那樣的重羶味,對於喜好羊食的粉絲來講味道可能有點騷不著癢處 (起碼舅仔是這樣的認為);茄子燒得軟爛和羊肉的質感合起來倒是相當匹配;醬汁的配搭則是味帶少許甜杰的法式蛋黃醬,和肉配合起來甜甜香香的也讓人討好....

最後的Le Victor,則是以小牛肉為料的....

若以肉質而論它是最幼嫩的但肉味就最輕。有別於以上兩種漢堡採用的芝士類別,這個小牛漢堡用的卻是超濃烈及更creamy的Fourme d' Ambert藍芝士,如此擁有濃厚風味的芝士與小牛肉相對的"清淡",再配上焦糖洋蔥的惹甜味道上雖好像存在著極大差異但合起來吃卻有感異常合拍,化學作用是極大的....

有漢堡在的話,又怎能沒了它的好拍檔炸薯條呢 ?

這薯條的缺點是吃不著新鮮現炸的剛出爐貨色,入口只是呈微暖而已但尤幸它仍保持到脆口而不膩。可以想像到若果能嚐到即炸的滋味理應更佳的....

最後配上一小盒的superberries juice及屬自家品牌的天然有氣檸檬水,前者用上包裝來貨的濃縮果汁感覺並無過人之處;相反後者則非常清爽冰涼喝後盡清漢堡應有的膩感,令人有一種如沐春風的感受....

What's the difference between French burgers vs. American burgers? It's all in the cheese! Big Fernand first opened in Paris in 2012 and has since made its way over to HK in the IFC Mall. To be honest, I haven't had French burgers before and in fact haven't heard of such a thing since I've always thought of burgers as an American invention, so I was intrigued to see what the difference is between French and American burgers. The restaurant was decent in size with plenty of seating and operates like a fast food model where you order and pay first at the counter, and then the food will be brought out to you in a tray at your table. You can order one of their 7 house burgers or compose your own with customized meat, cheese, bread and sauce! We ended up trying 2 of their most popular burgers for our first meal here.

The Le Big Fernand ($95) is the signature burger and uses Tomme de Savoie cheese with Australian graded pasture fed beef patty, sun-dried tomatoes and homemade cocktail sauce. With the first bite, it became obvious that the cheese came through as the main star here instead of the beef patty. It's not to say that the beef patty wasn't good but the rich cheesy flavor takes prominence instead. While it may not be for everyone, French cheese lovers will definitely appreciate the burgers here for sure!

The Le Bartholome ($118) with Raclette cheese, bacon, caramelized onions, homemade barbecue sauce and homemade cocktail sauce was my favorite of the two with more balanced flavors! The cheese wasn't as strong here while I loved the sweet barbecue sauce and crispy bacon.

套餐來了,我選的是 Veal 牛仔肉漢堡 (Le Victor),加薯條。在英國,你食的是 Chips,在法國,你食的叫做 Fries,而麥當勞及一眾連鎖快餐店用的幼版薯條,就是 French Fries。這兒的法國條比起麥當勞版的麥當勞粗少少,入口的薯肉質感也實在好多。

Burger,店方事前細心問過我要不要 cut half。我要求切半,方便食用。先說其麵包方面,這漢堡用的包是香口的芝麻軟包,拿上手的感覺是軟綿綿的,包看似很大,但鬆軟的質感,絕對不會佔太多胃的空間。

我要的,是牛仔肉扒,伴上了法式的藍芝士,焦糖洋蔥,同店方自製的甜蛋黃醬,叫做 Tonton Fernard,令到整個漢堡帶著一樣很獨得的甜味。而牛仔肉,是來自澳洲的,入口十分之嫩滑,而且漢堡扒不會太過結實,很腍,而且有入口即溶的感覺,很是好。

we ordered 3 burgers, 2 medium and 1 well done. We received exactly the opposite. Well dones were almost burned so you can feel the taste of grill. there is no seasoning and no taste at beef. Fries are ordinary macdonalds fries with nothing special spices on them. Totally wont worth to pay over 100 hkd for a burger!

I have to say I am a burger girl girl.Had a little time for food before movie tonight and Big Fernand jas pop in my mind  Love the casual atsmophere there.As beef lovers we both ordered Le Bartholome ( $115).  Which was one of the most popular choice there.  The beef was juicy and went very well with the cheese.
