京菜略分兩大菜系魯菜 以及宮廷菜宮廷菜以繁複工序以及奢華食材作為主, 而且以地理位置而言 北京應該不會有海鮮, 但是在宮廷菜就會出現海產以表示尊貴,所以蠔油這類的調味也會比較普遍魯菜呢 跟宮廷菜比 就是街邊小吃啦, 朱門酒肉臭,路有凍死骨的概念 (我知道這首詩是在講長安 不過這裡也合用)我們心目中的麵點,什麼餡餅,烙餅,燒餅那類的 簡單來說 "吃粗飽"的 就是魯菜啦這家餐廳讓人感覺就是很豪氣一開始的是前菜冷盤這邊最好吃的竟然是炸蝦,可以吃的到油香, 感覺是新鮮的油 而且蝦來的時候還熱熱的 所以炸皮還很蘇 非常好吃沙拉的部分也不錯 調味剛好 不會太酸也不會太甜再來就是一大經典之一: 北京烤鴨第一點要講的就是 它的分量很夠 每個人都吃一份之後肉還有剩北京烤鴨有三個要點: 皮要脆, 肉要濕, 甜麵醬要好吃我能說的就是 這家店不錯 叫做大北京 而這道烤鴨沒有砸了自己的招牌 上述三點樣樣達成用中低溫慢火烤出來的雞 天然的讓雞皮下的那層肥油液態化 烤的過程中會自然滴出 所以皮跟肉會些微分層 造就出皮好像是炸過的脆感特別點出他的甜麵醬, 明顯不是隨便買或是做的, 因為她多了一層梅子的香氣 感覺有加分 continue reading

話說屋企人都好鐘意食片皮鴨,咁就揀左依間餐廳慶祝母親節。叫得北京老家裝修果然好有老北京既味道,窗花牆身以至餐檯餐椅都係以深木為主調,未上菜環境氣氛已經加哂分!星期六午市時間黎到竟然好冷清,難得星期六有午餐提供,而且選擇好多,價錢亦都抵食!嗌左個小籠包,皮薄餡靚又多汁,味道屬水準之上!另外嗌左唔同既小菜,涼瓜煎蛋、乾扁四季豆、生炒骨,味道中規中矩,無咩驚喜。到左重頭戲片皮鴨,嗌左一整隻,份量感覺唔多,但賣相非常油光飽滿,好吸引!揀左最大塊鴨皮包黎食,一食落鴨皮既油脂爆哂出黎,果種油香完全充斥住係我口腔裡面,再加埋醬料同配菜,簡直一流! continue reading

一行十人有大有小吃晚飯,地方不錯,坐得幾舒服,點了北京填鴨,份量比較少,魔魔皮比較厚,屬一般。小籠包有湯汁,可以。银絲卷未能做到一絲絲,有點不正宗。做得比較好的是糖醋魚,甜酸度很平衡,甜品拔絲蘋果,高力豆沙做得不錯,蘋果有咬口,外脆內軟,好味! continue reading
