餃子,點餐紙上無提過蒸煎還是炸,等待時真的十分期待,原來係炸餃子。新鮮出爐泛著油光,餃皮奇脆無比,餡料充足脹卜卜。菜肉塞得滿滿,食得到菜甜肉香,還有少少肉汁,沾上果醋能減低油膩感更可口。

鐵板鱆魚粒,塊鐵板呢?可能午巿特別為我做,多謝師傅無拒絕我 特別要求。感覺似微波爐叮出黎,鱆魚粒雖然爽脆卜卜聲,但叮到乾爭爭。甜醬油跟鱆魚燒一樣,要趁熱食,放涼變得油膩。

炸雞,其中兩件太乾太燶太硬,雞皮脆到薯片一樣索索聲,一咬便粉碎。另兩件較淺色正常得多,皮脆肉嫩而且雞汁濕潤慾滴,捲埋芥辣更開胃醒神,點解無鮮檸角既?

焰鳴叉燒拉麵,硬太麵走蔥 3 倍唐辛醬加蟹柳帶子刺身,已包括味蛋紫菜竹筍櫻花蝦,五光十色非常豐富!厚切肥美嚥韌膠彈五花腩,油脂甘甜不膩不滯,豪不猶豫大大塊啖啖肉,勁滿足幸福!味付糖心蛋清香不濁不咸,蛋黃味濃郁漿漿黏黏大愛!日本蟹棒雙頭尖好易認,實淨質地魚肉清甜不過火。竹筍爽脆,無渣味道獨特。帶子刺身切薄三片質感廷廷,鹽漬所以咸的?沒有鮮甜味,怪怪的。

撈勻三倍唐辛醬前,先來兩口原味辣湯。味淡水汪汪有微微辛辣味,隨即讓肉鬆唐辛醬與湯汁融合,變得厚厚黏黏糊糊。太麵捲著肉鬆掛著大量辣湯,大大口連湯帶麵細味,額頭汗珠冒出,辣得興奮!辣味濃烈有層次不單調,比達摩更出色!我要硬麵的,依個軟硬度只屬普通未能滿足到我,如果點普通應該會更腍。美味辣湯搭拉麵夾著肉鬆櫻花蝦更添火花,轉眼消滅!湯汁都差點給我全部盡收肚裡去。

黑蒜油豬骨湯豬軟骨拉麵,硬直麵走蔥 3 倍唐辛醬,竹筍佳爽脆有少少渣,味付蛋可口回味。先來原味黑蒜湯,蒜味未見突出,被濃濃豬骨湯所淹蓋,幸好還有陣陣黑蒜香甜味。堅多豬軟骨,足足 5 大舊!鬆化肉質連住脆卜卜軟骨,咬到咯咯聲抑揚頓挫,悅耳有趣過癮!濃郁甜醬油味道,消減兩舊已有點膩。硬直麵竟然比硬曲麵更好食,質地更結實廷身有咬口,可以再硬一點,硬麵比軟麵能帶更多湯汁。大大注直麵掛上唐辛醬連大量湯汁大大力狂啜,惹味辛香,湯汁濃郁甜美,滿足滿足!再來連湯帶麵齊齊掃入口,湯汁灌得嘴仔滿滿,擁著拉麵咀嚼滾動非常,湯汁再熱一點會更舒暢!

一鳴叉燒拉麵,硬直麵走蔥 3 倍唐辛醬加櫻花蝦,一鳴拉麵即基本豬骨濃湯。先來幾口豬骨濃湯,極濃厚杰黏稠豬骨湯,香醇甜美還帶著霸道豬肉味,隨後撈埋辣醬再品嚐。甜中帶辛,微辣惹味,飲到舔舔脷。直麵夠硬富彈性有嚼勁大愛。帶湯力超強,每啖水潤多汁,捲埋鬆軟肥叉同吃,依隻直頭係回鍋肉味道,十分有趣和味!

廣島蠔叉燒豬骨湯拉麵,硬直麵走蔥 3 倍唐辛醬。輕烚廣島蠔超勁腥,嫩滑多汁滴滴!我自家烚必定要烚到微縮去掉腥味才會享用。豬骨湯沒有蠔味,明顯分開煮的。奶一樣的雪白,原味亦似奶一樣香濃甜味,撈勻辣粉再來幾口,香辣兼備黏黏厚厚滋味無窮!廣島蠔實在太腥,嘗試跟不同食材混合希望能掩蓋其味道,完全無效!頂硬上食晒去。

黑松露醬忌廉湯叉燒拉麵,黏牙的曲曲硬太麵捲著紫菜捲著木耳絲,個湯硬係覺得似足忌廉蘑菇湯,跟日式拉麵完全唔夾,似食緊忌廉蘑菇意粉。湯汁厚杰,濃到有點濁欠清爽,只是有點膩,味道不錯的。

磯燒鮑魚豬骨湯拉麵,硬直麵走蔥 3 倍唐辛醬加櫻花蝦。硬朗結實的直麵掛湯力特强,黏滿辣椒粉狂啜,興奮刺激胃口全開!薄薄的豬骨湯尚算甜味,加入 3 倍唐辛醬即時濃稠更惹味!瘦猛猛的叉燒給我混濁醬油味,並不討好。馬虎地用拉麵捲住美妙多了,櫻花蝦有著不少功勞,使得湯汁程現海味味道。磯意思係海邊的岩石,稱磯燒表示保持原汁原味的吃法,不過此鮑魚仔給不到這種感覺,幸好鮮彈帶有醬油味道。食過幾次限定拉麵最清爽最好味就係依碗,首次全部湯清掉,一滴不漏,恭喜恭喜!

燒墨魚咀,生水味濃,墨魚味弱,過份沖洗欠缺鮮墨魚味,質地勁爽脆。醬燒雞腎,燒粒粒太細粒,食得不夠豪邁,全熟爽爽腎味香濃,試試無妨。海螺串燒,燒粒粒螺肉,嚥嚥韌韌,淡淡然的螺味。燒原條鰻魚,跟蒲燒差天共地。塗上厚厚濃味甜醬汁,減輕一點會舒服一點。薄衣衣瘦削結實不肥美不鬆軟,魚皮黐牙,整體唔難食。

汁燒厚切牛舌,早前係紅磡食咖哩牛脷,成個脷尖隊出黎嚇死朕!眼前串燒都係成條脷隊出黎,好采無脷胎啫。堅大條呢!幸好清得脷胎乾乾淨淨,沒有太強烈的厭惡感覺。厚厚的熱熱的,軟塾綿綿有肉汁,不是爽彈類型,清香溫柔的醬油味不過份食得過。

雞皮串燒,獨特長條形雞皮,焦香薄脆,甘香油潤鳳脂飛射,美味不油膩。落味得宜,燒得非常出色!汁燒帆立貝,先來焦香微脆,後到綿濕帶子肉,雖平凡但味道不錯。

鹽燒秋刀魚,功力深厚燒得出色!雪藏秋刀亦保存得很好,肉質結實不霉。魚汁立立令,結實魚味香甜特濃,真的心滿意足!食得乾乾淨淨魚骨都損埋。魚腸魚脂非常肥美甘甜,忘記掉丟膽狀,直接嘴嚼膽汁爆開苦苦的。

汁燒雞翼,竟然有碳燒焦香,是我的錯覺嗎?皮脆肉嫩,咬開噴煙熱辣辣,唧上鮮檸汁,提鮮百倍!汁燒雞肝,次次都賣晒,終於緣份到食到咯,食得到也未必好。雞肝真係幾乾硬下,跟蔥花蒜蓉蒜片完全唔夾,還有陣陣羶味,羶味來自雞血。

大埔食肆林立,不過非連鎖日式食店不算多,太和火車站附近有幾間質素不錯,以大埔墟站附近來說,一鳴拉麵也是個不錯的選擇。交通婆為方便,距離大埔墟站大約10分鐘路程。食物的選擇也不少,並非只有拉麵。最後個朋友兩人分別叫了一碗拉麵,以及三個小食。先來黑蒜拉麵。滿滿的青蔥鋪在黑蒜油上,叉燒肥瘦適中,糖心蛋正常水準。一鳴炒雜菜( $42 )經常外食很多時候都缺乏蔬菜,所以冇朋友叫了一個炒雜菜。雖然份量不是太多,兩人可輕鬆解決,但是也不會炒得太淋,味道不錯。玉子燒( $62 )玉子燒整條分量足夠,火候控制不錯,上面鋪想一塵柴魚片,柴魚片隨着熱力擺動,樣子療癒。最後追加了一個唐楊雞軟骨( $38 )雞軟骨炸得很香口,吃完製是滿足。
