海老名沾麵🍜🦐一間好隱蔽的沾麵小店,其實佢就係麥當勞隔離💬,大家搵路唔好俾地址fake左行左入大廈商店街。其實間舖座位不多,夜晚去到等左15分鐘就有得食。款式主要係以蝦🦐沾麵為主,再加配不同調味選擇(有原味 醬油 味噌 番茄)。還有一款人氣牡蠣拉麵🦪(不過當日以售罄),下次有機會再試試。今次叫左味噌海老沾麵,配料已經包括兩片叉燒 一顆溏心蛋 櫻花蝦😋。 湯頭配搭味噌,味道非常濃厚,配沾麵十分合適,掛湯能力一流🤌🏻。麵質粗身,有口感的(但是對於我“軟面黨”來說,偏硬了點)😌。幾欣賞紫菜搭配脆脆再點湯呢個吃法,保留到口感至於有叫新奇。店家都有提供櫻花蝦醋,食到中途,可以試加入沾麵中,可以減少油膩感和令湯底變得清新。食到最後,再加上熱清湯入沾麵湯,飲返兩啖蝦湯prefect ending👅。份量對於女子來說真啲有點多,有180g沾麵,如果有份量選擇就可以避免浪費。湯碗的保溫可以再進步點,一半是湯底就開始變溫,食麵本人是比較喜歡熱辣辣的湯底♨️。整體感覺舒服,經過深水埗又想食沾麵就可以試試🍜。 continue reading

今日13:30順道經過海老名竟然比我食到最後一碗「牡蠣之怪」咁耐冇食,水準仍然保持到👍👍湯底鮮味、四隻蠔生熟恰到好處面底略硬彈牙有咬口,唔算掛湯醬油蛋流心,略嫌鹹了一點我最欣賞的地方是食到最後一啖麵湯仍是熱的👍👍否則湯凍了喝起來會變得比較膩 continue reading

今次去深水埗朋友細佬帶我哋搵食,一陣子無行過深水埗,呢度多咗好多特色小店進駐,呢日我哋就食咗一間沾麵店。小店門口位唔特出,就咁行過極之容易會Miss out,想去食嘅朋友要留意。麵店主打蝦湯湍占麵,三款湯底都係以蝦為煮,包括蝦湯醬油味、蝦湯味噌同蝦湯蕃茄,另外亦有限量供應嘅廣島蠔湯麵,店主話每日限量5碗,想試的話12:00就要去食飯啦!一行三人我哋叫咗蝦湯醬油同味噌味,叫好之後就會上一碟紫菜,上面有啲好似天婦羅嘅脆脆,店主話包住好似手卷咁食就ok。對於非常愛好脆脆嘅我嚟講,係超讚的口味!之後重點就當然係沾麵!首先出場係麵,麵夠粗,每一個位置都可以掛上湯汁,而家夠軟糯唔會太硬太淋,好食!湯汁真係無話可說,一送上已經見到碗麵面泛出蝦油,一啖呷入口即刻有蝦味湧出,應該用咗好多蝦頭煮湯,加上湯汁入面有櫻花蝦,成件事同蝦有更加大嘅關聯。食完麵之後,店家會為客人湯汁加入清湯,俾客人品味一下湯嘅鮮味,加入湯之後飲用又有另一番風味。 continue reading

Meter Chan旗下的日式食肆中, 海老名的原始狀態算是keep得最久的, 主打醫院時蝦味沾麵, 和在香港已經走向連鎖的一幼比較較有風味. 在沾麵湯上加上櫻花蝦乾, 味道濃而不鹹, 鮮味為主軸的情況下, 配搭上味噌和醬油, 前者較甜, 後者鮮味再多一點, 兩者中間也品嚐到些微辣勁, 味道層次豐富. 沾麵湯身不會太杰, 容易平均地沾在麵身. 麵身夠闊, 口感煙韌, 有兩個小心思值得表揚, 第一是叉燒以炙燒腩片製成, 微微焦香而又保持到肉質嫩滑, 第二也是我覺得更加重要的, 是治麵上碗前多餘的水份充分地撇乾, 這不但保持到麵身的乾爽, 也不會因為餘下的水份令沾麵湯汁而被弱化. continue reading

呢間小店離深水埗、長沙灣嘅主要街道都有段小距離,今次都係朋友帶路先去到果頭。聽講平時都要排隊,不過今次好好彩,平日午餐時段去唔駛等位。餐廳位置唔多,全部都係Bar枱形式圍住廚房坐,食客食完都好快離開,所以見到要等位都唔駛太擔心~Menu十分簡單,有蝦汁味噌、醬油、蕃茄沾麵同生蠔拉麵4種選擇,今次就試左蝦汁味醬油沾麵。蝦汁溫度都夠,唔會出現一浸左兩啖麵就成兜湯凍哂嘅情況,蝦味濃郁,亦有櫻花蝦、洋蔥、蔥花增加香氣。麵質地中規中矩,掛湯能力合格。叉燒份量夠哂多,原隻半熟蛋醃得入味同夠溏心,紫菜同天婦羅碎另上,鍾意食可以付費追加。整道味道都唔錯,但食完後都幾口渴,除左當場飲左幾杯水,之後仲灌多左支茶先OK返,另外價錢要$82-128,雖然同其他沾麵店價錢相約,但對比同區食店都偏貴,鍾意濃郁蝦味嘅大家如果經過見到有位都可以一戰~ continue reading
