話說同事帶我去吃完蛇竇後,就帶我步行至上環買皮蛋吃,其實由中環走過來,也要10分鐘嘛,我又沒說很想吃皮蛋,但聽我那同事說這裡是鏞記的酸薑皮蛋的皮蛋供應商,十隻有9隻是溏心的,於是我就半推半就走了過來。說起來這家店也頗搞笑,不開全閘做生意,總是小小的開一個鐵閘的門口來賣,令這家小店增添幾分神秘。這裡的皮蛋$15 / 4 隻,即平均3.5一隻,外賣時還像買雞蛋一樣送我一個膠盒,很有型呢! 當然最有型的還是我,在中環的甲級寫字樓,還要大模斯樣的叫3位女同事到pantry剝皮蛋,吃皮蛋,真的想起便好笑。這一隻皮蛋外型還是茶色的,結結實實。切開後真的流心呢! 我們4個人金蘭結義般一人吃半個,結果味道吃到盡頭有點苦,不知道是不是沒有酸薑的關係(早知應該到吉仔拿一包薑! ) ,不過除了溏心的效果外,其實沒有什麼特別好吃,令人不禁懷疑這裡是不是冒充的呢?

當然最有型的還是我,在中環的甲級寫字樓,還要大模斯樣的叫3位女同事到pantry剝皮蛋,吃皮蛋,真的想起便好笑。

切開後真的流心呢! 我們4個人金蘭結義般一人吃半個,結果味道吃到盡頭有點苦,不知道是不是沒有酸薑的關係(早知應該到吉仔拿一包薑! ) ,不過除了溏心的效果外,其實沒有什麼特別好吃,令人不禁懷疑這裡是不是冒充的呢?

Tea 後到了有名的順興行 , 這裡有傳說中全香港最好食的皮蛋,但舖頭很神秘, 不定時營業, 皮蛋話冇就冇, 今日買到算是好好彩~皮蛋是沒有穀殼包住的, 一拿出盒已很乾淨,在枱上敲敲, 還懷疑自己有冇拎錯了咸蛋? 因為 feel 到入面很有流動的感覺~開了殼, 證明了是皮蛋, 還有松花紋, 好靚!配上了砂糖及我自己醃的子薑, 嘩嘩, 這個子薑皮蛋就完成了~我們都大讚這溏心皮蛋的味道, 完全沒有一般皮蛋那種濃烈的氣味, 充滿了滑漏的感覺,在這炎炎夏日, 吃一口絕對有剎時消暑之效~咸蛋用來整咸蛋肉餅, 又是一絕!順興行的咸蛋原來不太咸, 放了整隻去蒸肉餅, 味道也偏淡口, 其實合我這個淡口人的心意~蛋黃是超超超讚的啊!! 我們從來都未食過咁軟心的咸蛋黃, 但絕對有足夠的咸香,好食得我一個人食兩隻都絕對冇問題, 如果唔洗擔心膽固醇爆燈的話~

材料: 百福蒸煮豆腐一盒、皮蛋兩只 (喜歡皮蛋的可用三只 - 味更濃) 、芫荽數棵

大多數人談起溏心靚皮蛋都只會說鏞記的最好,自香港有了台灣的「福記」及「渡小月」後皮蛋更多了選擇,但我始終覺得「順興行」的土生香港製造皮蛋最有水準。在此寸金尺土的城市,傳統店已是越來越少了,要多黠支持才能長吃長有吧!還有的就是買不到的人情味吧!

Came to buy some Century Old Duck eggs a few months ago as an appetizer at someone's house, at the recommendation of my Aunt. (Didn't even realise this shop is on Openrice! )One of the easiest explanations why I would come purchase 皮蛋 directly instead of eating them at 鏞記 is simple - while the Duck eggs are the same, the 酸薑 at 鏞記 is so stupidly sweet and missing any natural gingery taste behind the sugared water. One of the easiest explanations why I would come purchase 皮蛋 directly instead of eating them at 鏞記 is simple - while the Duck eggs are the same, the 酸薑 at 鏞記 is so stupidly sweet and missing any natural gingery taste behind the sugared water.
The solution is easy - either make the ginger yourself like a lot of people do these days, or buy some instant Japanese Gari version!


Warning: If you pre-cut the 皮蛋 too early before the dinner, they will start melting more and more and lose their shape as well as the just right half-jello like consistency, becoming a bit 'watery' after an hour in the open air! So CUT THEM ONLY AT THE LAST MINUTE! Sometimes, I don't mind eating a slightly less runny version either!.

本來是打算在街外吃午飯的,現在有了皮蛋鹹蛋,反正又過了午飯時間了,倒不如去快餐店買個白飯,回家整個金銀蛋飯吃咪更好。

順興行的皮蛋三塊錢一隻,除了一定是溏心外,皮蛋殼也是清理好的,一剝殼便可以吃,貴得很有道理。另外我也煮一隻鹹蛋,兩隻蛋分成四半,一個金銀蛋飯餐便呈現眼前。

這個皮蛋是近乎完美的溏心,有四分三個蛋黃是半流質的。蛋白深啡通透晶瑩,濃味甘香,碱味剛剛好,也不一定要用酸中和,有酸薑固然好,而我更喜歡點醬油送白飯,讓那碱香味淋漓發揮。鹹蛋不是順興强項,蛋白够鹹,但蛋黃不够油香。金銀雙蛋很是下飯,外賣熱飯,濃普洱茶,簡單住家,十分回味,是非常滿意的一餐。

溏心風暴終告一段落,對我這個"反溏心"的人來講,終於樂得耳根清靜.雖然對此"溏心"極度反感,不過對另一"溏心",則為之著迷,不是鮑魚,而是皮蛋.順興號皮蛋,一早成為"溏心"皮蛋痴之潮聖地,就算阿婆態度點差,為了靚皮蛋,也能忍氣吞聲,不過小弟所見,阿婆的態度並不差,而且有問必答.拿著一盒八隻皮蛋飄洋過海,到友人家中邊看電影,邊嗒著起沙,豐厚質感,餘韻猶勁的溏心.比光是吃薯片,花生更高層次.觥籌交錯之間,兩個人閒閒地幹掉了六隻.情到濃時,忽然發覺沒有酸薑,唯有在冰廂內,取支同樣辛辣的伏特加頂檔.一口皮蛋一淡伏特加,原來效果並不差.應該好過皮蛋搭Parma Ham,這個九唔搭八之騎呢組合.

明天同同事食完午飯返公司的途中, 經過順興號, 就買十二元四隻的溏心皮蛋, 每人兩隻。買野的婆婆好好人, 就我點整d皮蛋。我返到屋企食d皮蛋, 食落口開頭有點苦澀味, 但溏心的味好快就遮蓋了苦澀味, 而且好滑。呑咗落肚後, 皮蛋的味仍然留在口裡好耐都未散, 果然是名不虛傳的溏心皮蛋。真令人回味, 請注意, 零售時間是2.00-6.00pm.但唔日日都賣架,睇下你好唔好彩啦!
