前幾日諗住去開大埔,順便揾下好嘢食啦!點知中伏。。。話說上網睇吓大埔有冇d咩快靚正嘅嘢食,因為有 d 趕時間,睇到蔡潤記好似唔錯、又老字號、又幾出名咁。。。就諗住去試下啦!閒日去到2:00p.m.左右,見到有條小人龍,都要等3至4張枱左右。。。諗住要排隊。。。應該都唔會伏掛。。。。結果等咗10-15mins左右有位。。。我叫了個魚片、魚蛋河。。。其實佢嘅魚蛋&魚片 size 真係比一般少。。。魚片有 d 似一般春卷切片嘅 size。。。😅😅😅粉嘅份量都不多。。。我見好多人都要加底。。。😅😅😅當然都無想像中咁好食。。。魚蛋有 d 腥而且不算太彈牙。。。再加上湯底偏鹹。。。完全不是我杯茶。。。要收$38一碗。。。本人真的覺得有 d 偏貴。。。真的不會有下次!😑😑😑

粉嘅份量都不多。。。我見好多人都要加底。。。😅😅😅
當然都無想像中咁好食。。。魚蛋有 d 腥而且不算太彈牙。。。再加上湯底偏鹹。。。完全不是我杯茶。。。要收$38一碗。。。本人真的覺得有 d 偏貴。。。真的不會有下次!😑😑😑

以前啲人成日講新蔡舊蔡,新蔡已經無做了,到左今時今日就只有一間蔡潤記 (其實一直都係得一間,明就明)。 好多人黎到都係食魚蛋或者牛腩,仲有炸魚皮。常見嘅叫法有:(1)牛腩河加淨蛋片(一碗牛腩河加一碗淨魚蛋魚片);(2)魚蛋河加魚皮(留意返呢個加魚皮係加兩三舊炸魚皮,好似叫多個餸咁,而唔係一碟炸魚皮,如果想叫一碟嘅話要講清楚)(3)粉腸/牛肚都有唔少捧場客,例如腸蛋河、肚皮河都係常見組合。 而我就通常都係叫魚蛋河,叫魚蛋河已經包括有魚蛋同魚片,間唔中會加魚皮,主要係肚唔肚餓或者有無賣曬。黎到懷舊港式粉麵檔,當然要叫返支玻璃樽汽水先似樣,細可樂都係我指定項目之一。 以前嘅辣椒油係一碗粉麵配一小碟辣椒油,而家係一大罐放喺枱面。 唔知記得開始,食粉麵嘅第一個步驟係呷一啖湯,感受下每間舖頭獨有嘅嗰種清甜或者香濃。 魚蛋雖然細細粒,但係好夠魚味,當然唔會好似用機打嗰種強勁嘅彈牙感,但係就有手打嘅彈牙感。就好似整蛋糕手打同機器打咁樣,手打做得好都可以保持穩定水準,同時又會有多一種隨意又美麗嘅寛容度。

以前幫襯要排長龍反而食得開心,因為真係有規有矩,現在門口位女士,完全不懂維持秩序,隨她心情安排座位,若你有一大班親友一齊入,她就會客氣些,否則就當你人球,坐最差的位置。叫了魚蛋粉加菜,看到廚房的女士,隨手在枯竭了的菜心中取了一兩條,心裏就感到後悔了,食物來到,果然,葉是黃的。街巿十四元一斤菜心,現在只是兩三條,已經十二元了,還要食爛菜,經營者有沒有良心?  本來就是想簡簡單單食碗粉,可加少少菜才來到,始乎選擇錯了,早知去三不館,雖然沒有白魚蛋,但起碼三不館門口位阿姐非常盡責有禮,還將搭枱食客分開一格格,唔似蔡潤記,要與陌生人搭枱無遮無掩一齊除罩食粉。  以後不了,蔡潤記!

第一口當然會飲湯先,牛腩湯但唔係好油,再食埋粒魚蛋,牛腩湯同魚蛋又出奇地夾,一啲違和感都無,魚蛋好有魚既鮮味,粒粒彈牙爽口,唔係廢話,因為隱約間仲見到半掩到門入面有人打魚整魚蛋,真材實料既魚蛋,當然係魚蛋有魚蛋味,唔係平時急凍魚蛋個種質素。再試下魚片,都係好彈牙有魚味,佢既魚片係每日手工做,細細塊既魚片出面炸左,多左一種香口。

我見好多食客會食牛腩面再加碗淨魚蛋,大家下次黎都可以試下。據聞佢既牛腩面都好出名。食完魚蛋叫左支玻璃樽既可口可樂,因為出面唔係成日有架,玻璃樽既汽水特別多氣好飲,大家見到都可以叫番支爽一爽,好爽皮。

呢間魚蛋粉回頭率好高,講真30幾蚊既魚蛋唔算特別便,但你食過就會知物有所值,有時美食係你比錢都食唔到,有機會食就真係要食多幾碗

今天光顧東昌街的蔡潤記外賣,外賣叫得慢啲都俾你串,去到最後俾話比你咁做生意唔得,你話以後唔做我生意仲要問候我老母。感覺非常不良好,就算佢有幾好食以後都唔會幫襯。其實今天新街市欽記和洪記冇開先走來幫襯你。講真有得選擇我都選擇街市嗰啲先!
