來過超逾五次,但總是嚐不到!要麼休息、要麼停業、要麼說不做午市了。每次跑上兩層樓梯,望著那條長長的、暗暗的、靜靜的走廊,只好又一次失望而回。今天晨早十一左右到達,已見四五人排隊輪候進場午膳。人數不多,想必肯定可以吃到。但原來頭輪賓客剛剛進內,代表了我又得等待至少一碗麵時間。店家應是使用飢餓營銷手法,特意讓賓客整齊地、乖乖地門外排隊。環境濕熱難耐,在炎夏滾燙的鐵皮密封陰暗密室內,只憑籍兩把軟弱無力的家庭式掛牆風扇吹出那道弱風。仿佛店主竊笑在說:要吃本娘的美食,就拿出你的能耐來吧!!排到隊頭時,收銀員會為你落單及付款,然後入座。內裡陳設簡單,擺放十數張普通木槢枱。座位迫窄,佩服傳菜員工竟能捧著兩碗熱騰騰麵條,縱橫交插於人群中。工作上,每當接見曾任雲南米線店的廚師,都必問其獨自蹺妙米線烹調秘訣之處。他們薪金普遍不高,都是兩萬頭左右,旺舖每日煮約三百碗麵。技巧,每家如是:每碗一定要分開獨立猛火烹煮。麵條是中來貨,要選江西粗米線。先落高湯,再按客人味道,加辣汁肉碎香料調味,沸至滾騰倒入碗內即成。問他們為何必要猛火烹調,他們都說能這才能迫出出香料味道。付款後,在出餐處窺入廚房內。兩個爐頭,紅紅烈焰不斷烹調米線。掌廚只有一人,一對長筷子,同時駕馭兩碗麵條。湯底挑選了酸辣味道,湯色像以豬骨熬製之淺啡色,米線再加入酸菜肉碎辣醬煮成湯底即成。先飲頭湯,自己略嫌味道層次簡單。餸菜全分成小碟另上,應由另一廚師負責。【火爆豬手】份量斬得精緻小巧,可全塊放進口內咀嚼,再吞出骨頭。汁醬使用老抽鹵水冰糖薑粒加辣汁混成,文火炆淋豬手入味。吃時煙韌,膠質豐富,惜份量過少,吃得不夠過癮。【魚肉腐皮卷】同樣另碟奉上侍客,與湯麵感覺分離。店家說是自己包制,成本昂貴,只得兩支幼條。同樣一口吃盡,未能嘗清魚肉味道。【招牌酥炸雞球】正常出品,工序簡單,味道未見特別。急凍雞件切丁後醃味,沾上炸粉落爐炸至金黃即成。總括而言,老闆娘的味道未能超逾自己心中米線舖No. 1,餸菜與米線分而制作未感磨合一體,份量略顯吝嗇。假若要我再次於炎熱濕焗天氣下排一個小時,想必會即時離去了。或許要等轉秋才來品嚐吧。 continue reading

作為新界東人既me, 早排專誠去新界西試下『老闆娘雲南米線』,呢間黃店既位置唔算方便,但閒日仍吸引大批客人排隊。當日我就6點前到左,可以直接walk-in,出黎未到6半,已經大排長龍,想食既朋友要趁早呀!我叫左個蒙古湯米線,呢個湯底有D似中藥味,但又唔苦,好特別。隔離位叫左個酸辣湯底,相比之下較為遜色,味道同譚仔既酸辣差不多,普普通通啦,我地都覺得蒙古湯吸引D。呢度既炸物都好出名,但當時好多款炸物都賣晒,我地叫左個炸鯪魚球,即炸夠晒熱辣辣。鯪魚球幾乾身,唔索油,而且彈牙~不錯。 continue reading

最近好多ig page同朋友介紹荃灣嘅老闆娘米線好好食,身為米線fans就緊係要去試下。其實地理位置都幾唔方便,而且位於街市入面,環境就絕對唔係賣點之一,好彩都唔算太逼🥶 當日平日晏晝去到,估唔到都要排隊,不過既然個個講到咁好食,唔驚!就試下排隊啦💪🏻最後排咗大約半個鐘倒就入得~ 📌酸辣米線(小辣)+ 豬腩肉 + 吉列豬排 + 豬軟骨 (~$77) 老實講味道方面好失望,可能因為好多人講到好好食嘅關係,我對佢期望都幾高。雖然份量幾大,不過酸辣湯底就偏辣唔太酸,味道亦唔係特別「足料」,似味精湯底(?) 基本上得個「麻」字,冇其他味☹️ 炸豬扒同米線係分開上,不過感覺唔係即炸,食落唔係熱辣辣同埋有啲淋。其他配料味道都冇咩特別,如果唔係個湯底佢哋應該接近冇味。不過佢每個toppings都+$10,個人覺得都幾overpriced🤯 continue reading
