老友知我好食羊,專登搵我食晏,仲要食晏喺食火鍋,真喺估佢唔到喎!地點都近我,就晌士丹利街嘅「新京熹」,主打老北京涮肉火鍋,小弟就唔喺好知點老北京,重點喺話佢啲羊好出色,高檔質素,真喺要一探究竟。走進餐廳,裝潢摩登時尚,非常之雅致,配合埋啲燈光,就算日頭,都蠻有氣氛喎。另外一邊,間咗多個廂房,同樣雅致,但私隱度就更高。而入門口時,見到牆上有唔少獎狀,細心睇,有啲應該喺集團旗下嘅其他餐廳,雖然小弟向來唔喺太信呢啲嘢,但作為一其中一種參考亦無防。正所謂工欲事其善,必先利其器,涮火鍋最緊要喺有好嘅醬料。枱上一早就放咗傳統芝麻醬,而旁邊另有3款醬料:內蒙沙蔥椒麻醬、昆布豉油汁、豉油海鮮汁,都喺用作食唔同肉嘅時候作配搭:)。此外,侍應仲會奉嚟一大盤醬料,包括香芹粒、芫荽、沙蔥醬、蠔油、花生碎、韭菜花、辣椒、腐乳,自由取用,多少無拘。一人一鍋亦喺佢哋嘅賣點之一,用上傳統嘅北京「暖鍋」,夠晒老味道。而湯底有傳統塞北口蘑清湯鍋、有料麻辣鍋、黃蕃茄酸湯鍋,我哋就選咗清湯鍋,泡着小小藥材包,湯頭味道清爽,涮羊喺唔錯選項錫蒙草飼180天羔羊肉一字長形成幾呎長嘅長盤,排滿一片疊一片羔羊肉片,色澤嬌紅,夠晒氣勢,真喺輸人唔輸陣。侍應教路,灼15秒就夠,果真口感嫩滑到不得了,羊味濃得嚟帶少少羶,沾上啲沙蔥椒麻醬真喺幾特別,有啲麻辣之感,跟羊肉好搭配。鮮切寧夏羊梅花肉既然目標在羊,再嚟嘅喺羊梅花肉,切成一條條,同樣色澤好睇,呢款肉就要灼夠佢30秒喇。跟上述嘅羔羊肉片唔同,羊梅花肉口感比較紮實啲,但不失腍滑,一樣滿滿有羊肉香,羶味不太重。經典大片脆毛肚唔喺講微,片片毛肚片都大過我哋嘅手掌,灼熟之後,一咬真喺爽到嗦嗦聲,口感果真有份脆口感,牛肚本身無乜味,所以,靠沾醬料,小弟沾上自家製混醬,味道更算一級。原產地蔬菜鮮菌店家對食材頗有要求,要新鮮,要靚料,呢份蔬菜拼盤亦如是,唔單止種類多,而且,確喺非常新鮮,味道鮮甜,啱晒平衡一吓食咗咁多肉。老北京糖油餅加多份糖油餅,小分應該喺第一次食,咬落超香脆,裡面卻好軟熟,又一啲都唔油膩,師傅炸功了得,而味道帶甜,頗特別。桂花山藥酪侍應姐組話晌大眾點評寫寫評語,就送甜品,呢啲着數嘢當然唔好錯過啦。所送嘅喺山藥酪,有啲似糊咁,但再稍為稀少許,味道幾清爽,味道微甜,涼涼哋幾清爽,只喺覺得桂花味弱啫。其實,店家嘅火鍋食材仲有好多款,唔喺單單得羊肉,仲有好多牛肉類,睇落亦喺好精選嘅貨色,有機會下次再嚟試試。Read More

在中環打邊爐,原來是能夠一邊吃羊肉火鍋,一邊欣賞京劇的,在香港中環區,總算遇到一間如此有特色的餐廳。這間位於中環核心區的<新京熹老北京涮肉火鍋>餐廳,主打高檔涮羊肉火鍋食材,而且是以一人一鍋為賣點,今晚我們嘗試了清湯鍋及蕃茄鍋底。<草飼180天羔羊肉>薄切片的羔羊肉,上枱用上長盒子,份量很多,粉粉嫩嫩的,放湯鍋輕輕一灼,入口嫩滑,鮮嫩好吃。<鮮切寧夏羊梅花肉>羊梅花肉切成條狀,肉質比較厚身及有質感,與蕃茄湯鍋底非常匹配,入口同樣鮮嫩細滑,愛吃羊肉的人,真的不能錯過。<經典大片脆毛肚>經典大片脆毛肚非常大片,入口爽脆,而且非常吸湯,值得一試。<原產地蔬菜鮮菌>蔬菜拼盤都有多款不同種類的素菜類,又有菌類、粉絲、雲耳及豆腐等等,重點是非常新鮮 。<老北京糖油餅>這個北京糖油餅,外面微脆,咬落去感覺鬆軟,入口味道帶微甜,有點兒像港式的牛脷酥,竟然在這裏也能品嘗到。最後還吃了個淮山蓉造成的甜品,清甜養生。餐廳最大的特色,就是有京劇的表演,當天晚飯時段,幸運地總共看到兩次的現場表演,無論唱功同化妝,都非常認真及有心思,令到整個現場環境都充滿氣氛,食客們都非常欣賞京劇的演出。下次有機會,一定會再帶朋友到來。Read More
