個人喜歡來吉野家,不是因為佢她的牛肉飯,而是為她的火鍋及烏冬!火鍋只於晚上時間供應!由於吉野家的牛肉本身有質素保證,所以她的牛肉火鍋也不會太差。而且相對於火鍋店,價格便宜一大截,經濟又化算!平日晚上7時,來到信德分店,店內顧客不多,因附近主要是辨公大樓,只有一些來往澳門的旅客前來光顧!一如既往2人選了一個牛肉火鍋套餐,再追加一些配菜便已足夠。二人Order:牛肉火鍋套餐(濃湯,跟烏冬) $51.9餐飲轉抹茶紅豆冰 另加$7額外火鍋料:牛肉及芝麻醬 $19.9烏冬 $9.5娃娃菜 $6.5合共 $94.8-牛肉火鍋套餐小小的一個鍋,但配料十分多,有冬菇、金菇、粟米、娃娃菜、蟹柳棒、豆腐、豆卜、年糕福袋,當然少不了肥牛及烏冬啦!雖然是連鎖店,但每間分店質素時有不同,在份量、質素及服務均時好時壞。幸好上環店感覺不錯,材料質素相當不俗,娃娃菜份量較過對上一兩次食時為多,嫩身不會偏黃;菇類亦清洗乾淨;而肥牛亦肥瘦均等,令人滿意!而濃湯湯底則是日式甜豉油,用作火鍋味道一流!唯一較為失色的是年糕福袋,福袋內裡的年糕毫不軟糯,口感有點糊、味道欠佳。牛肉及芝麻醬跟餐的一碟牛肉二人共吃實在不夠喉,額外order 一碟就剛好,一客有一小盤約有8片左右。配上芝麻醬,不論用作點牛肉或是蔬菜都相當好味!烏冬曾有段時間於吉野家吃過令人失望的烏冬,今次的烏冬未算好吃、依然偏軟腍,但總算是回復彈牙滑溜;配上甜豉油使味道不會太過清淡。娃娃菜一客竟有一大碗!令人甚驚訝!因為……曾試過於銅鑼灣分店額外追加了兩客娃娃菜,所得份量同樣只得一碗呢!今次,order 客就有足一大碗,滿足! (但即是上次被人騙了我的菜嗎?!)抹茶紅豆冰:(抹茶味本已不多、偏淡,冰的份量將抹茶再溝淡一點,淡而無味的抹茶:(,而紅豆味道一般,提供粗身飲管,方便吸食紅豆,抵讚!可惜整杯飲品味道偏向不合格,試過便算。店內有準備額外的湯供火鍋客添加,但供應的濃湯往往是被溝淡版,相對鍋內的湯頭色系跟味道都淡一點,故每次加湯時均會問店員向廚房提供濃湯的原湯,就可以減少越溝越淡的情況了,店員一般也不會拒絕,但遇上新店員時、他們總是啞口無言數秒後才轉問經理,但服務總令人稱心!而且彈性十足,添加火鍋料時不必要於購買火鍋時一同購買,可以食到咁上下時再order都得!那就不怕吃不掉全部東西啦!Read More

Since the first time I ate the Beef Rice Bowl at one of the first Yoshinoya 19 years ago in Shatin, I am addicted to it and even I moved to Canada I always try to find this "don" at japanese restaurant and even when I go visit LA I still go eat at Yoshinoya. I went as far as looking up the recipe and make this dish myself. It is the first time I went back to Yoshinoya in around 5-6 years and I will have to say it is not as good as before (I can actually make it better myself but with better quality of beef : P ). The menu has alot more items on it since then but I only order the Original beef rice bowl, maybe the fact that they are losing money? the beef and the rice is not as good quality as before but the sauce remain the same which is a good sign. 近日吉野家在報章上大賣廣告,推廣其盛夏.透心下午茶餐系列的掛烏冬,見這兩天胃口不太好,想吃得輕一點,決定去試試這款下午茶餐。烏冬對香港人來說,其實一點也不陌生,茶餐廳有豬頸肉炒烏冬,家裏雪櫃總有一兩包港產烏冬看門口,連阿媽也愛用烏冬來做上海粗炒,所以烏冬早已融入衆人家中。烏冬是日本 3 大名麵之一,與拉麵和蕎麥麵齊名。正宗的讚岐烏冬是要用上北海道小麵粉做的,按照日本人的規矩,一條烏冬,需寬一點七厘米,厚一至三點七厘米,在這範圍之內,才稱得上是烏冬,不然的話,只是一種麵條。烏冬向來令人有種錯覺是軟腍腍的,只要用筷子一夾就斷,但其實上好的烏冬應為實淨彈牙。日本人製作烏冬的過程頗為嚴謹,先用麵粉加醋,搓好了麵,還要大力壓成麵糰,然後在發酵櫃裏放兩個小時,取出後,再在另外一個發酵櫃裏放十二小時,這才能拿出來刀切。據說這樣做出來烏冬,韌而不硬,嚼在嘴裏勁道十足,但又不會彈牙彈到牙軟,方為上品。掛烏冬即是汁撈烏冬,亦即指均勻地將每一條烏冬都拈上醬汁、可以冷吃或熱吃,用掛汁加上醬油,是日本讚岐烏冬的流行食法,因為湯會容易令烏冬變淋,以掛汁形式除可確保所有烏冬浸透滿醬油外,亦能保持烏冬的煙靭度。烏冬冷卻之後,就如人的肌肉收縮起來,質感更加強烈,與熱湯烏冬相比,是截然不同的一種口味。今次就點選了煎雞掛烏冬配日式焙煎芝麻醬 ($22.50) 及和風牛肉掛烏冬配鰹魚昆布冷麵汁 ($21.50)。 兩份冷吃的烏冬,質感尚算綿滑,口感煙韌有嚼勁,入口冰涼清新,烏冬面頭配上紅蘿蔔絲同青瓜絲,吃來極之爽口。日本人喜愛撈些芝麻醬來吃烏冬,而這裏的日式焙煎芝麻醬,具有胡麻獨特豐潤的香味和溫和的風味,我把整碗胡麻醬伴入烏冬內攪勻,每條烏冬都沾上粒粒芝麻,充份發揮掛烏冬的特色,入口滲出濃濃的胡麻幽香,酸酸甜甜,但絕不會喧賓奪主,吃來香濃惹味,口感獨特,非常醒胃。 要做好吃的冷麵汁,湯汁要濃口,而用料方面主要用昆布、木魚花及味醂煮成。至於這裏的鰹魚昆布冷麵汁,色澤深褐,略帶微微的海水腥味,有點像用來蘸壽司同吃的日本醬油,但質感較稀薄,鹹味頗重,雖則較為清新,惟始終欠缺胡麻醬的香濃,食味一般。 至於茶餐所配的煎雞,雖則雞皮色澤金黃,但由於沒有醬汁,吃來乾巴巴的,雞肉亦較為粗糙嚡口,食味稍遜。而和風牛肉方面,雖然沒有附上濃濃的牛肉汁,但由於牛肉片夠薄,肥瘦適中,牛味濃郁,吃來頗為滋味。不過由於兩份茶餐所配的煎雞及牛肉份量都比較的骰,我這貪吃鬼又發揮饞嘴本色,早已把要吃輕一點忘得一乾二淨,再外賣一份牛肉煎雞雙併飯 ($36.5) 回家與兒子分享。這盒飯的日本米,細粒圓身有彈性,粒粒色澤潔白,淋上惹味的牛肉醬汁,醬汁滲進粒粒圓潤黏軟的珍珠米內,口感特別煙韌香甜。Read More

Actually, I don’t quite live up to the name of Udon Expert. I just learnt it from books and magazines. I like to eat a lot but seldom cook myself. I’ve also read your food comments and found them pretty well-written and interesting as well. I do enjoy reading your recommended pieces even you don’t write often. Keep writing.

I love to read 飲食男女:) !i didnt writ e many recommended pieces for a reason, somehow I didnt encounter much nice food....some of them are just normal and I don't really want to recommend it. I don't have a high standard for my food, I normally think many food taste nice. Yet somehow I just have been eating normal, those try once and for all dishes :((((((( such bad luck!Btw, i aways think yoshinoya's beef rice is great, as well as the rice they made!

:)下午行完街去了吉野家吃個下午茶,選了一容牛肉昆布烏冬及日本綠茶,問店員取了一包子薑片及七味粉調味。 吉野家的子薑片其實蠻好吃的,加了酸味抑制劑所以不會太酸,以膠袋密封包裝保証夠衞生,去永樂街的蛋铺買幾隻皮蛋拿來自製酸薑皮蛋也很好吃。牛肉昆布烏冬內除了牛肉和昆布外,還有日式旦及月輪魚旦(獅子狗魚旦),再加入子薑片及七味粉,味道變成較複雜而酸中帶辣,辣味有薑汁的辣及七味粉的辣,辣度可隨七味粉量調控,令食味提升不少。Read More
