The Happiness (Etsu) of Omakase by Chef Kei

Etsu Sushi has set foot on Tsing Fung Street, Tin Hau, for 10 years. Restaurant owner and Master Chef Lo Yuet Kei (Chef Kei) has an impressive background; he worked at Culture Club since 1988 under the apprenticeship of Master Chef Takabayashi Hiromitsu, and his skills were later on recognized by Master Chef Takabayashi, who then invited him to start a new business on making high quality sushi. After Master Chef Takabayashi passed away, Master Chef Kei started Etsu Sushi in 2007.

Etsu sushi provides traditional Edomae Sushi, and to compete with good quality ingredients.  Seasonal and fresh ingredients are needed in order to provide the best and true flavor of sushi and sashimi. This year, Etsu is on the list of “GHM Cordons Blues Recommendation Restaurant 2016”, which is a great encouragement to Etsu and also recognition of the effort from chef’s team.


 

To have the best experience of seasonal ingredients, “Omakase” is definitely the most preferable way! “Omakase” means “the Chef’s selection”selecting the freshest and seasonal ingredients, through “omakase”, the chef will present the best taste of Japanese Cuisine. Meanwhile, more than a sushi bar, it is an extraordinary stage for chefs to show their stunning culinary skill.

Japanese Fresh Salmon Roe is a highlight of fall and winter imported from Hokkaido. Inheriting the secret recipe of Master Chef Takabayashi Hiromitsu into the dish , it is a perfect match that the combination presents the incredible taste of Salmon Roe.

 

During fall and winter, Sardines sashimi is one of the most representative and seasonal ingredients of Japanese cuisine. Altogether with the Japanese soy sauce, ginger puree and thin green spring onion, it is very mouthwatering.

 

Bluefin tuna is another all-time favorite ingredient in Japanese cuisine, while Otoro (Fatty Tuna) provides a sweet tenderness with its fatty oil; it is more valuable than other tuna because it has less muscle and stripe, so that it tastes much better. Otoro sushi is the recommended way to enjoy, the richness of Otoro and sushi rice multiplied different layers of taste.
