Executive Chef - Japanese Restaurant (Kushiyaki/ Yakitori)

Working Hours 10:30 – 22:30 (Mon to Sat), Split Shift and Sunday Off
Main duty
1. New store opening (NSO) project, product development, recipes formulating and standard operating procedures (SOP)
2. Manage the whole kitchen operations
3. Five years or more of Japanese-style kitchen work experience (experienced in Kushiyaki/Yakitori is preferred)
Job description and responsibilities
1. To manage NSO kitchen plans and budgeting for the new Japanese restaurant and to assist in formulating strategic goals
2. Manage the whole kitchen operations, to maintain the highest hygiene standards, to provide staff training and ensure the food are in the highest standard
3. Comply with law regulations related to health, safety or other compliance requirements for brand standards
4. Manage food costs and reduce losses without affecting the overall quality of product
5. Set up menus in response to market needs
6. Have enthusiasm and know how to maintain good relationship and communication with guests
7. Know how to manage food inventory and orders
Job requirements
1. Culinary skills training or diploma / vocational certificate in related disciplines
2. Five years or more of chef experience (At least 3 years of relevant position experience)
3. Good in Problem solving, self-motivated, well organized and have the ability of counselling
4. Good communication and leadership skills, manage staff delegation and to create the highest teamwork moral
5. Basic computer literate; Good command of Cantonese and basic English, Japanese is preferred
