雖然現代飲食潮流盛行抽離傳統、講求時代元素,但經典懷舊菜式一樣可以歷久常新不沉悶! 例如曾在大圍經營超過半世紀的楓林小館,本已在三年前結業,卻又在銅鑼灣復活起來,繼續供應名鎮多年的菜式,例如紅燒石歧乳鴨、椒鹽大蝦、荔芋香酥鴨等,全部是香惹鑊氣菜;同時加入廣東點心及四川口味的新菜,慕求新舊客人皆滿意。周末正是親親家人的時候,我帶著父親及家人到楓林懷舊,舖位入口在地下,飯店其實在一樓,需要走上長樓梯,幸好長者勿慌,因為可從旁邊的住宅大樓入口往電梯,按一樓便到。支客早以通知服務員,我們到達層樓之時,殷勤接待,全無走後門的感覺。飯店裝潢傳統,有理由相信,刻意保持大圍原貌。家人非常欣賞這幅乾隆的字畫,實在寫得好看,可見全盛時期清朝皇帝的修為。中午吃飯,點心、小菜及主食各一些。招牌紅燒乳鴿 $78*2送到面前,香氣撲鼻,滷水、肉香、加上色澤、完全香惹的誘惑。據說選材18-20日的中山石岐乳鴿,先以花椒、八角、香草製成滷水膽,浸泡乳鴿30分鐘,再以麥芽糖、浙醋同酒為乳鴿上色,再吊起風乾2個鐘,客人落單時方才逐隻吊炸,傳統做法不偷工,回味消失中的味道!一分為四,每隻乳鴿的火喉皆控制得剛好,碰上手,熱辣非常,鴿皮好香好薄,內裡肉質嫩滑汁豐,連骨都香,慢慢吮出滋味,我們鴿頭也不放過啊!黃金炸魚皮 $42由新加坡帶來的熱潮,近排大家興起食黃金炸魚皮,楓林也推出此新菜,新鮮自家製自然更香惹,咸蛋味十足,大大片魚皮相比更豪邁,即造的、相比包裝質素毫無疑問更出色,之不過香脆度方面,不及乾貨如薯片般口感好。蝦仁燒賣皇 $49/22至4人可以選擇半價點心一款,隨意挑了燒賣皇,想不到蝦仁頗鮮而且大隻,唔會只得個爽,喜出望外!上素蒸粉果 $32楓林的點心相比其他酒家有份量,味道材料皆不俗,老師傳功架,與連鎖店酒家中央製作的出品,一吃便能分曉。XO醬炒腸粉 $49惹味香滑,XO醬有點辣度,炒至恰到好處,唔乾亦不濕。野菌炆豆腐 $68濃郁的醬油,餵飽野菌及豆腐,味道豐富,調味平衡。海鮮蝦湯泡脆米 $148海鮮湯清鮮味美,少少鹹味,配飯剛好。海鮮蝦湯內已有一些泡飯,最後才加上炸米,吃法突出脆嫩對比。沒有期望的爆炸效果,因為有些食肆,把脆米倒進魚湯時會發出炸炸聲,可能大家做法一樣!綠豆沙免費奉送的綠豆沙,甜度適中,煲至起沙,口感很好。服務方面,尤其值得稱讚,態度非常友善殷勤,少有獲得賓至如歸之感,這亦是消失中的服務態度。老師傅功架,價格合理,性價比高,走遠一步亦無妨。平均分數:3.5/5…Read More
