「我細細個就聽過張生記呢個名啊」我母親係杭州人,曾經跟母親返杭州食過張生記。不過當時年紀太細,連擺咗咩食物落口都唔記得,唯一記得嘅係母親對張生記讚不絕口。早前知道張生記來港開舖,於是同屋企人嚟左位於銅鑼灣既張生記。一開始上咗前菜-西湖桂花藕。做法係將糯米飯釀入連藕之中,屬於涷食既菜式。加上金箔作點綴盡顯氣派。龍井手剝野生河蝦仁賣相最簡單,不過味道勝於賣相,河蝦幾清新而且充滿水份,呢道菜夏天時候最適合不過。杭州東坡肉最邪惡,肥肉一入口就融化,酥而不膩,由於太好味嘅關係我哋叫咗兩份東坡肉。另外仲叫左蝴蝶夾包住東玻肉,又係另一番滋味。雖然龍蝦湯脆米泡湯係今餐最唔正宗,並非杭州菜,但我認為係張生記必食之選。脆米炸到粒粒分明,脆米浸喺龍蝦湯之後口感相當特別,濕潤嘅同時依然香脆,令人愛不釋手。湯底濃郁鮮甜,入面有大量龍蝦肉,真係一分錢一分貨。江南名菜點少得老鴨煲,據職員所講,老鴨養咗幾百日,肉質卻一啲都唔老同爛。湯底香濃順滑,亦滲透一陣鹹香。配料都好味,特別係荀乾,口感特別爽脆。最重要係滋陰補腎,咁先能夠成為一個好男人。要講今晚最喜愛菜式,我認為非杭州燻魚莫屬。杭州燻魚用魚腩製成,每條魚只可以做到兩碟,可謂幾珍貴。魚肉經過先炸後燻,香脆之外肉質嫩滑唔腥,加上酸酸甜甜嘅醬汁,特別惹味。杭椒目魚絲最古惑,碟上嘅青椒並非每一條都係辣。假如你咁幸運地食到一條辣既杭椒,嘗試克服佢目魚絲口感煙韌,配上醃菜令味道更豐富。剁椒蒸千島湖野生大魚尾價值$780,據聞千島湖水質非常優美。由於水中含有大量營養,所以出產嘅魚特別鮮味。食落果然如此,魚肉非常鮮甜,嫩滑多汁,加上剁椒非常開胃,剁椒幾辣但唔會搶走魚嘅鮮味。蝦爆鱔最香脆,冇諗過鱔都可以炸。加上甜甜地既芡汁後可謂錦上添花。甜品方面,我家人大部份叫咗杏仁茶,而我對酒釀丸子特別情有獨鍾。張生記既酒釀丸子更清香,丸子相當煙韌,酒味唔會太濃。今餐之後終於明白母親當日既讚不絕口,每一款菜式非常別緻,味道亦頂呱呱,可謂無可挑剔。…Read More

杭州張生記响中國出名嘅食肆,之前張生記接受帝苑酒店帝苑軒邀請黎香港作短期營業獻藝,當時我無去試到。😢😢 機會總會黎臨,張生記又再重臨香江,今次於銅鑼灣開店,一收到消息,即刻同家人約好一齊去喇😁😁。香油馬蘭頭:一道清涼爽口嘅上海/杭州前菜,賣相好靚,好工整。它的美味來自於馬蘭嫩葉清脆的甜菜味加上豆乾屑軟嫩豆香味與混在其中的麻油香,一道必點嘅前菜。👍🏻👍🏻招牌老鴨煲:要講必食的招牌菜式,一定是為張生記省靚招牌的張生記招牌老鴨煲,據我所知杭州張生記曾試過一日內賣出六百多煲,成為一時佳話。🤔🤔 店員為我哋介紹,老鴨煲精選成年老鴨、筍乾、上等金華火腿等,用砂鍋文火煨燉四個小時以上。湯汁濃而不膩,亦唔會有鴨酥味,配上鴨肉同勁多嘅筍乾,依個招牌老鴨煲確係頂瓜瓜。👍🏻👍🏻西湖桂花藕:之前睇過雜誌,西湖桂花藕都係推介菜式。蓮藕片釀入咗糯米飯,再用桂花蜜煮成,入口甜而不膩,好好食😋😋。杭州東坡肉:除了老鴨煲,佢哋嘅東坡肉都十分精彩,一盅一方五花肉,香味撲鼻,肉皮燉得如漆似膠,配埋軟熟嘅夾包,再加埋啲汁,超正😻😻,食落完全唔覺得肥膩。在座屋企人平時飲食都盡量少食好似東坡肉依類型嘅食物,但依份東坡肉一上枱,轉頭就全部報銷。😅😅龍井手剝野生河蝦仁:「龍井蝦仁」是用河蝦及清香的龍井茶烹製而成的杭州名菜。張生記嘅龍井蝦仁,滲透住淡淡龍井清香,蝦仁食得出好新鮮嘅味道,既爽滑又彈牙。😌😌杭州燻魚:傳統燻魚涼菜,魚炸得連皮都脆卜卜,魚肉不腥不乾,香口惹味 🤤🤤。江南鹹雞:皮脆肉嫩,雞肉好滑好香。雖然唔稱得上係咩特別菜式,但我覺得張生記處理得好好。👍🏻👍🏻杭椒目魚絲:唔知係咪取其楷音,目魚其實係講緊墨魚🦑🦑。墨魚好鮮甜彈牙。依道菜最特別反而係杭椒,杭椒有啲辣,有啲又唔辣,好似玩緊抽獎遊戲。🤣🤣蝦肉小籠:佢唔係普通嘅小籠包,肉餡係豬肉同蝦肉混合。小籠包餡韌湯甜,口感爽脆,鮮味十足。😊😊酒釀丸子:張生記嘅酒釀丸子真係值得一食。一啖入口,即刻品嘗到張生記用上了靚嘅酒醩,酒香味同過往食過嘅酒釀丸子有過之而無不及,張生記係我食過最香酒味嘅酒釀丸子。😍😍 除咗酒香之外,甜湯仲滲出淡淡嘅桂花香。另外,張生記用嘅丸子,唔係普普通通無餡嘅糯米粉粒,而係實實在在,有餡嘅迷你湯丸仔。湯丸仔皮好煙韌,餡料我就食到黑芝麻同花生兩種。😋😋後記:張生記店員服務態度好好,好周到。店內環境都好清靜優雅。而佢哋自家製嘅XO醬都好香,又好夠辣味。茶方面,張生記都有唔少選擇,我哋就揀咗西湖龍井同桐鄉胎菊皇。其實仲有一道菜無為大家介紹,因為我唔記得叫咩名喇。😅😅雖然係好普普通通嘅腐皮炒菜,但張生記都煮得好好食。😄😄…Read More

今日嚟到銅鑼灣,約咗一班舊同學食飯,今次就揀咗依間張生記黎食飯。餐廳嘅環境幾別緻,睇得出老闆對餐廳係有要求的。先黎既有西湖桂花藕,些此菜本為凍既,但係餐廳將佢加以改良,改成暖既,令到桂花藕更冧更香。桂花藕入面釀左糯米,糯米令到整道菜更有口感更有層次。整體而言,呢道菜帶微甜,作為暖胃菜絕對一流。香油馬蘭頭則是第二道前菜。餐廳採用左野生馬蘭頭,再加上麻油,令到入口先帶麻香,之後再品嚐出馬蘭頭既甘甜。杭州燻魚使用左鯇魚腩黎製作,醬汁帶酸甜,外皮香脆,魚肉滑得黎帶口感,呢道杭州燻魚被完美演繹出來。湯水方面我地就叫左個張生記老鴨煲(半份)。餐廳職員同我地介紹依道菜嘅時候,提及過呢隻鴨已經養咗五百幾日,骨頭比我哋正常食到嘅鴨硬,而且滋陰補身,營養價值十足。秘製雙拼則是墨魚腸拼魚片。墨魚腸呈墨汁色,食落都幾有墨魚味。魚片則有別於一般既魚片,呢個魚片相對冇咁爽,口感上反而有啲似墨魚丸,個人非常喜歡。另外餐廳奉上咗米醋比我地點黎食,豐富左味道上嘅層次。剁椒蒸千島湖野生大魚尾可以話係其中一個最出色嘅菜式。餐廳透露呢條魚必須喺20度嘅水溫生長七年先可以達到此大小。呢條魚尾含豐富嘅膠原蛋白同埋氨基酸,食落魚肉好滑好有魚味,剁椒雖然香辣搶味,但就冇喧賓奪主!龍井手剝野生河蝦仁就採用左杭州淡水蝦,味道清甜,口感爽,非常不錯。杭州東坡肉則用左新鮮豬肉黎製作,餐廳表示佢地既東坡肉羶而不膩,夾住蝴蝶夾黎食更增加左口感上嘅層次,既冇肥膩嘅感覺,肉味又更突出。杭椒目魚絲既辣椒有辣有唔辣,食每一隻都好刺激,好似抽獎咁樣。炒既時候餐廳加左鹹酸菜,又名倒督菜,為菜式增加左不少風味。蝦爆鱔炸得十分鬆脆,鱔肉肉質有口感,有魚香,而且份量好大。最後龍蝦湯脆米泡飯作為成餐飯既結尾非常圓滿。龍蝦湯十分濃郁,再配上芝麻同埋葱粒,然後再加上脆米,無論口感同味道都層次十分豐富。總括而言,今餐非常之豐富,環境亦都舒適,服務更是一流,絕對值得大家一試!…Read More

唔同嘅中菜都食咗好多次,但係又高級又好味嘅中菜真係好少有㗎,今次就去銅鑼灣呢個高級地帶食咗一間爆炸性好味嘅地道上海菜,等我一一向大家介紹下。張生記位於銅鑼灣地帶,門面裝潢碧麗,燈光鮮艷得很,一睇落去感覺高級,內裏環境十分舒適,盤碟擺佈100分啦。老鴨煲: 店員主動向我哋介紹,係用咗精挑細選嘅老鴨並且燉煮咗非常耐既時間,確保味道濃郁並且滋潤。餡料十分充足,包含金華火腿,竹筍等等高級食材,飲落口濃郁美味,亦都感受到新鮮嘅口感。鴨肉食落去一啲都唔老,反而食到嫩肉嘅感覺。秘製雙拼: 魚餅彈牙鮮甜,咬落去有啖啖肉嘅口感,但係一啲負擔都冇,咬落口口感十足非常清新。魚腸口味濃郁,同樣不失彈牙口感,值得一讚啦。撈汁海蜇頭: 作為一個清爽嘅開胃菜,可算是十分出色,海蜇咬落去充滿口感,有彈牙並且煙銀嘅口感,醬汁清爽開胃,咬落去酸甜得宜,值得一讚。黃金脆豆腐:豆腐非常嫩滑,酥炸口感恰當得宜,鹹香十足。杭州熏魚:醬汁濃郁美味,增添左不少獨特風味。魚肉熏得十分酥脆,咬落口食到啖啖肉嘅感覺,雖然係魚肉,但依然不失口感。東坡肉:味道濃郁,脂肪同肉嘅比例恰如其分,配合埋餐廳附近嘅饅頭一同食用,將油膩嘅感覺徹底減卻,值得一讚。龍井手剝野生河蝦仁:蝦仁彈牙爽口,龍井清新卻有苦澀滋味,食落去有一陣陣嘅清新亦都有淡淡茶香,風味十足。菊花糕:菊花香融入口中,入口即溶,糕點並唔會鬆散,咬落去啖啖清新,值得一讚。咁高級嘅上海菜真係好少地方可以食到,希望嚟緊有更多嘅機會可以食到就好啦!…Read More

老闆今日要招待客人,令我一個小小員工也能一品嘗到有名的杭州菜館(張生記)!實在要好好記錄一下。霊隱寺素燒鵝:有別於我以往食過的素菜,以爲的素菜會比較乾,但是這裏的素菜是很美味的,而且肉汁豐富!秘製雙拼:雙拼其實炸魚片和墨魚臘腸,炸魚片頗有鮮味!而墨魚臘腸很創新,是我從來沒有見過的,臘腸是黑色的裏面有粒狀墨魚肉的,很有口感!大家都很喜歡。龍井手剝野生河蝦仁:淡水河蝦粒粒透亮,口感鮮甜彈牙,也食到淡淡的龍井茶葉味道,口感極好!怪不得是名菜。杭州東坡肉:四四方方很整齊東坡肉望落很有少少透亮,感覺很有光澤。店員幫我們切開4份,方便大家食肉。東坡肉很肥美,如果怕油的朋友可夾包一起食,而我就喜歡一口放入口中,東坡肉的油脂很香,加上原本有少少黑醋可以解膩。甜點方面我地點了菊花糕,味道清爽帶點微甜,清熱又解膩!我們都非常喜歡。餐廳的服務也是一流的!…Read More
