狗仔粉作為一種香港低下階層的食品,出現的背景大都與香港所經歷的經濟困境有關。其中一個說法是戰後初期的香港仍是一個發展中地區,大部分居民的收入都處於低下水平,貧苦階層便以熱水混合粘米粉搓成條狀,再煮滾後進食。另一種說法認為狗仔粉是“救濟粉”而來,是抗日戰爭的時候,香港出現物資短缺,人們沒什麼東西可吃,故有救濟機構就把這些粉派發給民眾。今晚今日想食狗仔粉,十八座狗仔粉可能係最好或者叫做唯一的選擇。狗仔粉的麵條約有半隻手指粗,由於粉條尖頭尖尾,像唐狗的尾巴,故稱為“狗仔粉”,又簡稱“粉仔”。麵條製作完成後,先放入熱水煮滾,再把水分隔去。之後麵條會放入另一鍋已煮好的麵湯再次煮滾。麵湯的主要材料包括洋蔥、蝦米、冬菇及豬油渣。煮滾後便可以碗盛放,然後加上蔥花、菜脯等配菜。湯非常濃郁,又濃又香。面條同湯頭的配味有種好樸素又係好厚實的感覺。可能,呢個就係上一代人的味道,可以感受得到。不得不提既係台面上可以自己加的勁辣菜脯。基本上一啖滿滿的狗仔粉只可以放一粒,因為真係好辣,但係辣得黎香味出哂黎,真係好正!又要辣又要好食,真係夠哂矛盾。鴨肉翅加上鴨下脾真係好邪惡又好好食。鴨肉翅用四隻鴨煲左超過6小時,加上木耳等多種材料,味道又濃又"結",加少少辣菜脯更加惹味。下脾熱辣辣,鴨皮脆卜卜好多油脂,而鴨肉好鮮嫩又多汁,食落口啖啖都係鴨油香同埋鴨既脂肪香味,真係超級超級好食!黑白炸丸包括豬肉丸丶牛丸丶貢丸同埋墨丸。當中以豬肉丸同埋墨丸最好味。豬肉丸夠哂多汁,豬肉味好香。墨魚就好新鮮好彈牙,墨魚味十足。…Read More

之前在佐敦全日上堂,剛巧朋友亦來到附近,相請不如偶遇,就一起吃頓午餐吧!在大家周圍搵食之際,行經一間米芝蓮街頭小店,放著甚有“風味”的戶外小座,雖然正值大熱天時,我們仍是二話不說坐低決定試一下。狗仔粉,還記得第一次聽得一頭霧水,以為是自己聽錯這道小食的名字,在今次坐低之前筆者是完全不知為何物。此店主打狗仔粉及火鴨翅,以路邊檔形式經營,枱椅放在檔側邊的後巷中,以屏風間隔開,感覺地道得來還算整潔衛生。餐牌全部貼在牆身,圖文並茂全部列出,一坐下店員即主動推介狗仔粉和火鴨翅,目測周圍每枱皆見其踪影,既然是主打,狗仔粉、火鴨翅當然唔少得,我們還點了黑白炸丸、勁辣魚蛋和魚皮餃。當店員將狗仔粉端上來時,淡淡的蝦米蒜香已即時飄過來,原來狗仔粉是一款有點像剪短了的烏冬粉條,每條約一吋多長,大小粗幼差不多,但口感較烏冬軟綿。湯底偏濃,在蝦米、冬菇絲及葱花等配料襯托下頗有鮮味。而枱上放有兩樽菜甫供佐粉同吃的, 有辣有唔辣,筆者一向是貪吃好辣之徒,當然兩樣都試,菜甫鹹香脆口,辣菜甫辣度頗高,惹火之極。食落原來菜脯才是真正重點,加入了之後整碗粉的層次立即提升了,香辣惹味兼而有之,雖則湯身糊糊有點怪怪的,但一啖啖連湯帶粉的送進口中,那份懷舊鹹香就是無法抗拒的濃香惹味,不知不覺間已吃去過半了。粉撈火鴨翅,湯汁質地有點童年時街邊的碗仔翅,添上濃郁的鴨肉香,一絲絲的鴨肉絲加上木耳絲,口感軟滑爽脆,十分足料,伴著狗仔粉同吃軟綿可口,粉條遇上火鴨翅就是有着另有一番滋味,很有街頭小吃風味。入座時店員推介這裡的魚蛋超級辣,說如果我們喜歡吃辣的話一定不能錯過,既然說得那麼吸引,筆者又怎會錯過呢?魚蛋端上來是細細粒的品種,坦白說一向對街邊檔的魚蛋品質沒有太大的期望,因大都是取行貨,沒有多大分別,這店的也是一樣,肉質尚可,仍算彈牙,而整道小食靈魂在於那辣汁,果然是辛辣惹味,惹火度高,吃落辣得過癮,讚!黑白炸丸,即叫即炸,店員提醒要等幾分鐘。炸丸分別是貢丸,墨魚丸和牛丸,上枱熱辣辣,炸得外脆肉彈,丸子雖然都是普通貨式,但凡是炸物只要是新鮮即炸,口感味道都必然誘人,一定不會太差。筆者一向鍾情魚皮餃,喜歡它的煙韌外皮及充滿肉汁的Q彈內餡,而這裡的魚皮餃配上沙爹辣汁,添上了一份濃香刺激,又是另一種風味。這店雖然聞名已久,但一直未有機會一試,今天終於學懂了什麼叫做狗仔粉了,味道亦算不錯,加上店家的裝潢很有地道街頭風味,出品亦頗有特色,確是值得一試,而是否合格成為你們心目中的米芝蓮小食,相信這問題就有待大家品評了。…Read More

下班後往恆豐中心看點東西,就在附近先吃點東西,記得朋友想試18座狗仔粉,就趁這機會一試。一個路邊檔形式,比想像中衛生,而且天氣不算太熱,現在還可以接受到。點了 火鴨翅 $20(小)、 十八座狗仔粉 $27(大)、香辣魚蛋 $10火鴨翅有濃郁的鴨肉香味,而且質地不會太厚杰,連我平時不喜歡吃碗仔翅那些食物也吃得津津有味。狗仔粉原來是一條條麵粉幼條,湯頗清,有冬菇、菜脯等,不算太多配料,整體味道不過不失,但如果伴火鴨翅一起吃就更美味。魚蛋的確是超辣,肉質尚可,幸好辣味很快散去。最後來的黑白炸丸 $13,要等候5mins,除了豬肉丸炸得過火,外皮非常韌,其他的墨魚丸、牛丸、冬菇貢丸也不錯,彈牙入味。…Read More

狗仔粉聽人講得多,食就未食過,究竟同其他粉有咩分別??終於有機會試下啦!!其實間野都真係幾細,好彩都叫有個位坐下咁,個feel有d似大排檔。一坐低唔洗諗緊係叫個狗仔粉($20)先諗諗下,試埋個火鴨翅($20)同大雜燴($30)狗仔粉黎講,個湯底好似唔係好夠味,不過你知啦,重點係要落菜脯嘛!D菜脯勁正,落完又落………真係想買返樽返屋企。火鴨翅其實同碗仔翅冇咩分別咁…個大雜燴其他都係同出面既牛雜差唔多味,呢兩個真係有d唔抵叫。最後,有d唔夠喉,所以叫左個黑白炸丸($12)食下…諗住幾粒丸,純粹飽下肚姐。不過佢出期意料地好食!個皮炸到脆卜卜,咬入去仲係熱辣辣,粒丸好夠味,呢個認真ok!雖然野食都唔算好差,但其實唔係好特別,冇咩意慾想特登過去食………Read More
