大排檔的氣氛是香港特色之一,開放式廚房散發出來的食物香味,爐火加熱時的聲響,四周人聲鼎沸,非常熱鬧。在上世紀50-60年代非常流行,可惜到70年代開始受監管而逐漸式微。友人提議重拾大排檔的感覺,在OpenRice搜尋一下,楚撚記大排檔的人氣相當高,土瓜灣店又非常就腳,電話預約很方便,只是晚飯在下午5點半開始有少少早😂店舖開門時間是下午5點半,我是第一批入坐的客人,正是欣賞店內裝修和擺設的最佳時機,舊式的鐵閘、鐵造的廣告牌、微暗的燈光,營造昔日大排檔的氣氛。時代進步將落單這個富人情味的環節抹煞,實在可惜😅每張枱都有2小時的用餐時間,首先點選豆漿杞子鮮腐竹浸時蔬、黃金炸饅頭伴煉奶、鳳尾蝦多士。半小時後再點脆皮炸大腸(鳳梨底),稍後再點蒜香骨(腩排) ,用袐製豉油皇一夜干吊桶仔填滿胃口😋店員再送上免費的蕃薯糖水,非常滿足。鳳尾蝦多士蝦多士的厚度可略為增加,提升質感。油份較多減低食慾,送到嘴邊時香味撲鼻,蝦身與多士的比例都有進步空間。豆漿杞子鮮腐竹浸時蔬店舖有5種菜類提供選擇,而我喜歡鐵質豐富的菠菜,豆漿的豆香配上杞子和腐竹,營養豐富又可以清清口腔的油膩感,唔錯👍🏻黃金炸饅頭伴煉奶色澤金黃而香脆的外皮,內裏雪白又軟綿綿。第一口不需添煉奶,享受廚師的技藝。脆皮炸大腸(鳳梨底)對此餸菜頗有期望,店員送上時急不及待放一片入嘴,可惜外表毫不香脆😂,加上有油膩感,口感尚算合格,易於咀嚼。蒜香骨(腩排)上枱時已被濃濃的蒜香味吸引,密密的蒜茸鋪滿整碟餸菜,腩排肥瘦的比例是1份肥3份瘦,脂肪將乾瘦的口感中和,使人有再吃的衝動😋袐製豉油皇一夜干吊桶仔作為主菜的話,份量一定會覺不足。若作佐酒小食,最適合不過。豉油的甜味與吊桶的鮮味非常夾,肉質少少彈牙,只需咬幾口便溶化了。蕃薯糖水一般贈送的甜品只嘗到甜味,掩蓋其他配料的味道。但楚撚記的蕃薯🍠糖水有驚喜,香軟的蕃薯加上清甜的糖水,非常滋潤,秋冬最好。…Read More

之前爬文,睇到訂位需時,如有心去食,最好早d book,所以我8月尾打去,只提出3個條件:7位、星期六晚、首輪,結果給我9/17 (5:30pm)。用餐時間係2小時,不過,佢地上菜快,基本上1.5小時食完~當日我行咗大街,翹咗少少路,離遠見到一間舖出面有一堆人,就知道係嗰間。雖然未到5:30,但門外已有輪候食客,咁我地 book 咗位,就可以直接入座。鋪裏幾大,但冷氣係不足,尤其係近門口果個範圍。。。雖然有冷風機,但要滴住汗用餐。我地7條就好d,可以坐入內裏比較入既地方。可能剛開市,伙記未算齊吧。。。。因為我地都揮咗一輪手叫加水,才有人理我地。之後人手應該返齊,就好好多~呢度係scan qr code 落單,幾方便~呢度每碟份量5算多,所以我地比平時叫多咗幾碟,好彩免加一,感覺還好。我地叫咗:1. 鳳尾蝦多士($82):係呢度signature food,幾搞笑有截蝦尾係度,味道係好。如果炸多士略為控制火力和時間,顏色金黃d 就完美2. 拔絲焦糖香燒脆腩仔($98):又係另一道 signature。腩仔得9嚿,有d 到喉5到肺,多返少少就好。係甘香又脆,好味~配上焦糖。。。。初時幾得意,但真係好黐牙,又有點硬,所以覺得麻麻了,哈。。。。3. 西檸煎軟雞($99):佢d 檸汁5係好酸,汁量也ok,肉質都幾嫩,5錯~4. 大澳蝦膏蒸豬面青($99):蝦膏5夠香,少了咸香味,可以不叫5. 金沙蛋黃九肚魚($99):好好味,每咬一口,都有咸蛋黃味道,九肚魚又滑嘟嘟,熱焫焫,好正~但份量真係太少6. 芝士琵琶豆腐($86):琵琶豆腐和芝士醬分開上,芝士醬感覺多了一份奶香味,所以5係太膩。兩者互配竟然出奇地好味,讚~7. 啫啫生菜煲($83):上枱時已很香,但份量又係好少。我諗住食埋碗里的餸菜先。。。到我清完,要吃生菜煲。。。竟然清晒,哭。。。我問:好食嗎?他們答:好味,所以食晒8. 老火菜乾煲豬肺湯(大,$168):我平時懶煲豬肺,因為清洗程序較煩,所以我習慣出街就叫呢個湯。呢度用料算充足,湯味香,真係材料煲出來的味道。我地每人差不多分到2碗,好滿足~9. 黃金炸饅頭(半打,$40):ok,外脆內軟10. 黑金流沙奶黃包($30):ok,有流沙,奶黃餡足~11. 脆皮炸大腸($101):份量少,5值呢個價錢。大腸炸得過火,係脆但乾咗d飯後有糖水送:蕃薯糖水、清心丸綠豆爽。我食清心丸,不過,我覺得九龍城合成出色d總體來講,味道係5錯,菜式也多…Read More
