元朗已經頗多點心店了,現還要再來新張一間。只是元朗市中心區,自己經常去光顧的已有五間點心店,還未計算那些傳統的中式大型酒樓。究竟是市場需要,還是點心勞力過餘,使區內不斷開立新的點心店呢?新來者「八號茶居」又認為自己憑什麼可以打進這淌混濁的紅海市場呢?有人論點心專門店之興起,在投資者角度成本是非常低廉,相較萬尺傳統酒樓逾五十萬元租金,點心店一個舖位一千呎內,十萬元左右租金。人手方面,傳統酒樓點心部員工各司其職,互不統領,餡料只做餡料,熟籠專守火喉,腸粉只拉腸粉,員工人數多達十多人。但於點心店,一人能分身數角,員工只得三四人左右。還有近期大量傳統酒樓結業,散工又開工不足,造就一群手工嫻熟師傅,幾名拍檔夾錢自已經營。在顧客方面,點心店形式休閒,可一人二人小聚,也可只點一盅兩件便結帳。但你試試在傳統中式酒樓與接待員說一位,保證繁忙時間你輪一兩小時也沒有位置,也會被酒樓侍應白眼。「八號茶居」在西鐵朗屏站下方的住宅朗屏八號對面新商廈之地面。假日來到,泊車倒也方便,可以直接亂泊在工廠區裡頭。點心選擇三十來款,都是大路款式。這反而更考廚師功力。許多點心均是兩件一籠,正好適合現時二人限聚令下的消費模式,可讓客人多嚐幾款點心。傳統老派點心師傅常言道,點心不需花巧,只要正宗便足以行走江湖,用心鑽研做好幾款常見點心,例如燒賣、牛肉、蝦餃、叉燒包、腸粉,便可去英美澳加日大展拳腳,覓到一份高薪工作;反之學弄什麼公仔點心,只要潮流一過,又落得孤芳自賞的田地。以往我聘請點心總廚例考之試菜餐單也以傳統為主,蒸點兩款蝦餃及牛肉球、炸點春卷、及齋腸粉一碟,便知應徵者能力。題外話:曾幾年前聘用一位出身自國際酒店的香港籍點心總廚,他少時香港工作,然後被集團升職至日本旗下酒店工作十年。能操流利日語,離職回港因父母年長,他慨嘆日籍下屬沒有香港人那種巧手。還記得當時他所提交的日本工作證明信是非常特別的,以毛筆字書寫什麼什麼君,在日皇某年起擔任中華料理師長。店家對器皿之選擇極有藝術美感,不知款式是特別訂造,還是直接外購?與其他酒樓點心店,只提供純白色的塑膠器皿與眾不同,別樹一格,甚有玩味。餐廳提供了一系列的中華古典青花纏枝圖騰杯碗碟匙套裝供客使用,繪功纏枝秀麗,牡丹璀璨綻放。雖是印制圖案,但氣質非凡,滲出陣陣古典氣息,正好配合這兒飲茶品茗風格。茶壺同樣玩味性十足,透明琉璃壺,中間不銹鋼茶隔,可惜店家只用茶包而非茶葉。點了鐵觀音,正常中式酒樓味道。【鮮蝦菜苗餃】賣相高質,皮薄透明,餡料飽滿。以澄麵拉出軟軟黏黏的外皮,蒸煮時間掌握準確無瑕,晶瑩通透,能在外望透內裡的厚實餡料。這款點心適宜離火後即食,否則外皮會變得灰白及煙韌難咬。餡料豆苗及蝦仁比例均勻,蝦仁爽口彈牙,配以清翠豆苗,味道清新。【八號蝦餃皇】蝦餃亦名點心之王,成本昂貴,師傅手門亦要熟練,才能成功制作出一粒高質的蝦餃。視乎酒樓檔次,有些選用鮮蝦、有些用急凍蝦仁,刀功亦有切粒與蝦膠之分。個人喜好使用急凍蝦仁制作,因為品質及供應較穩定,工藝技巧在於解凍作法分野。這兒「八號茶居」兩粒蝦餃賣相大小有輕微差異,一粒餡料豐滿,賣相結實。但另一粒卻餃皮與餡肉之間出現空隙,師傅力度掌握似是稍欠拿捏。咬進時,肉質爽脆彈牙,帶有黏黏汁水,餡料緊扣,未有鬆散,吃出是現場制成蝦餃後即蒸制作,不似集團式酒樓再急凍運送貨色。【布粒腸粉】這是非常高質及考驗手門的出品。先用粘米粉溝成腸粉漿,然後盛一湯匙米漿倒進蒸腸粉蒸盤上掃平,再表面上輕輕放上一塊透明細孔通氣白布,蓋上不銹鋼蒸蓋約四十秒開蓋後,師傅需即時在水氣彌漫充斥的視綫下,憑自己多年的造詣,以陰力將腸粉捲成極幼的圓柱狀,再中間切開成兩等份。賣相腸粉沒有任何洞口穿透,粉漿也拉得很薄,可見廚師手們上乘。味道雖然加了花生醬及豉油,但仍能吃出腸粉的幼滑口感。【鵪鶉蛋燒賣】相當費時及難以保存的點心,許多連鎖酒樓已不再作此款點心了。鵪鶉蛋要先以沸水煮熟,以人手除殼。然後打蝦膠連同鵪鶉蛋,包入白色燒賣皮內,再蒸十二分鐘至蝦膠結實。由於鵪鶉蛋熟後不能再冷藏翻蒸,又不易存放。所以凡有此款點心供應的地方,必是即制及即蒸的新鮮點心食肆。此點心大約廿分鐘最後才出場,外表平實不花巧,顏色白雪雪一片。燒賣皮三粒緊貼著,用筷子將它們夾開。先吃面上的鵪鶉蛋,新鮮口感,蛋黃仍是深黃色。蝦膠打得爽脆彈牙,人手包紥不規則形狀,吃落汁液飛射,非常出色。總括而言,「八號茶居」出品精心制作,一絲不苟,連茶具器皿也甚有要求,值得再來光顧。…Read More
