銅鑼灣登龍街的V Point銀座式商廈坐擁開揚市景及海景,吸引了不少高檔食肆進駐其中,所以亦難免予人是個昂貴收費地段的印象。最近筆者無意中發現有一間雞煲專門店落戶於該大廈的23樓,除了定價較貼地之外,還有川式串燒供應,而且在晚上10時後更有宵夜85折的優惠,當然二話不說上去試一下。店内裝潢新派,比一般的雞煲店來得時尚,單邊落地大玻璃遠眺維多利亞港,一望空闊增强了空間感;環境光鮮整潔,座位雖不算太寬鬆但還算舒適。造訪當晚因高朋滿座,店員為筆者和朋友安排了近門口位置的一排吧枱,雖然高身桌椅坐得不算太舒服,但世事就是如此玄妙,這樣的安排反而讓筆者能夠感受一下坐在吧台上打邊爐那種獨特的體驗,一邊欣賞店員調酒做菜、師傅即席燒製串燒,一邊淺嚐生啤品味雞煲燒物,就像在看表演一般, 為整餐飯生色了不少。先點來兩款涼拌小菜,尖椒皮蛋和涼拌窩筍,雖說是涼菜但其實十分火辣,尖椒爽脆本身辣度不强,皮蛋也不算十分溏心但仍是軟滑透彈,窩筍亦是想當然的冰清爽脆,但撈上了自家麻辣醬後,整件事就變得不一樣了,當晚只點上了中辣,入口已是一陣麻香直衝而來,繼而辣度徐徐滲出,越食越刺激,真心覺得是好辣之徒不得不試的前菜,下次筆者一定要嘗試挑戰大辣!涼菜後當然來點串燒下下酒,內蒙羊肉串醃料味道偏重口味,羊羶味不太突出,入口鬆軟香口;孜然牛肉串同樣焦香多汁,孜然香氣增添了不少風味。燒鵪鶉蛋蛋香濃厚,燒雞皮有别於日式做法,換上了川式調味,添上麻香,燒得夠乾身,香脆惹味。燒羊架,五成熟燒得剛剛好,外焦香内軟嫩,肥瘦適中還帶點羊肉獨有羶味,質素不俗。終於到招牌麻辣雞煲出場(半隻),與一般的雞煲乾鍋有點不同,這店的雞煲是以湯鍋上枱,沒有了那濃郁的醬香但多了一份麻辣熱燙,翻拌一下湯汁發覺用料豐富,加入了大量四川乾椒、麻子、芹菜、香茜、紫洋蔥、大蔥、青椒、花椒和八角等配料,香料味頗為突出,雞件吸收了湯汁精華,肉嫩滑溜,味道濃郁帶甜,辛辣麻香,最重要是就算煮得久了雞肉也不會過老,越食越惹味,溫馨提示一下的是這店的辣度頗足,中辣也讓好辣的筆者感受到其火熱,如嚐辣不多的話記緊要注意一下,最好先從小辣著手吧。而因為已有湯底的關係,可以一邊吃雞一邊打邊爐,所以即時點來頂級手切牛頸脊,鮮紅粉嫩,油脂比例均勻,厚切夠咬口,牛香濃厚;鹹蛋黃豬肉丸,肉丸內包著大大粒鹹蛋黃,一啖咬下肉香夾雜著蛋黃香,甘香彈牙。而手工西洋菜餃則皮薄餡靚,餃皮薄滑菜餡清爽;鮮魚卜脹卜卜煙韌彈牙,骨膠原滿滿;炸響鈴豆香酥脆,吸收辣汁後更顯滋味;新鮮有膏鵝腸帶膏爽彈,脂香可口。基本上全部配料都十分到位。整餐的出品質素不俗,尤其前菜及串燒頗有驚喜,雞煲味道也很不錯,而定價在銅鑼灣來說亦算合理,加上宵夜時段有八五折優惠,難怪造訪當日客如輪轉,全場爆滿。能夠一次過望著開揚市景,品嚐即燒串燒,歎杯冰凍啤酒,再來一道勁辣雞煲刺激一下,能有如斯美饌,試問又夫復何求呢?!…Read More

跟三五知己聚聚,所以隨意地點選了位於銅鑼灣的「隨變」,本以為只是一間普通的雞煲店,但後來才發現,原來「隨變」一點兒都不隨便!認真製作,材料頂盛,價錢公道!談到裝潢,尚算不錯,企理整齊,打破以往對雞煲店(嘈&雜)的觀念,而且靠窗位更是對著維多利亞港,相當高級!更設有醬料自助區,醬料由自己話事。我們所選擇的雞煲是招牌隨變麻辣雞煲(微辣),然後再點其他配料。「隨變」雞煲的食法卻令我有點兒驚喜,以往我們都要吃清煲內的雞,餐廳才會在煲內加湯,變成火鍋。但這裡的雞煲,是「一邊雞煲一邊火鍋」,雞的味道卻沒有被火鍋的湯底沖淡,十分濃郁惹味。頂級手切牛頸脊($188)手切牛頸脊真無得頂!牛味濃郁,肉質嫩滑,入口即溶!新西蘭羊肉卷($198)相比牛頸脊,羊肉質感比較彈牙有口感,羊味不會太羶,易入口。三寶丸包括墨魚魚滑、蝦滑、蟹子滑,口感彈牙,但請注意,吃下去時可能會有噴汁的情況發生哈哈。炸午餐肉原來是如此美味!平日都會以午餐肉為火鍋的配料,但炸過然後再下鍋煮是如此有口感,炸過後更鎖肉汁。看見每桌都有柯打隨變粉,可知這是多麼的招牌貨,形狀像河粉,粗粗的,腍腍的。紅薯粉也是不錯的選擇,一樣有吸收濃湯精華的功效!…Read More
