屋企附近商場的大大小小餐廳,直覺上值得一試的都已經幫襯過,直至最近一個新商場開業,終於又有一批新餐廳可以選擇了。今晚就揀了「深井陳記燒鵝」。講起深井燒鵝,筆者本人最喜歡「裕記」,而「裕記」也一定一直堅持不開設任何分店,實在十分難得。相反另一間競爭對手「陳記」十多年前開始已衝出深井,在港九各處陸續開設多間分店,連同深井的一系列幾間燒鵝酒家,今時今日加起來已經超過10間分店,只不過估唔到會在將軍澳插旗。唔知點解,每逢星期三及星期四,將軍澳區商場內的餐廳特別少人幫襯,去到「陳記」只不過大約八點,竟然大把座位任揀。室內裝修環境十分企理,有別於其他的燒味茶餐廳,甚至可以用雅緻去形容。始終餐廳以燒味為主打,餐牌內的小菜款式已經不算少了,但晚飯時段的所有小菜竟然只可以單點,並沒有包含白飯及飲品的套餐選擇,實在有點說不過去。來到「陳記」,一定要叫番碟陳記燒鵝飯($56)。這些名氣大的燒鵝專門店,又或者是「太興」這類大型連鎖燒味餐廳,容許客人選擇鵝胸或者鵝背而不需要另外加錢,因為總會有些客人喜歡啜骨頭;反之一些個體經營的街坊燒臘店,就肯定不容許指定部位,皆因銷量並不太大,很容易賣剩鵝背,晚晚虧本。果然沒有欺騙客人,每一件都是鵝胸肉。肉質夠軟腍,鵝皮都夠鬆化;只可惜稍為缺乏鵝脂的膻香,未臻完美。至於那一碟酸梅醬卻出奇地十分美味。有別於其他燒味餐廳的味道,這一碟酸梅醬較稀身,而且帶有淡淡的柚子清甜,與酸梅味非常合襯。XO醬四季豆炒豬頸肉($70)望落去幾吸引,侍應剛剛送上來的時候更加是香味四溢。先食一條四季豆,雖然味道不錯,但炒得太過濕身、唔夠香口,同自己喺屋企炒的質素差不多。再食一塊豬頸肉,肉質太軟太腍,缺乏了新鮮豬頸肉應該有的爽口中帶少少彈牙的咀嚼質感;而且舌頭感覺到有一點點帶鹼性的刺激。經驗話俾筆者知道,豬頸肉可能下了太多鬆肉粉,所以刺激味蕾,也掩蓋了豬肉本身的味道。滑蛋蝦仁($72)價錢唔算貴,份量都幾多,應該都有五六隻相當大的蝦仁。雞蛋炒得唔算十分滑溜,但算合格以上水平。蝦仁的質素就稍為差了一點,一眼望落去那種略帶透明的蝦仁,就已經知道很大機會是那些已經去殻的急凍貨式。當然,其他很多茶餐廳格局的街坊小菜館也是採用類似貨源,但處理手法會稍為恰當,最低限度望落去不會這樣透明。埋單時發現沒有加一服務費,都算是有個小驚喜。只不過小菜質素實在一般,而且又沒有套餐,下次再來幫襯,還是選擇碟頭燒味飯吧。…Read More
