元朗多野食就係人都知,今次去左呢間低調嘅鹵家,充滿港式味道嘅食店,想坐室內就要等多陣,取了籌號等了十分鐘就入到去,舖頭算細,坐滿人都幾迫下,服務都唔錯。我同友人分別叫左2個SET,分別係鹵叉燒同埋豬頸肉,都係配白飯。我地另外當然叫番個招牌既酒仙醉雞卷。其實份量黎講就都幾夠,男仕食一碗都應該夠飽。先講酒仙醉雞卷,當然係凍食,酒味唔濃,雞算新鮮,但味道偏淡,屬一般,無咩驚喜。鹵叉燒都係一樣,味道一般,肉有點兒韌,我覺得燒會好食D,哈哈。豬頸肉醃料味重但唔咸,爽口,比叉燒好食但都係無驚喜。食完都係有D失望,可能自己本身對鹵味麻麻。…Read More

晚餐想吃簡單一點,搜尋目標時便專攻元朗小店。少有踏足馬田路一帶,這邊靠近民居,食店風格平實,不走花巧路線,都是以街坊客為對象。早早做了功課,本想試試立哥拉麵,但實在小覷了它的人氣,門前站滿了等位的人潮,比我更禁不起等的老公面色一沉,我知道這晚肯定是跟立哥無緣了。這時老公環顧四週,見對面的鹵家有位,不知是他獨具慧眼,還是懶得再找,就這樣光顧了「鹵家」。網上食評讚多於彈,照理是可以放心的說,但若憑食照判斷,實在是對這鹵家的質素存疑。小小的家庭式食店,食桌佈局非常擠迫,戶外還放有三、四張食桌。除了擠,還擔心鹵家的一人廚房是否應付得來。不過食客大都是為家常開飯而來,兩三個小菜還勉強放得下吧。瞄一瞄用作墊枱的餐紙,一句「五星級酒店大廚」份外亮眼,加上大廚以「鹵爸」自稱,菜式該有一定水準,鹵味會是店方主打吧!不過這頓飯的水準與店方的描述、食評的評價頗有出入。首先,以鹵味主打的食店,主菜卻是涼菜居多,如蒜拍青瓜、拌雞腳、大腸頭、鹵豆腐、金錢肚等。鹵味只有炸乳鴿、豉油雞、食神叉燒、鹵鵝片等數款可選,自稱強於鹵水的「鹵家」是有點牽強的說。一般的家常小菜都是以熱菜為主導,若然要以涼菜湊合,跟燒味外賣分別不大,那又何需外出開飯?這頓點了五道菜式,當中有三道是涼菜,而小菜可跟白飯和湯配成套餐,二百多元的晚餐是街坊價錢,會是個吸引街坊客的賣點。三款涼菜當中,最令人失望的會是醺蹄海蜇($56),連一般燒味店的水準也猶有不及,不像是店方自制而是燒味檔的來貨,吃罷還有唇乾舌燥之感,該是防腐劑或是味精作崇。台式鹵牛腱($43)同樣是現成貨色,表層乾身得很,口感乾柴軟筋不多,也沒有鹵過的痕跡。酒仙醉雞卷($43)頗受食客歡迎,也是三款當中表現稍好的一道。醉雞圈捲成形,這醉雞做法在網上曾風靡一時,自製不難但卻是花工夫的一道。雞皮挺滑,帶一層薄薄的湯凍,肉身不嚡口,只是用上的汾酒水準不佳,苦而不香。三道涼菜味道平平,但在局限選擇下涼菜卻是不得不點,只有多蘸點桂林辣椒醬來提味吧!食神叉燒剛好售罄,但見鄰桌的叉燒十分乾身,相信水準並沒有傳聞中的那麼神吧!改選香蔥煲仔豉油雞($56),豉油雞是預先做好的,雞放在熱鍋中,用汁醬輕輕燜煮一下便呈上,屬店方少有的熱菜,終於有點家常開飯的感覺。豉油汁清香不會太咸,該用上靚豉油鹵醃,以例牌而言,雞件份量也不少,但肉味不太明顯,有骨肉分離之態,味道不差,但也不能說是上品。紅燒乳鴿($58)會是表現稍好的一道熱菜,定價比豉油雞還高。選用肥厚肉豐的中鴿,遺憾是沒有醃味的效果,不過那香炸的工夫是到家的,脆身的外皮能鎖好肉汁,能做到外脆內軟,肉汁盈盈的食感。只點了一份飯及例湯,那碗老火湯卻是挺大的一碗,是見二人用餐的關係吧!菜乾豬骨湯確是家常老火湯的沒錯,也算是足料。直覺這家廚師只懂煮食,卻不善管理。由於是一人廚房的關係,也許是為求減省準備時間,就以大量涼菜濫竽充數。廚師就靠幾道拿手主菜,湊合出餐牌上相當有限的選擇。吃一頓感覺「現成餸菜」佔多的晚餐,大都不是新鮮製作的,涼菜主導卻毫無特色,真感受不到家常何在。那些給正評食友,也許是街坊食客,相信都是真心正評的。是由於價錢合理、家常風格、同區少選擇之下而給的正評,也是不排除的可能性。始終不是該處居民,而「落街食飯」質素、價值和選擇的局限上,我是深刻體會的。不過,作為一位區外客人,實不覺這家有過人之處。是鹵家,還是「老點」?若然是街坊客人,還是留待大家自行判斷吧!但若然是區外客人,要慕名光顧還是三思才好。…Read More

睇完版友介紹,今晚試咗鹵家,果然水準好高,合掌瓜老火湯清甜冇味精,最出色係蒜汁豬頸肉,惹味嫩口,蒜泥香味好正,豬頸肉嫰滑絕不鞋口,鹵麻豬耳少少麻,拌以芫荽辣椒,清香爽口,味道不俗,酒仙醉雞卷亦好入味,雞肉嫩口,加杞子更美味,唯有薰蹄併海蜇比較普通,唔係難食,但就唔算突出,比了下去,因為其他菜色都太好吃了。兩個人才吃了$190,性價比很高!唯一係落單女職員應該係新人,明顯好生手,此外老闆娘好親切友善,今餐食得好開心。…Read More

又到年尾,我們三個新界西之友又係時候食個團年飯,當係獎勵過去一年的辛勞,及預祝未來一年繼續有大食大咁話。這裡店舖細細,室內座位較少,有些客人唯有坐在門外,我們雖然早到,但都在門外吹著冷風等了幾個字呢。不過,餐牌的食物價格都幾實惠,照片看超來似乎很美味,而且我們很少吃潮州菜,於是便決定等一會了。我們點了這裡的套餐,每人一個套餐,再叫幾款小菜。套餐包一碗是日例湯、一款小菜、一杯飲品及粉/麵/飯/米線。我便叫了一杯熱檸水。例湯是清潤的粟米紅蘿蔔湯,在外面吹了一陣冷風,喝了這碗用料甚足又清潤的湯水,清甜得來沒有太濃味,就如家中的湯水般沒有味精。跟餐的烏冬,麵質都幾爽口彈牙,灑上粟米粒和青葱碎,湯底變得清甜。蜜汁义燒王。這是店員的特別推介,果然無介紹錯!秘製的义燒,跟出面燒味店的做法不同,加添了豉椒汁的蜜汁豉油,把肥美厚切的义燒醃得很入味。义燒肉質軟軟稔稔,肉上的脂肪令口感更油滑美味。酒仙醉雞卷,剛上碟的時候,便聞到濃濃的清酒味,稍稍冰涼的雞卷肉質相當嫩滑,並且嚐到清香的清酒味,上面的杞子也增添粒粒咬口,連下面的青瓜絲都爽口帶酒香,整道菜的味道都充滿清酒香。香葱煲仔豉油雞,上菜時仍然是滾煲煲的,熱辣辣的著實叫人興奮。雞肉入味得來都非常嫩滑,亦都充滿甜甜的豉油味。京葱金錢肚,厚切又軟腍腍的金錢肚,灑了香口的黑椒,加上芫茜、葱絲等爆香後,既有黑椒粒的微辣咬口,亦保留了牛肚的鮮味。蒜汁豬頸肉,肉質鮮嫩得來絕不肥膩,沒有多餘脂肪,比較爽口,而且充滿濃稠香口的蒜汁味,食完忍不住再吃,實在回味無窮。滋味牛肋煲,上菜的時候相當滾燙,煲裡有些芫茜、紅椒和西芹吊下味,難得的是居然加了南瓜,令味道更加引人入勝。牛肋軟腍得咬兩三啖便溶,味道也充滿醬汁的濃甜,煲裡有少許炆過的牛肋湯,味道都相當濃甜。吃到這裡大家已經飽飽,但朋友此時卻突然發現,原來我們忘了叫傳統的潮州鹵味,她覺得整頓潮州菜好像欠了什麼似的... 不過計我話,團年飯最緊要好味,而今餐我覺得既好味,整體食物味道偏向香濃,價錢也不貴,下次可以叫多幾個朋友再 encore 呀。…Read More
