乖乖地留守於家中食咗個幾月住家菜,疫情終於有所緩和,晚市得以重開,實可喜可賀!古語有雲:「禍兮福所倚」,新冠肺炎帶黎嘅二人限聚令最正面嘅一刻就係容許XO仔有機會單獨約會甜心兒,一嚐平時只做一圍一圍菜嘅「鼎爺私房菜」。高級私房菜有鼎爺做生招牌夠哂號召力!步入餐店,即留意到接待處身後有個百子櫃,牆上嘅陳列架上則照出多件古董擺設,裝潢散發著中國色彩,同時亦不失時代感。樓底高高嘅用餐大堂空間感足,配上落地玻璃可觀賞高層景色,突顯其氣派十足。拍牆一邊有個巨「鼎」屏風,氣勢一樣咁勁!兩口子被安排入座寬敞嘅四人圓枱,厚墊絨櫈尤其舒適。餐桌上擺放著自用及公用餐具,紅色餐巾更綀成禮物上嘅大蝴蝶結般,入夜襯托埋維港靚景,實高雅得很!於餐廳用膳必需預先訂座、選定菜單及預繳訂金。因受二人限聚令管束,「鼎爺」現除咗暫停一席多人嘅用餐規定之外,仲限時以抗疫價$1,280改推晚市二人套餐(原價$1,880)。飲品餐牌共有八頁之多,首頁列出可續杯點選嘅紅、白酒。接著嘅五頁為樽裝紅酒、白酒、日本清酒、甜酒、茅台、汽酒。如貴客欲自攜佳釀,開瓶費分兩種:750ml嘅紅酒、白酒、汽酒每樽收$300;700ml嘅烈酒及中國酒每樽收$500。最後兩頁則以中文列出涼茶、汽水、果汁、礦泉水、啤酒及茗茶等項目。點好飲品,餸菜順即續一送上,並由年輕好客嘅經理哥哥講解每道菜式所用之食材及烹調方法,猶如正為鼎爺嘅節目作出旁述般,十分詳盡;遇上問題少男佢都好有耐性地一一解答,態度絕對誠懇專業。鼎爺精選前菜:打頭陣嘅四款前菜以拼盤呈上,建議由左上角順時針方向食,順序亦即「蚵仔卷」、「懷舊蝦多士」、「龍穿鳳翼」、「陳醋雲耳仔」。已預先一開二嘅蚵仔卷入口酥脆,且毫不油膩。除咗肥嘟嘟嘅蚵仔之外,卷物餡中混入咗西芹同潤腸,令口感增添爽潤之餘,食落更覺鮮香。炸至金黃嘅懷舊蝦多士不單質感鬆脆,咬落底層塊多士更加係化於口中,但又唔會話食到成口油;多士面嘅蝦隻爽厚彈牙,原來當中嘅秘訣係要喺鮮蝦上打多咗層蝦膠,鼎爺足料嘅功夫果然有料到!意外地,四款前菜中賣相最唔起眼嘅龍穿鳳翼竟然係當中最複雜嘅一味,因為鳳翼首先要起骨,釀入沙葛、金華火腿、甘筍、唐芹重新穿起後,再用慢火炸出。味濃香口嘅龍穿鳳翼內外集合咗不同程度及質感嘅香脆,口感尤其豐沛。最後左下角嘅陳醋雲耳仔乃自加製嘅陳醋所涼拌出,細小捲起嘅貓耳朵巧脆嫩滑,酸中帶點兒辣勁,醒神得黎可一解之前三款炸物嘅油份,設計者明顯花過心思。遼參玉白:海味四寶之一嘅遼參本身冇乜味,質感鬆軟滑溜,師傅巧妙地釀入自加製蝦膠,除咗可以令遼參望落更為飽滿肥厚之外,仲多咗份層次感,咬落外軟滑內爽彈,簡單伴配上湯蛋白汁已能吊出清香嘅鮮味。椰皇燉嫩雞:雞湯原隻椰皇上,外觀已夠震撼。由於餐具燙手,湯品均由經理哥哥揭盅。原來呈奶白色嘅湯係用咗兩隻椰皇所炮製而成;第一隻椰皇先起哂肉連椰水經攪拌機打碎,加埋第二隻椰皇同嫩雞燉上個半鐘,放入香芧後再以慢火熬多兩個鐘務求帶出當中嘅雞味,全程冇落過任何鹽或糖。無添加嘅足料椰皇雞湯嘅椰香味清純芬芳,雞味濃而不俗,相當滋潤!豉香欖角骨:欖角骨選用西班牙黑毛豬作主材,菜名聽落應該好簡單,但其實又係一道功夫菜!西班牙黑毛豬先經過蒸煮以迫出油份,方才慢慢拉油至七成熟,之後撈入以豉汁、蘇梅醬及檸檬葉絲所特製嘅豉香汁煮到索哂味就大功告成。呈扒狀嘅豉香欖角骨外層香脆,厚肉鬆爽,而且肉汁豐腴,調味酸甜醒胃,吃畢半點膩感都冇,確真滋味無窮!高湯浸菜心苗:BB菜心幼嫩甜美,碗中以老雞及火腿熬燉嘅高湯亦鮮香濃甜,據悉竅門係要混入陳皮絲、大頭菜及西芹點綴,又上咗一課。阿爺黃金炒飯:單尾係同嫲嫲睇電視都見過嘅阿爺黃金炒飯,因為好記得鼎爺話要用成七隻蛋黃加一隻完整嘅蛋先做得出,當時小肥仲講咗句「咁咪即係七月伴太陽」,令嫲嫲笑咗一笑!炒飯要做到粒粒金黃,最考嘅就係耐性,首先飯粒要浸喺蛋蛋入面,之後炒嘅時候要用慢火不停咁兜,效果先可以令每粒米飯都被蛋蛋包住。金黃吸睛嘅阿爺黃金炒飯乾巧有彈性,配料嘅蝦仁及菜粒十分爽脆,連同頂面脆卜卜嘅脆米及炸瑤柱食更為一絕!文思豆腐芝麻糊:文思豆腐羮就食得多,細佬都係第一次見到芝麻糊入面會加入幼如髮絲嘅文思豆腐,明顯係要展示一吓師傅嘅刀功。芝麻糊微甜易入口,撈入文思豆腐即提升其幼滑之口感,食完又唔會話漿住個口。香滑椰汁糕:玫瑰花形嘅椰汁糕色澤白滑,質感柔韌軟潤,椰香味清新輕盈,簡潔大方。由螢光幕嘅廚房紅出電視城嘅鼎爺,推出咗人氣食譜不久後已經喺銅鑼灣創立自家品牌「鼎爺私房菜」,以其古法粵菜吸引一眾粉絲。中菜廳環境優雅大方,舒適闊落,服務貼身周到。真係冇諗到限聚令反而帶來抗疫驚喜,兩小口有幸以特價品嚐到鼎爺聞名嘅功夫菜,親身感受到譚玉瑛姐姐於節目中常掛於口中嘅色香味俱全,絕對值回票價!…Read More

我12月尾whatsapps想book2月份,查問哪日有位,可能生意應接不暇個幾星期都沒有回覆,到1月中突然通知有空檔期,就是1個月後可惜鼎爺去了旅行趕不及回來,只好影紙板公仔安排坐門口位置,屏風"鼎"字是鼎爺真跡鼎爺精選前菜,叉燒稍肥但好腍好味,醉鮑魚用上玫瑰露,入口好香玫瑰味用上廿年陳皮,吃得出是靚陳皮原個椰子燉雞,好香好濃椰子味排骨炸得剛剛好,香口又不會乾原條白鱔,份量多,肉質鮮嫩腐乳生菜就比較普通無驚喜為了食這道乞兒雞而來的,果然沒有白來,好香荷香味帶少少炭味,雞肉又滑又嫩這個荷葉飯就要扣分了,飯是微暖又乾身,可能因為不熱所以覺得乾吧糖水除有木瓜外有元肉,蓮子,紅棗,最特別是香蕉我們向經理反映荷葉飯不夠熱乾身,經理即時話整過一個給我們,我們話已吃飽只是給意見。後來經理就補上馬蹄糕煎得好香好好味。…Read More
