久違了的鯉魚門,這天選了到南大門午膳。鄰近海鮮檔早已派員在餐廳門口徘徊,積極向我們推介海鮮。起初我們以為禮貌上應該優先讓南大門(作為星級海鮮酒家)提供海鮮食材,但餐廳員工卻表示他們沒有海鮮供應,只提供烹調加工服務,人客需要外購海鮮食材。菜牌上只有小菜、粉麵飯、飲品等。於是我們隨海鮮檔人員外出自行選購海鮮,最終買了南非鮑魚 (清蒸)、賴尿蝦(椒鹽)、東星斑 (清蒸)和蟶子(豉椒炒)。海鮮檔主表示會將海鮮直接送到餐廳處理。除了上述海鮮外,我們還從菜牌點了兩個小食:脆皮牛腩、椒鹽茄子和清炒菜心。令人摸不著頭腦的是,最先上桌的竟然是最濃味的椒鹽賴尿蝦,蝦肉明顯過火,肉質略嫌乾且實,幸好鑊氣搭夠。緊隨着賴尿蝦的是豉椒炒蟶子,這次炒蟶子時間倒掌握得不錯,獻汁可以薄一點更佳。 之後兩道清蒸的海鮮 (東星斑和南非鮑魚)才出場,雖然用清茶清過味蕾,還是覺得廚房應在食物由淡至濃上桌的程序上多加留意,以免糟蹋了優質食材。東星斑和鮑魚都蒸得恰度好處,是整頓飯的焦點。正當我們想追加一碟炒飯時,換碟姐姐建議我們點白飯,海魚的精華都去了蒸魚豉油中,拌白飯一流。態度真誠專業,贊!最後上桌的是兩度小食脆皮牛腩 (其實是酥炸鹵水牛肉)、椒鹽茄子和清炒菜心。其實此時大家都已經身心滿足,不過還是清了碟,包括海鮮檔隨後送來的西瓜。關於代客烹調加工費用,南大門的餐牌上的確有清楚列明,並強調餐廳沒有跟任何海鮮檔聯營(大概是想強調一切買賣海鮮瓜葛,與餐廳無關)。用膳完畢,結帳,我瞄了一下賬單(冇錯吖,全都是我們點的食物,“海鮮代支”價也正確無誤……),by default  我將賬單拍照留念(賬單如圖),然後 “照單全付”,大家吃得開心滿意就行了,走得!之後跟友人談及這頓飯,友人正計劃帶外國朋友前往,問我收費詳情,我義不容辭提供賬單作參考。友人的whatsapp 回應只有兩個表情符號:驚訝和爆笑!! “海鮮代支”字面上是餐廳代客人向海鮮檔 “找數”,但實情是客人自行去海鮮檔選購,然後餐廳代海鮮檔向客人收款,這個 “代收貨款”安排嚴格上是餐廳與海鮮檔之間的協議,不涉及餐廳向客人提供的餐飲服務範疇,因此將海鮮材料價也列入收取加一服務費的範圍是不適當的。當然在特殊情況下,例如客人委託餐廳員工出去海鮮檔代其搜購海鮮,則可能有充分理據收取服務費。也許從餐廳的立場來看,代支又好,代收又好,餐廳方面提供一條龍結帳服務喎,真係做多咗嘢(會計部都要入賬支帳啫)……..當然消費這回事,沒有抵唔抵,合唔合理,始終都是一個原則:你情我願。其實南大門在這方面手法可以做得更高層次,例如明確表明“本店替客人代支外購食材,一律按代支價收取加一服務費”。充分披露向來是一個最有效的擋箭牌!對熟客作出豁免是另一回事。人人都想做精明的消費者,卻未必人人做到;但即使花得不精明,也要花得甘心。以上意見純出於善意,希望南大門既然在地裡上佔優,也能夠在營商風格上令消費者心悅誠服。…Read More

老婆親戚到訪,想帶佢地品嚐香港地道海鮮,就唸起鯉魚門呢個專食海鮮嘅地方。我之前都食過幾間鯉魚門的海鮮店,唯獨是未有去過南大門,於是早幾日打去留位,聽聞window seat 都係一大賣點,識坐梗係坐近window 啦!我地訂左7點,親友在7月前已到酒樓並已安排入席,由於我當天要打波,所以錯過了挑選海鮮的時間 (不過咁仲可能會帶給我一點驚喜)。講講環境,酒樓的落地玻璃讓我們可以飽濫香港東的無敵大海景,當日我地仲欣賞到日落前的美景!第一道菜是龍蝦刺身,第一啖咬落口,一個字可形容‘爽’! 新鮮龍蝦蝦肉結實,有口感,至於係邊間買既?我要問下親戚先(你地有興趣可PM我)。。跟住上桌嘅係椒鹽瀨尿蝦,切好的瀨尿蝦上碟放得齊齊整整,是大廚用心制作,實屬難得。大大隻瀨尿蝦配上椒鹽真係冇得輸嘅,入面嘅蝦膏好甜美,雖然女士們一般都好介意炸嘢,但見到咁新鮮嘅椒鹽瀨尿蝦,都不得不吃了。 炸嘢梗係有D油,我接受到嘅,瀨尿蝦肉質鮮嫩,蒜味加鹽度適中,尚算乾身。吃完椒鹽瀨尿蝦,再來的是蒜蓉粉絲蒸扇貝,扇貝加上平凡的粉絲就變得不平凡了。扇貝已去了多餘的內臟、裙邊等,基本上拿上手不用看就可以吃了,唯獨蒜蓉量有點不足,粉絲好像沒吸透扇貝汁,或多或少都扣了些分數。唔好俾佢停,再來的是清蒸軟殼黃油蟹,蟹肉鮮甜,就係’蒸’先能食到黃油蟹嘅精髓,膏黃肉厚,這些黃油蟹應該有季節性,今次不吃,就可能要等下年了。花了十分鐘KO左黃油蟹,就到豉椒炒蟶子上場,這道豉椒炒蟶子皇,味道非常香濃惹味,蟶子啖啖都係肉,而沒有半粒沙,加了一點的辛辣,至為惹味,實為海鮮之佳品,可試!炒花甲是檔主送的,一樣沒有半點沙,不過不失吧!清蒸斑仔,蒸的火候剛好,魚肉嫩滑,配以醬油,的確鮮甜!我們也叫了一道時菜及炒面,炒面不油,量略少,多人吃可能要加底!最后有一道小風波,話說龍蝦頭及某部位用來煲弼,我們催了超過半個鐘,都沒人跟進或者’hea’住處理,最後等了45分鐘才上桌,這是當晚唯一美中不足的地方。…Read More
