友人聽我說鳳城的炸子雞好吃,而她的辦公地點就在灣仔,順理成章便在這裡開餐。舖面和之前略有不同,應是重新裝修過吧,看上去比之前更光猛新淨。期間限定優惠~外賣自取(全天候)或晩市堂食(假期除外)可享8折優惠。另午市外賣自取某些指定粉麵飯或點心,價錢和茶餐廳更是相差不遠。這款「專享孖寶」或「全包宴」其實都幾抵,我們就選擇了前者。蝦多士~麵包酥脆、蝦肉爽彈;吃得出是即叫即炸,相當不錯。菠蘿咕嚕肉~賣相跟常吃的有點不一樣;這個是汁肉分家的,將炸起了的肉置於中間,酸汁料就盛於中空的菠蘿內,味道調配是不錯,可惜肉炸得不夠酥脆,口感粉粉的,看來在脆漿上要落點功夫了。炸蟹鉗~體形壯碩澎湃,外層炸至金黃香脆而肉質甜嫩,蘸點浙醋便已是鮮美味可口了。炸子雞(半隻-孖寶)~也是一道功夫菜,不間斷的將滾油澆上已醃味的雞隻上,直至變得皮脆肉滑;難得的是雞皮內沒藏太多肥膏,食得更健康,三黃雞;水準自然不差!豉椒炒蜆(孖宝)~大牌檔風味,熱呼呼、香噴噴,蜆肉鮮甜惹味,是最佳的下酒菜。紫砂茶壺燉螺頭湯~湯色清澈,螺頭外還有雞腳、圓肉、豬肉、瑤柱、火腿、杞子及陳皮,濃郁甘甜。紫砂茶壺蟲草燉雞湯~蟲草花滋補;配雞肉更是暖胃鮮美;燉煮過後,精華溶於盅內,清甜無比。啫啫芥蘭煲~未見其影、已聞其香,蝦醬再配大大隻的蝦乾,受其加持的芥蘭幾難唔好味啦。西米焗布甸~分量十足,大家很努力也只吃了一半多一點。友人食得開心,炸子雞當然是其中的亮點。鳳城酒家 (禮頓道)地址: 銅鑼灣禮頓道30號地下電話: 28818687…Read More

山珍海錯無人不喜,但手工菜卻令我更為稀罕;是夜便相約志同道合的夥伴們吃此中的表表者 - 順德菜!先來點小吃開開胃、過過口癮,這碟海蜇生腸就是一個「脆」;滑滑彈彈的,夾著少許麻油香,很是不錯。大良炒鮮奶~其靈魂水牛奶;脂香味濃,且較易凝結,然在香港是較難弄到手,折衷方法便混以蛋白拉近差距,可真不是那一回事呢!大良野雞卷~繞著大良炒鮮奶的是野雞卷,冰肉、瘦肉和火腿的組合;車輪外形相當討好,入口酥香帶肉味,不愧為順德名菜。鍋䀡大明蝦~也算是香港人的集體回憶吧,亦是我輩小時候的至愛之一,簡單的組合;已帶來脆香爽彈的口感!桂花炒魚翅~以魚翅、芽菜、雞蛋、蟹肉、金華火腿等炒成,重點在於須乾身、香口,手藝各有不同,這裡的當然值得推介。鳳肝金錢雞~除製作耗時、技巧複雜外,加上現代人大多趨向健康飲食;現已幾近失傳。瘦肉、雞肝及肥豬肉的組合,以多士盛之,方便食用之餘也能減少一點油膩感;而「冰肉」便是其靈魂所在,口感爽實,充滿油香!配濃醇的普洱茶應該相當不錯。脆皮炸子雞~鮮嫩的三黃雞皮薄如紙,酥脆肉嫩;眾人也吃不停口。個人認為如添加適量淮鹽,相信更加惹味。生煎蓮藕餅蜆芥鯪魚球~看似簡單,但要做到外層金黃香脆,蓮藕爽口、肉質彈牙不乾澀;沒有一定功力還真不能辦到,是晚的收貨有餘。馳名順德桂魚卷~厚薄適中的桂魚片裹著杬仁和金華火腿,肉質緊緻嫩滑,魚香中滲出點點鹹香,不錯吃。招牌鳳城炒飯~粒粒分明的炒飯有雞蛋、叉燒、蝦仁和番茄,乾身有鑊氣;無飯不歡的我,吃得甚歡!鳳城炸粉果~另一道現今已不多見的美食,香脆軟糯的外皮裹著冬菇、蝦、花生、芫茜、菜甫等惹味之物,蘸點上湯;微脆帶湯汁的鮮香,煙韌可口!西米焗布甸~人多當然不能錯過這味經典甜品,質感綿滑不過濕,奶香更有蓮蓉香。在什麼也講求快、快、快的今天,食物也趨向速食化,心機手工菜更加令人珍惜!鳳城酒家地址: 銅鑼灣禮頓道30號地下電話: 28818687…Read More

自問本身唔係太喜歡出門食中菜,不過細個讀書成日經過呢度,一於畀個機會佢,好食帶阿媽黎食!招牌炸子雞原來一隻都幾大隻,我地一大班人都食唔曬,建議要一圍先好叫全隻😂除非你哋淨係食雞😂😂外表油光閃閃嘅炸子雞時實際上唔係好油膩,反而外皮薄之餘脆脆地,裡面嘅雞肉既然保持到好滑嘅口感,點少少椒鹽味道更豐富,雞肉做到嫩滑效果其實唔容易!蝦多士 多士用上新鮮麵包製作,令麵包唔會扁曬無空氣感。比起用蝦膠,佢用上成條蝦肉更加彈牙同有鮮味,最神奇係零油膩感,點少少沙律醬已經好好味!椒鹽脆茄子椒鹽系列之中茄子都真係比較少見,可能因為茄子比較難炸得起?但呢碟茄子絕對交足功課,每件size大到大家都諗緊佢係咪算係小食😂 佢椒鹽落得恰到好處,香口但唔會龔鼻,裡面嘅茄子白雪雪,睇落好似好raw咁但實際上已經熟透仲好棉滑,全檯推薦!鳳城鴛鴦粉果 呢個粉果同出面嘅唔同之處係佢用上鵪鶉肉代替豬肉做餡料,裡面加上香菇碎,感覺上唔咁heavy。正確嘅食法係全隻浸落上湯再試,一黎可以脫膩,二來上湯嘅鮮甜可以粉飾粉果,我話佢係響鈴食法,哈哈。鳳肝金錢雞平時食草嘅我要食呢D真係好大挑戰!因為呢碟菜式係肥豬肉加雞肝嘅配搭,實在係邪惡軸心,好彩有塊麵包中和下,入口又無想像中咁肥膩,但一件仔就好,如果平時喜歡食東坡肉的話,應該會好喜歡呢道菜。馳名順德桂魚卷 一開始我其實睇唔到條魚喺邊,後來店員解釋我聽大廚將桂魚骨肉分拆,部份特比卷埋金華火腿!鳳城炒飯呢款炒飯同揚州炒飯最大分別就係多咗D蕃茄粒,令炒飯無咁乾,鹹香味之中滲透蔬菜嘅清甜,飯粒亦然有咬口,食完一碗會想encore呢。西米焗布甸一上檯已經聞到好香蓮蓉味,蓮蓉同西米混合得好好,作為結尾係比滿足更滿足!…Read More

順德菜以農鄉特色,以簡單直接的鮮味在粵菜佔一席位,生猛河鮮、大良鮮奶及香口魚腐都是順德菜的一大特色。位於銅鑼灣軒尼斯道的鳳城酒家是美豬蓮一行四人的目標。究竟今回美豬蓮有無新的發現呢?美豬蓮四人一到鳳誠已經是九時多了,所以人數不算多。銅鑼灣鳳城一共兩層,上層樓底較矮,感覺亦覺得擠迫。今次美豬蓮一共點了五道菜,分別有窩貼大明蝦、生菜鵪鶉崧、東江豆腐煲、肉絲炒生麵及蓮蓉西米布甸。先來一道窩貼大明蝦,將海中蝦開邊,並放在麵包上,再上蛋漿及粉後油炸。這道菜像吃蝦多士一樣,但對美豬蓮來說,儘管炸得有幾香,麵包把油過份吸收,感覺十分油膩,每吃一件就驚一 件,有幾好吃都無用啦!怕怕!再來生菜鵪鶉崧,好食!鵪鶉崧夠野味配筍粒一起炒更加爽口,...將生菜包着再加少許乳豬醬就更加美味。東江豆腐煲,鯪魚球夠彈牙有少許果皮味,豆腐亦算滑溜,但欠缺豆味,味道一 般。然後又來一個肉絲炒麵,分量亦不少,夠五至六人吃。麵炸得不算太脆,肉絲和芽菜都很充足,更有芥蘭伴碟,但也是普普通通,沒有令美豬蓮留下深刻的印象。最後上的是美豬蓮最愛的西米焗布甸,熱辣辣就特別好食,金黄色的外表帶點點燒焦的,那吉士和淡奶味香濃,西米亦煮得夠透,配合香滑蓮蓉更加甜在心頭,對着這中西合壁的甜品,美豬蓮連吃兩大碗才能滿足。總括來說,鵪崧布甸味道好,炒麵豆腐未最好。See More…Read More
