沙田大圍只去過一次,都是探病而去。今趟因大家興緻勃勃,遊車河順路吃勻港九新界。開店二十年,盡是街坊或單車友,比起離島海鮮更風味十足。蠔餅、韭菜豬紅、蠔仔粥、雙併鵝肝鵝腸及白灼螄蚶等等都非常有水準,:)鵝肝卻是少見,連九龍城聞名的潮式酒家都未曾見過。但有幾款一定要詳細推介!糯米蒸大腸我認為只有車水馬龍的人流,也有本事駕馭得著。大腸皮薄、饀料充斥每一個地方,配上醬汁一絕。這道菜式極考師傅手藝,也是真正呈現到潮式食品的根本。鹽焗烏頭魚尾有元朗養殖場的記認,吃得特別放心。每一口都充滿黃油,肥美又肉厚。而且近魚肚附近也沒有腥味。酸甜咕嚕肉主打新鮮菠蘿,連我平日不愛吃都一試愛上,沒有難以形容的酸澀,只有一陣又一陣的菠蘿酸甜。今生無悔白果芋泥一開始倒是名字較吸引,但由於店員吹捧限量發售,就作為晚餐的尾站。糖漿較多、芋泥不算是滑身。 地方很多,但不算太整潔。洗手間一男一女廁。但款式實在多樣化,基本上你想吃店內都有,而且又有簡單小炒,滿足不同人的需要。如果想一試再試不同的潮州菜式,這間卻是不錯,偶有驚喜。…Read More

天口凍,莫明其妙好想食打冷,雖然香港地周圍都食到潮州嘢,但往往徒具其形,為免貼錢買難受,山長水遠都要嚟生昌。鹽焗元朗烏頭$108呢條魚係鎮店之寶,好多人包括我都係為咗佢先咁神心嚟幫襯。老闆不惜高價用元朗養嘅烏頭,每條魚尾都附有相關認證標籤。烏頭肉質鮮甜嫩滑無泥味,魚身油脂充足,用粗鹽焗完就見到一層黃油喺皮與肉之間,淡淡鹽香再配普寧豆醬,魚鮮功夫足,簡簡單單,一試難忘。蠔餅$88坊間蠔餅為求慳成本慳功夫(或功夫唔夠),多數會將蠔餅煎得平薄,但一夾即散。生昌蠔飯厚身之餘不失鬆化,新鮮蠔肉夾雜軟糯蛋香餅底,外脆內軟,蘸上魚露同胡椒粉,微酸帶甜,食多都唔覺滯。上湯浸勝瓜$78用鮮魚熬湯底,勝瓜完全吸收晒魚湯,勝瓜難得完全無泥味而爽脆,火候啱啱好。鹵水獅頭鵝片$105打冷嘅ICON,亦可以見到餐館嘅功力。師傅刀工了得,鵝片切得只有5mm,入味無渣,鵝肉少肥,鹵水汁濃郁,而且份量夠,仲有豆腐花生跟上,送潮州粥一流。👍👍今生無悔白果芋泥(4人份)$68見到個名已經非常好奇,唔食對唔住自己啦。顧名思義就係將芋頭隔水蒸熟碾成芋泥,加糖煮開攤凍,加已煠熟去芯嘅白果同油泡過嘅葱花,芋泥入口微甜,軟熟,白果微苦,鹹嘅葱花反而增加芋泥嘅甜味,呢個咁得意嘅甜品,起碼今晚無悔。       生昌做到咁出色嘅家鄉菜,除咗老闆深諳菜式做法味道外,仲要對烹調功夫同用料有堅持。只係一條鹽焗烏頭,已經係我再幫襯嘅理由。…Read More
